EGG-IN-A-HOLE SANDWICH



Egg-in-a-Hole Sandwich image

6 slices thick-cut peppered bacon
1/4 cup mayonnaise
Jalapeño-style hot sauce, as needed
Kosher salt and freshly ground black pepper
4 slices Texas toast
4 tablespoons salted butter
4 large eggs
4 slices pepper jack cheese
1 small tomato, sliced
Green leaf lettuce, for topping

Steps:

  • In a large cast-iron skillet over medium heat, cook the bacon until crisp, 12 to 14 minutes. Remove to a plate and set aside. Drain the grease from the skillet but do not clean. When cool enough to handle, tear the bacon slices in half.
  • Meanwhile, mix the mayonnaise and hot sauce to taste in a small bowl. Season with salt and pepper.
  • Using a biscuit cutter or the rim of a glass, cut a hole in the center of each Texas toast slice.
  • Melt 2 tablespoons of the butter in the bacon skillet and add 2 of the Texas toast slices. Toast the bread slightly, 1 to 2 minutes. Crack an egg into the hole in each piece of toast and sprinkle the eggs with salt and pepper. Cook the eggs until set on the bottom, 2 to 3 minutes. Using a spatula, carefully flip the toast with the egg, season the other side and spread with the mayonnaise mixture. Top each with a slice of cheese to slightly melt and cook until the egg is the desired doneness. Remove to a cutting board and repeat with the remaining butter, toast, eggs, mayo mixture and cheese.
  • To build the sandwiches, divide the bacon between 2 of the egg-in-a-hole toast pieces, on top of the cheese. Top each with some tomato slices and lettuce, then top with a remaining egg-in-a-hole toast piece. Serve immediately or wrap in foil to keep warm.

I don't care for runny eggs (except eggs benedict) so this hits the spot when I'm in the mood for something more rich and substantial than scrambled eggs, but not gooey (except the cheese). If I have it on hand, I replace one egg with a slice of ham that I fry first.

2 eggs
1 -2 slice cheese
2 slices toast (I use whole wheat)
1 tablespoon butter
1 tablespoon mayonnaise
salt
pepper

Steps:

  • Heat the butter in a medium-sized non-stick frying pan over medium high heat.
  • When it's very hot, crack one egg on one side of the pan and one egg on the other side of the pan.
  • Try to keep them from running into each other so that they can be flipped individually.
  • CRUCIAL: Poke the yolks with the eggshell (or a fork) so that they run into the whites.
  • Sprinkle salt and pepper on the eggs.
  • When eggs have set (edges seem firm), flip carefully.
  • I usually end up flipping them a few times to make sure the yolk is thoroughly cooked (it's okay if it's a little soft inside but not runny).
  • When almost done, top each egg with a piece of cheese and cover with a lid until melty--watch closely.
  • Spread mayo on each slice of toast, top with eggs, and put together.

1 ounce fontina fontal cheese
2 slices extra-smoky, extra-thick cut bacon
1 English muffin, split
1 large egg
Coarse salt and freshly ground pepper

Steps:

  • Place cheese in freezer until well chilled, about 10 minutes. Meanwhile, place bacon in a large skillet over medium-high heat; cook until crisp. Transfer to a plate lined with paper towels to drain.
  • Remove cheese from freezer, cut two slices, and grate remaining cheese on the largest holes of a box grater; set aside.
  • Place English muffin split-side down in skillet; cook until toasted. Turn and top both sides with sliced cheese. Reduce heat and cook until cheese is melted. Remove from heat and set aside. Top one half with with bacon.
  • Crack egg into bacon fat and season with salt and pepper. Fry egg until the white is set; turn and top egg with grated cheese. Continue cooking until yolk has reached desired degree of doneness.
  • Carefully place egg on top of bacon. Sandwich with remaining muffin half; serve immediately.

½ cup maple syrup

Steps:

  • Dip bread slices in beaten eggs. Heat a lightly oiled griddle or frying pan over medium high heat. Cook until browned on both sides. Set aside but keep warm.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside. Reserve 1 tablespoon of bacon grease in pan and fry remaining two eggs.

Steps:

  • Heat griddle and add bacon.
  • After bacon is cooked on one side, flip it over.
  • Add egg to griddle, fry hard on both sides. sprinkle with garlic salt.
  • Toast bread in toaster.
