FRIED GREEN PLANTAINS

Fried Green Plantains image

Tostones. In many Latin American countries, crunchy tostones are as popular (and served as often) as french fries are here. A single bite of their salty crust and tender interior will tell you why they're so beloved.

Yield Makes 4 to 6 (side dish) servings

Number Of Ingredients 3

2 pound large unripe (green) plantains (about 3)
About 2 cups vegetable oil
2 cups warm water

Steps:

  • Cut ends from each plantain with a sharp small knife, then cut a lengthwise slit through peel. Cut plantains crosswise into 1-inch-thick pieces and, beginning at slit, pry off peel.
  • Heat 1/2 inch oil in a deep 10- to 12-inch heavy skillet over medium heat until just hot enough to sizzle when a piece of plantain is added. Fry plantains in 2 batches, turning occasionally with tongs, until tender and just golden, 5 to 7 minutes per batch. Transfer plantains to paper towels to drain, reserving oil in skillet.
  • Flatten each plantain to 1/4 inch thick with a tostone press or bottom of a heavy saucepan.
  • Stir together warm water and 1/2 teaspoon salt in a bowl. Heat reserved oil over medium heat until it shimmers. Dip a flattened plantain in salted water and gently place, without patting dry, in hot oil. (Plantains will not spatter.) Repeat with several more pieces and fry plantains (without crowding) in 4 or 5 batches, turning occasionally, until golden, about 3 minutes per batch. Transfer with tongs to clean paper towels to drain. Season with salt and serve immediately.

  • In a large heavy pot, add enough vegetable oil to cover the entire plantains and heat the oil over medium high heat.
  • Add the plantains to the heated oil. Fry for about 10 to 15 minutes per side. Carefully remove the plantains with a slotted spoon, and place them on a plate lined with paper towels to absorb excess oil.
  • Let the plantains cool for 3 minutes. Then, place the plantains on a piece of plastic wrap and cover with another piece of plastic wrap. With a flat pot cover, press well the plantains, flattening them about to ¼” thickness.
  • Dip each slice in salted water. Then using tongs add them back in the hot oil in a single layer (need to work in batches) and fry for an additional 3 minutes on each side. Be careful when you fry the soaked plantains, as droplets of water will cause the oil to splatter.

  • Use your fingers to pry open and peel off the tough outer skin. Discard the skin of the plantains.
  • Fill a large, heavy-bottomed skillet about a third of the way with oil. Heat over medium for a few minutes to warm up the oil just slightly.

  • Sweet Fried Ripe Plantains. The key to an excellent plate of sweet fried ripe plantains is to ensure that the plantains are at the right degree of ripeness—the riper the plantain, the sweeter it is.
  • Tostones (Twice-Fried Green Plantain Chips) These twice-fried plantain chips, called tostones, are a wonderful alternative to potato chips. Green plantains are sliced and fried in oil until a light golden color and soft.
  • Jibarito (Plantain Sandwich) This unique sandwich created by Puerto Rican immigrants in Chicago replaces the bread with slices of fried plantain, adding an interesting layer to any sandwich filling.
  • Mofongo Stuffing (Green Plantain Turkey Stuffing) Green plantain turkey stuffing, also called mofongo stuffing, is an excellent alternative to the traditional bread and meat stuffing associated with a Thanksgiving turkey.
  • Cuban Fufú (Sweet Plantain Stuffing) This Cuban fufú is similar to mofongo stuffing, but the recipe calls for ripe plantains instead of green. The sweet plantains are boiled and mashed and then folded into a mixture of fried bacon, onion, and garlic, making for a sweet yet savory turkey dressing or side dish.
  • Cazuela de Camarón (Shrimp in Plantain and Peanut Sauce) In this traditional Ecuadorian recipe, the plantains are blended into a sauce with sautéed vegetables and seasoning, then cooked with some peanut butter, making for a rich and creamy consistency.
  • Plantain and Steak Tostones. Fried green plantains are flattened into a bun shape as they cook and take the place of the bread in this delicious steak sandwich, another type of jibarito.
  • Tajadas (Fried Ripe Plantain Strips) Tajada means "slice" in Spanish and refers to the way the plantains are cut before frying. In this recipe, ripe plantains are formed into long slices and fried in oil until golden and crispy.
  • Bakabana (Fried Plantain With Spicy Peanut Sauce) Suriname, a small, South American country on the northeast coast, is home to this simple plantain dish, although its origins are Indonesian.
  • Puerto Rican Pasteles. In many Latin cultures, tamales are a Christmas tradition. This Puerto Rican version, called pasteles, is made with plantain masa instead of corn.
