How about a fast festive appetizer just for two? These hot, crispy little bites boast a rich creamy filling with a hint of crab. "They simply melt in your mouth," promises Robin Boynton of Harbor Beach, Michigan. Suggestion: serve wontons with plum sauce or sweet-and-sour sauce for dipping.

- In a small bowl, combine the cream cheese, crab and onion. Place 1 rounded teaspoonful in the center of each wonton wrapper. Moisten wrapper edges with water; fold in half lengthwise and press firmly to seal. , Keeping the filling in the center, again fold wonton wrapper lengthwise. Moisten the top of the short edges with water. Bring the two top edges from opposite sides together, overlapping the edges; press and seal (finished wonton resembles a nurse's hat)., In an electric skillet, heat 1 in. of oil to 375°. Fry wontons for 1-2 minutes on each side or until golden brown. Drain on paper towels. Serve warm.

- In a bowl, mix the ground pork, shrimp, soy sauce, sesame oil and white pepper together. Stir to combine well to form a sticky filling.
- To wrap the wontons, lay a piece of the wonton wrapper on your palm and add 1/2 tablespoon of the filling in the middle of the wrapper. (Use 1 teaspoon filling if you are a beginner.) Dip your index finger into the sealing water and trace it on the outer edges of the wonton wrapper.
- You can wrap the wontons three ways. To make a triangle, just fold it up to form a triangle. Pinch the edges to seal tight. To make them into the pretty shape (far left in the above picture), just pull the two corners of the triangle down so one overlaps the other, pinch and seal with water. To make them into Hong Kong style wonton (far right in the above picture), please watch my video at the top of this post.
- Heat up some oil for deep-frying. Once the oil is fully heated, deep fry the wontons until golden brown. Drain the excess oil with paper towels. Serve hot with Chinese sweet and sour sauce or Thai sweet chili sauce.

- Heat oil in a large, heavy saucepan to 375 degrees F (190 degrees C).
- In a medium bowl, mix together cream cheese, imitation crabmeat, soy sauce, sesame oil, garlic, Worcestershire sauce and green onions.

IMITATION CRAB RANGOON

- Dice imitation crab, water chestnuts, garlic, and green onions
- Mix the first 10 ingredients together in a large bowl.
- Place 1 tbsp of the filling into the middle of the wonton wrapper. Wet the edges of the wrapper with water. Close wonton to form a triangle shape and pinch edges gently to close.
- Heat vegetable oil in a pot until it reaches 350 degrees. Gently put in a few wontons into the pot at a time. Cook for approximately 1 to 1 1/2 minutes, until wontons are golden brown.
- Dry wonton on paper towels to remove excess oil. Serve immediately with your favourite dipping sauce (eg. sweet chilli).

- Make the wonton filling by combining the cream cheese, sugar, salt, and scallions.
- Assemble the wontons. Take each wrapper, and dampen the outer edges with a thin layer of water. Place a teaspoon of the cream cheese filling in the middle, and fold in half into a triangle. Bring the two corners on the long side of the triangle together, and seal with another dab of water. Continue until all the wontons are assembled.
- Heat a couple inches of vegetable oil in a small pot until it reaches 375 degrees F. Fry the wontons in batches--about 2 minutes per batch--until golden brown. Definitely use a small pot for this and fry in multiple batches; you'll use much less oil!
- Make the dipping sauce by combining all the sauce ingredients, and serve with the wontons.

- Place wonton wrappers aside and combine all other filling ingredients in a medium bowl.
- Place 1 teaspoon of filling in center of each wonton.
- Moisten the edges of the wonton with a little bit of the egg/water mixture (i.e. egg wash). Fold in a triangle and press to seal- removing air from the inside. Use the egg wash like a glue as you assemble.
- Take the left and right sides of the triangle and pull them up, attaching them to the existing seal on the top. Then press along the edges to close any areas where the filling could be exposed to air. Here is an alternative folding method. Repeat, setting aside on a plate.

- Mix all the cream cheese, crab meat, sugar, and salt in a bowl. Stir to blend well. Place about 1 tablespoon of the cream cheese filling in the middle of a wonton wrapper. Dab some water on the outer edges of the wonton wrapper and fold the two ends of the wrapper together. Fold the other two ends to make a tiny parcel pictured below. Pinch to seal tight and make sure that there is no leakage.
- Heat up a pot of oil for deep-frying and fry the crab rangoon until golden brown. Dish out with a strainer or slotted spoon, draining the excess oil by laying the crab rangoon on a dish lined with paper towels. Let the crab rangoon cools down a bit before serving them with sweet and sour sauce.

FRIED CRAB WONTONS

- Combine in a food processor the ginger, shallots, carrot, green onion, cilantro, peanut oil and lemon juice. Pulse until fine. Put vegetable mixture in a mixing bowl, add the mayonnaise and the crabmeat and season with salt and pepper. Be careful not to mash the crabmeat, you want that texture when you bite into the wonton.
- Lay a wonton wrapper on a flat surface and brush with the beaten egg white. Drop 1 tablespoon of the crab filling onto the center of the wrapper. Fold the wonton in half, corner to corner, to form a triangle. Press around the filling to knock out any air bubbles, then press the seam together to seal so the filling doesn't seep out. You can leave them this shape or continue on by brushing the 2 side points with beaten egg white. Lay your index finger in the center so you have something to press up against, then fold the 2 sides into the center, slightly overlapping, and press the dough against your finger with your thumb to form a tight seal. Lightly dust the filled wontons with cornstarch to keep them from sticking together and place them on a cookie sheet. (When these are folded they look like Pope hats.)
- Heat 2 to 3 inches of oil in a deep heavy saucepan to 370 degrees F on a deep-fry thermometer. Add a few of the wontons to the oil and cook, turning them 3 or 4 times to get them nicely browned all over. Carefully lift them out of the pan with a slotted spoon and onto a paper towel-lined platter to drain. Keep going to cook all of the wontons.
- Stir together the dipping sauce and serve with the wontons.

- 1. *Soften cream cheese on counter while prepping onions and cooking mixture.
- 2. In skillet sauté onions, butter, crab with garlic powder (if using), salt and pepper until onions are translucent.
- 3. Immediately stir hot mixture into softened cream cheese until thoroughly mixed and creamy.
- 4. Spoon small amount of mixture into middle of each wonton.
- 5. Moisten fingertips and apply to edges of wrappers, then press together to close forming a triangular shape (folded in half).
- 6. Bring outer tips together and press to loosely form a pointed fortune cookie shape.
- 7. Heat oil in skillet (medium to medium high), and place wontons in hot oil.
- 8. Turn a couple of times until all sides are lightly golden brown.
- 9. Watch closely as they will turn dark very quickly. ;)
- 10. When done place on a paper towel lined plate to drain; repeat until all are cooked.
- 11. Serve with sweet chili sauce for dipping. Enjoy!! :)
