CHICKEN FRIED CUBE STEAK SAMMIE
I think I said, ummmm, about a dozen times while eating this!

Steps:
- The secret is to season your pork, the egg and milk dip AND the flour. I used McCormicks Steakhouse Onion Burger seasoning, but use your favorite spice or combo of spices.
- Whisk one egg into one cup of milk and place in shallow dish. In another shallow dish place flour, season both well.
- Season pork on both sides, lightly dredge in flour, then egg/milk dip, then flour, then egg/milk dip, then flour.
- Fry on med heat about 1-2 inches of canola oil till brown on both sides, flipping once. It took about 5-7 for so minutes per side for me.
- Another trick to a super tasty burger or sammie, is lightly toast or heat bun or bread, it brings out the flavor of the bread product. Then use your favorite condiments and enjoy. I used mayo, asadero cheese, grated, fresh cilantro leaves and Uncle Gary's Candid Jalapeno peppers, and truly awesome and delicious combo!!!
EGG SAMMIES FOR A CROWD
One sheet tray and you have a classic B.E.C. (bacon egg and cheese) for everyone.

- Preheat the oven to 400 degrees F.
- Weave the bacon into an approximately 10-inch square on a cooling rack. Put the cooling rack with the bacon on a baking sheet. Bake until partially cooked, 15 to 20 minutes
- Meanwhile, whisk together the milk, eggs, 1 1/2 teaspoons salt and several grinds of pepper in a large bowl.
- Remove the cooling rack with the bacon and set aside. Spread the rendered fat on the baking sheet with a pastry brush. Pour the whisked eggs onto the baking sheet and bake for 5 minutes. Remove from the oven and stir until fluffy. Bake until set but not dry, another 5 minutes.
- Using a serrated knife, slice the entire package of sweet rolls in half, keeping them attached to each other. Top the bottom halves with the cheese. Spoon the scrambled eggs onto the cheese. Transfer the bacon lattice on top of the eggs and top with the other half of the rolls. Cut into individual servings and serve with ketchup.
FRIED BOLOGNA AND EGG SAMMIE
Perfect for anytime of day. I had one just like this at Lola, Michael Symons restaurant, in Cleveland.

Steps:
- Toast english muffin.
- Fry blogna in 1 tsp butter until brown, top with cheese. Set aside for cheese to melt.
- Fry egg in 1 tsp butter until white is done but yolk is still runny.
- Assemble by putting pickles on english muffin, cut bologna in half to fit muffin, put egg on top. Top with other half of muffin. Serve with spicy brown mustard on side.

- Spread toasted bread with a generous slather of peanut butter.

- Grill your chicken for about 3-4 minutes on each side or until the juices run clear. Cook the bacon until crispy and set on paper to drain the fat and set aside. Saute the ham and chorizo until just golden brown and fragrant and set aside. Make a fried sunny side up egg (my boys like theirs well done so I break the yolk during the cooking process) and set aside. You can cook up anything you want on your sandwich maybe you like grilled sliced beef or grilled vegetables whatever you like and have on hand will be perfect for your triple decker sammie.
- Toast the bread and spread with your favourite condiment or Japanese mayonnaise and grainy mustard. (Maybe you like HP sauce or ketchup or even horseradish sauce instead, have fun)
- Assemble to triple decker sammie: First place down a slice of toasted bread with the Japanese mayo and then put on the grilled chicken, then a slice of cheese on top so it will melt, then add some arugula (rocket) and then a layer of tomato (Salt and pepper) and then top with a slice of toasted bread with Japanese mayo and grainy mustard on both sides. Next add your cooked ham and chorizo and then some more cheese and more arugula (rocket) then add your fried egg, crispy bacon and then finally top with your last slice of toasted wheat bread with one side Japanese mayo and grainy mustard spread on one side.
- Cut your epic triple decker sandwich in half on an angle or in 4 wedges and serve with your favourite olives and pickles. Enjoy!
