FRIED-EGG-TOPPED SANDWICHES
Hot fontina cheese adds tang to these open-faced sandwiches, which aretopped with an egg and accompanied by a red-leaf lettuce salad and a sprig of fresh oregano.

- Cut bread slices into 8 rounds with a 3 3/4-inch cookie cutter. Top half with a few slices of cheese; sprinkle with oregano, salt, and pepper. Place remaining bread rounds on top; press gently to adhere.
- In a small bowl, whisk together the milk and 2 eggs. Heat 2 tablespoons oil in a large nonstick skillet over medium heat. Dip sandwiches, one at a time, into egg mixture, letting excess drip back into bowl; transfer to skillet. Cook until golden and cheese has melted, about 2 minutes per side. Transfer to serving plates.
- Wipe skillet with a paper towel. Heat remaining 2 tablespoons oil. Crack remaining 4 eggs into skillet, one at a time. Fry until whites are just set, about 2 minutes. Carefully place an egg on each sandwich. Season with salt and pepper; garnish with oregano, and serve.

- Heat 1 tablespoon oil in a medium nonstick skillet over medium heat. Add the scallion whites, half of the scallion greens (save the other half for garnish) and the jalapeno and cook, stirring, 1 to 2 minutes. Scrape half the vegetables into a small bowl and set aside; leave the remaining vegetables in the skillet.
- Meanwhile, in a medium bowl, whisk together the eggs, rice flour, cilantro and water. Season with salt and pepper. Pour half the egg mixture over the vegetables in the skillet. Mix so everything is combined and cook over medium heat until the bottom is golden brown, 1 to 2 minutes. Flip and cook until the other side is golden brown. Turn the egg wrap out onto a cutting board. Repeat this with the remaining cooked vegetables and egg mixture.
- In a medium bowl, combine 2 tablespoons oil, lemon juice and salt and pepper to taste. Whisk to combine, add the watercress and toss to coat evenly with the dressing.
- To assemble, spoon half the goat cheese over each wrap and lay the watercress salad on top. Fold the wrap over the filling like a burrito, sprinkle with the reserved scallion greens, and enjoy hot.
WATERCRESS WITH A FRIED EGG AND BLACK SESAME SAUCE

- In a medium bowl, mix together the lime juice, a big pinch of salt, and the oil with a fork or a whisk. Add the watercress and toss gently to lightly coat. Divide the dressed watercress among four salad plates and set aside.
- Heat a cast-iron or other heavy skillet that you like to use for eggs over medium-high heat. When it is hot, swirl a small amount of vegetable oil in the pan and crack in the eggs, in batches if necessary. When the edges of the eggs are a bit crispy, the whites are completely set, and the yolks are still runny, transfer an egg to each plate so that it slightly overlaps the watercress. Season the eggs with salt, and drizzle about a tablespoon of the sesame sauce over each portion.
- Toast the sesame seeds in a small sauté pan over medium heat, tossing frequently, until the seeds become fragrant and begin to pop. Transfer them to a plate and let them cool completely. Grind in 10-second increments in a spice mill or clean coffee grinder to a very fine paste, stirring the mixture, then grinding again, and repeating this process until the paste is completely smooth and glistening from the oil that has been released. This will take 3 to 5 minutes. (If the seeds are not ground into a very smooth paste, the sauce will be gray rather than deep black.) Transfer the paste to a small bowl, add the salt, and gradually whisk in the oil, sake, mirin, and dashi until smooth.
