BUTTERMILK FRIED TOFU WITH SMOKY COLLARD GREENS
Dipping tofu in buttermilk makes the coating stick for a crispy pan-fried tofu, reminiscent of fried chicken. Spicing up the collards with paprika coats them with smoky flavor while keeping this dish vegetarian. And this quick, easy and healthy dinner comes together in just 25 minutes, so it's great for busy weeknights.

- Heat 1 tablespoon oil in a large pot over medium heat. Add collards and water; cover and cook, stirring occasionally, until soft and wilted, about 8 minutes. Remove from heat and stir in vinegar, paprika and 1/2 teaspoon salt. Cover to keep warm.
- Meanwhile, cut tofu crosswise into 8 equal pieces. Blot with paper towels to remove excess water. Whisk buttermilk, garlic powder, onion powder and cayenne in a 7-by-11-inch baking dish. Add the tofu and turn to coat. Let stand, turning once, for 5 minutes.
- Place panko on a plate. Dredge the tofu in the panko, coating both sides.
- Heat 3 tablespoons oil in a large nonstick skillet over medium-high heat. Add the tofu and cook until brown and crispy on one side, 4 to 5 minutes. Turn the tofu over and drizzle in the remaining 2 tablespoons oil. Cook until browned on the other side, about 4 minutes more.
- Sprinkle the tofu with the remaining 1/4 teaspoon salt and serve with the collards and hot honey, if desired.

My family loves greens,but these fried greens are the best.I just started messing with them to try something new, we have been eating them that way ever since I can remember. Now everyone who tries them are very impressed. They are always a hit wherever I cook them. (And all good greens must have cornbread)!

FRIED CABBAGE WITH COLLARDS
This recipe started off as "Oops I don't have enough cabbage," so I added some collard greens that I had to stretch the portions. It ended up with everyone really loving the combination of the two greens with the smoky bacon, spices, sweet peppers and fragrant garlic. It's two Southern gems wrapped up in one dish. I always top off my cabbage or greens with chow-chow, which is a mixture of tomatoes, diced onions, bell peppers, hot sauce and vinegar. It gives it an extra zing of pickled flavor.

- In a large cast-iron skillet over medium heat, cook the bacon until crisp, 8 to 10 minutes. Remove from the pan. Sauté the bell pepper and onions in the same pan until tender and browned in spots, for 2 minutes. Add the shredded collard greens and cook on low heat until softened, for 4 minutes. Add the cabbage, chicken bouillon, salt, Creole seasoning, garlic paste and black pepper and cook on medium heat for an additional 10 to 15 minutes or until the cabbage and greens are tender. Add some water if the mixture is too dry. Put the bacon back into the pan, stirring it in for even distribution. Cover until ready to serve. Serve with chow-chow on the side, if desired.
PAN-FRIED COLLARD GREENS
Steps:
- Add bacon to a large skillet over medium heat. Cook bacon, stirring occasionally, until crispy, about 5 minutes. Use a slotted spoon to remove from the pan and set aside, leaving the fat in the pan.
- Add the onion to the bacon grease and cook, stirring, until softened, about 3 minutes. Stir in garlic and cook, stirring, for another 30 seconds or so, until fragrant. Add the greens, honey, hot sauce and a few pinches of salt and pepper. Cook the greens, stirring occasionally, until greens are nice and tender, 25 to 30 minutes. Taste and add more salt and/or pepper if necessary. Serve hot with bacon on top.

- Wash the greens, leaving droplets of water on the leaves. Remove any tough stems and tear leaves into bite-sized pieces. In a 12 inch nonstick skillet, cook the bacon over medium heat for 5 minutes or until crisp; transfer to paper towels. Pour off all but 1 Tblsp. of the drippings. Add the red bell pepper and onion to the drippings and saute for 5 minutes or until soft. Stir in the greens and black pepper. Saute 10 minutes longer or until the greens are tender. Top with the bacon.

- Cut the collard green leaves away from their stems with a sharp knife or kitchen shears. Stack 6 to 8 similar-sized leaf halves atop one another at a time. Roll up snugly from one of the narrow ends, then slice thinly crosswise. Chop the slices in a few places to shorten the ribbons. Place in a colander and rinse well.
- Heat about half of the oil in a wide skillet or stir-fry pan. Add the garlic and sauté for a minute or so over low heat.
- Add the collard greens, and layer the carrots, cabbage, and scallions over them in that order. Turn the heat up to medium and add about 1/4 cup water. Cover and steam for about 3 to 4 minutes.

- CLEAN COLLARD GREENS: Remove any yellow or limp leaves when separating the bunch of collard greens. Submerge the leaves in a large bowl of cold water and swish them around vigorously. Then, remove the leaves from the water and re-fill the bowl with clean water, repeating this process 2 to 3 times, or until grit comes off. Pat dry, or spin the greens until dry.
- CUT COLLARD GREENS: Cut off the tough stems and then the center veins. Sort and place leaves of similar size together in a pile, roll them tightly like a cigar, and thinly slice them (chiffonade) crosswise into about 1/4-inch wide strips.
- TENDERIZE GREENS: In a medium pot, bring 6 cups of water to a boil over high heat. Place the cut leaves into a colander. Pour the boiling water over the leaves to slightly wilt them and then drain well to remove all the excess liquid (you can shake the colander or press down gently on the greens with a spoon).
- COOK COLLARD GREENS: If making with bacon (couve a mineira com bacon), cook the diced bacon in a large, heavy skillet over medium heat until there are no more pink, white, or translucent areas on the bacon, about 5-7 minutes. If needed, add 1 tablespoon of oil in order to add garlic and cook, stirring often, until fragrant, about 60-90 seconds.
