Steps:
- Get your frying pan on a medium to low heat and add enough olive oil to lightly coat the bottom of a large nonstick pan (about 1 tablespoon).
- Crack the eggs into the pan. As the oil gets hotter you'll see it start to change the color of the eggs. If the oil starts to spit it's because it's too hot, so turn the heat right down. Cook until the tops of the whites are set but the yolk is still runny.
- When they're ready, remove the pan from the heat and take the eggs out using a spatula. Place on a plate and dab them with some paper towels to soak up any excess oil. Serve on toast - no need to butter it - with a sprinkling of the sea salt and freshly ground black pepper.
- Delicious served on some 7-grain bread.

- Heat a 10-inch nonstick skillet over low for 3 minutes
- Crack the eggs into a bowl
- Add the butter to the hot pan and swirl until melted
- When the butter stops foaming, slowly pour the eggs into the skillet
- If necessary, gently nudge the yolks with a wooden spoon to space them evenly in the pan
- Working quickly, season the eggs with salt and pepper, then cover the skillet and cook until the whites are completely set and the yolks are bright yellow, about 3 minutes
- Slide out of the pan and onto plates

- In a heavy 10-inch skillet, heat the butter over medium heat until it begins to sizzle and look hot.
- Break an egg into a custard cup, small bowl or saucer. Slip the egg carefully into the skillet. Repeat with the remaining eggs. Reduce heat to low. You should still be able to see and hear the eggs sizzle as they cook. If they stop sizzling, turn up the heat a little.
- Cook uncovered 5 to 7 minutes, frequently spooning butter from the skillet over the eggs, until the whites are set, a film forms over the yolks and the yolks are thickened.

- Heat the oil in a medium nonstick skillet over low heat until slightly shimmering, about 5 minutes. Crack an egg into a small ramekin and slowly add it to the skillet; repeat with the other egg, adding it to the other side of the skillet. Cover with a tight lid and cook, uninterrupted, until the whites are completely set but the yolks are still runny, 2 to 2 1/2 minutes. Slide the eggs out of the skillet onto a plate or toast. Season with salt and pepper.

- For method 1: Melt butter in your pan, crack the egg into the pan, season with salt and pepper, top with cheese and cover and cook. Once cooked, serve. This should take 2 minutes approx on a low heat.
- For method 2: Add grated cheddar on a non stick pan on a low heat. Let the cheese melt and then crack the egg on top. Season the egg with salt and pepper. Once the cheese has melted and crisped up and the egg cooked through, remove and serve.
- For method 3: Gently beat the egg in a bowl, just enough to break the yolk but not beat it like you do for an omelet. Add some cheese to that and then fry in a pan. Serve.

- Grab your favorite 10-inch carbon steel pan and rummage through your pots and pans until you find a lid that fits itA lid measuring 12 inches in diameter works on mine. Next, park said skillet in the middle of your oven. Crank the oven to 450°F. When the oven says it’s reached its thermal destination, let it sit in there another half hour... just to be sure.

- Add extra-virgin olive oil to your frying pan and warm over medium heat. I test the readiness of the pan by running my hand just above the surface. The pan should be hot; however if the oil starts smoking or the heat causes you to pull your hand back, it is too hot. Also, the oil will lose some of its viscosity (become more loose) and start to shine.
- Once the pan is hot enough, swirl the oil around the pan to create a slick surface. Don’t worry about coating the entire surface. You only need an area large enough to accommodate one egg.
- Crack the egg into a small bowl or ramekin. Use caution when cracking the egg because you don’t want to disrupt the yolk.
- Slowly slide the egg (white first) from the bowl to the oiled frying pan. Doing this process slowly will help minimize spreading and create a nice base for the yolk.
