FRIED CHICKEN STRIPS RECIPE
These delicious fried chicken strips have a crunchy, flavorful batter and are a perfect dinner that the whole family will love. Skip the restaurant and eat at home!

Steps:
- Cut your chicken breasts into strips lengthwise. You do not want them to be thicker than 1/2 an inch or they won't cook. If needed, you can take a meat mallet to the strips to flatten them. Each breast will make 4-6 strips.
- Whisk together the first six ingredients in a medium-sized bowl.
- Beat the eggs in a small bowl.
- Get a large baking sheet and line it with parchment paper.
- First, dip your chicken strips into the flour crumb mixture and cover it completely.
- Dip it into the egg mixture, then into the flour crumb mixture again for a second coat.
- Place on the baking sheet.
- Repeat with all chicken pieces.
- Place the baking sheet in the refrigerator for half an hour.
- Preheat a deep skillet of oil to 365 °F.
- Place each chicken tender into the oil, leaving space between them, cooking in batches. Cook for 2-3 minutes per side, turning, until each tender is browned on the outside and fully cooked in the middle, reaching at least 165 °F .
- Remove and place on a plate lined with paper towels.
- Repeat cooking the tenders until they are finished.
- Serve with dipping sauce.

I was making Chilie Rellenos and some of the chilies were coming apart in strips, so rather than throw them away - i battered and fried them - everyone LOVED them!! We make them about once a week now!

Steps:
- Pull apart green chilies into about 3/4" to 1" wide strips.
- Set aside.
- In medium bowl, mix flour, salt and pepper- set aside.
- In separate bowl, mix eggs and milk.
- Heat oil to med-high heat.
- Dip chilies into flour mixture, egg mixture and again in flour mixture- fry until golden brown.
- Serve with ranch dressing or a cheese sauce.

- Roast the chiles under the broiler until blackened on both sides, about 10-12 minutes, turning once. Once blackened, place the chiles in a paper sack or plastic food-storage bag, close it tight and let the chiles steam for 20 minutes. After the chiles have steamed, remove from the bag and rub off the skin. Remove the stems and seeds from the chiles and cut into strips.
- Pour the buttermilk into a large bowl and in another mix together the flour, salt, pepper, garlic powder, oregano, cumin, and cayenne.
- Place the strips in the buttermilk, then take each and dredge it in the flour. Place the dredged strips on a large plate or sheet. Repeat until all are done.
- In a large heavy skillet heat 1/2 inch of oil on medium high to 350°F, about 5 minutes. If you don’t have a thermometer, you can test the temperature by sticking a wooden spoon into the oil. If it bubbles around the spoon, it should be ready for frying. Line a large plate or sheet with paper towels.
