FRIED GREEN TOMATO SALAD

- In a shallow dish place flour. In a second shallow dish whisk together eggs and the water just until combined; place cornmeal in a third shallow dish. Sprinkle tomato slices with salt and pepper. Coat each tomato slice with flour, shaking off excess. Dip into egg mixture, then coat with cornmeal.
- In a large skillet heat oil over medium-high heat. Add tomato slices, half at a time, and cook about 4 minutes or until golden brown, turning once halfway through cooking. Drain on paper towels.
- On a serving platter arrange salad greens. Top with fried tomatoes, black-eyed peas, radishes, and pecans. Drizzle salad with Buttermilk Dressing. Buttermilk Dressing
- In a small bowl combine buttermik, mayonnaise, garlic, dry mustard and black pepper.

- Whisk together first 6 ingredients, ½ cup of the buttermilk, 1 teaspoon of the salt, and ½ teaspoon of the black pepper. Cover; chill buttermilk dressing until ready to serve.
- Pour vegetable oil to a depth of 3 inches in a large cast-iron Dutch oven; heat over high to 350°F. Whisk together egg and remaining ½ cup buttermilk in a shallow dish. Combine cornmeal, cayenne, ½ cup of the flour, 1 teaspoon of the salt, and ½ teaspoon of the black pepper in a second shallow dish. Combine remaining ½ cup flour, ½ teaspoon salt, and ½ teaspoon black pepper in a third shallow dish. Working with 1 slice at a time, dredge tomato in flour mixture, then in egg mixture, and then in cornmeal-flour mixture.
- Fry tomato slices, in 2 batches, in hot oil until browned, about 3 to 4 minutes total, turning slices halfway through frying. Drain on paper towels.
- Combine lettuces and red onion in a large bowl. Toss lettuce mixture with ¼ cup of the buttermilk dressing, reserving the rest. Divide salad among 4 plates, top each with 3 fried green tomatoes. Drizzle evenly with remaining dressing.
BEST FRIED GREEN TOMATOES
You can also fry up red tomatoes with this recipe but make sure they are not over ripe or they will be mushy. Serve these tomatoes outside with a glass of iced tea one summer night and enjoy the sunset with someone you love.

- Slice tomatoes 1/2 inch thick. Discard the ends.
- Whisk eggs and milk together in a medium-size bowl. Scoop flour onto a plate. Mix cornmeal, bread crumbs and salt and pepper on another plate. Dip tomatoes into flour to coat. Then dip the tomatoes into milk and egg mixture. Dredge in breadcrumbs to completely coat.
- In a large skillet, pour vegetable oil (enough so that there is 1/2 inch of oil in the pan) and heat over a medium heat. Place tomatoes into the frying pan in batches of 4 or 5, depending on the size of your skillet. Do not crowd the tomatoes, they should not touch each other. - For the fried green tomatoes: Preheat the frying oil to 350 degrees F in a heavy-bottomed pot over medium to medium-high heat.
- In a shallow dish, combine the cornmeal, paprika, cayenne, salt and pepper and whisk together. In second shallow dish add the eggs, and in a third shallow dish add the flour. Dredge the slices of tomato into the flour, then the eggs and then the seasoned cornmeal. Add the breaded tomatoes to the oil, in batches if necessary, and fry until golden brown on each side, about 3 minutes. Remove and drain on paper towels. Season with salt and pepper.
- For the dressing: Whisk the vinegar, honey, mustard, salt and pepper in a bowl. Drizzle in the oil until emulsified.
- To assemble the salad: In a salad bowl, add the greens, feta cheese, almonds and peaches. Top with the balsamic vinaigrette dressing and mix together. Plate the salad and top with fried green tomatoes.

- Heat oven to 425ºF.
- Cover baking sheet with parchment. Whisk egg and water until blended. Empty coating mix into shaker bag.
- Dip green tomato slices, 1 or 2 at a time, into egg, turning to evenly coat both sides of each slice. Add to shaker bag; shake to until evenly coat tomatoes with coating mix. Place on prepared baking sheet.
- Bake 10 to 12 min. or until crisp and lightly browned.
- Place salad greens on large platter; top with cherry tomatoes, green tomatoes and parsley. Drizzle with dressing just before serving.
