Steps:
- Cover the chickpeas with 4 cups water in a large pot with 1 teaspoon baking soda and refrigerate 8 hours or up to overnight to soak.
- Strain the chickpeas and discard the soaking liquid. Rinse the chickpeas and return them to the pot. Add the remaining teaspoon baking soda and water to cover by about 3 inches over the chickpeas. Bring to a boil over high heat, then turn the heat down to a simmer and cook, skimming off and discarding any foam that rises to the surface. Cook the chickpeas until tender but still hold their shape, about 30 minutes. Remove 1 cup of chickpeas from the pot with a slotted spoon. Drain well and reserve on a paper towel-lined plate to dry. Continue cooking the remaining chickpeas until they are mostly intact and soft and creamy (not crumbly) when pressed between a thumb and forefinger, about 10 minutes more. If the liquid boils off too much while cooking, add more water to cover and continue to cook.
- Meanwhile, make the parsley oil. Bring a small pot of water to a boil. Add the parsley leaves and cook 10 seconds, then drain. Immediately run the parsley under very cold water to cool it completely, 30 seconds to 1 minute. Squeeze out the excess liquid and then transfer to a paper towel-lined plate to dry.
- When the chickpeas are done cooking, strain them and discard the liquid. Let the chickpeas sit in the strainer to drain and dry out for 5 minutes. Put the chickpeas in the bowl of a food processor along with the tahini, lemon juice, garlic and 1 3/4 teaspoons salt and process until the mixture is a paste, scraping down the bowl as necessary. With the motor running, slowly pour in 1/4 cup of the ice water and continue to process, adding more water by the tablespoon as necessary, until the mixture is smooth and light, about 5 minutes. The hummus should be slightly loose because it will firm up as it sits.
- Transfer the hummus to a shallow bowl and cover by lightly pressing plastic wrap directly onto the surface; set aside until ready to serve. (The hummus can also be made a day ahead and refrigerated. Bring to room temperature for 30 minutes before serving.)
- Put the cooked parsley leaves in a blender along with 1/2 cup olive oil and puree until the parsley is fine and the oil green, about 5 minutes. Transfer the parsley oil to a small bowl and cover with plastic wrap pressed directly against the surface. Parsley oil can be used right away, or held at room temperature up to 6 hours
- Just before serving, fry the chickpeas. Heat the remaining 1/2 cup oil in a medium skillet over medium-high heat for about 2 minutes. Pat the reserved chickpeas dry with a clean towel and carefully add them to the skillet. (The oil will bubble up for a few seconds.) Fry, shaking the pan occasionally, until browned and crisp, 7 to 9 minutes. Transfer the chickpeas to a paper towel-lined plate to drain. Immediately sprinkle with the lemon zest, cayenne, cumin and some salt; toss to coat.
- Remove the plastic wrap from the reserved hummus. Make a shallow circular indentation with the back of a spoon in the center of the hummus. Mound the fried chickpeas in the center of the hummus. Drizzle with the parsley oil, spooning most of it around the edges of the hummus.

Steps:
- Soak the chickpeas. You can either soak them overnight or try the quick soaking method. To soak overnight, put the chickpeas in a large bowl and add plenty of water to cover the chickpeas by a good 3 inches. Set aside for 24 hours. For the quick soak method, put the chickpeas in a pot and add 6 cups of water. Bring to a boil and cook for 2 minute. Turn the heat off, cover and let the chickpeas soak for 1 hour. Drain.
- Stovetop Method. In a large cooking pot, put the chickpeas and 1 teaspoon of baking soda. Cook over medium-high heat, tossing constantly for about 3 to 4 minutes. Add 7 cups of water to cover the beans by several inches. Season with a big pinch of kosher salt (about 1 teaspoon or more if you like). Add the bay leaf and garlic. Bring to a boil, then turn the heat down and simmer, skimming off any foam or skins that float to the top. Chickpeas will cook anywhere from 40 minutes to 1 ½ hour or until tender (cooking time will vary depending on the type and freshness of the chickpeas).

CHICKPEA FRIES (BAKED OR FRIED)
these are becoming all the rage at pubs and tapas bars around here, and with good reason! i hate deep fryers so i figured out how to do them in the oven! if you fry them, they're not HEALTHY but you do get a lot more protein and less carbs than potatoes. they taste like solidified hummus with a crispy outer layer. so addictive! i like freezing these so i can have them on hand to pop into the oven whenever i'm feeling snacky. serve with a spicy dip. i like chipotle mayo or a creamy sriracha dip. prep time is chilling time

Steps:
- Line an 8x8 square pan with parchment or plastic wrap, set aside.
- mix COLD water, chickpea flour, and spices in a medium sized pot with a whisk until smooth. do not boil the water first and then add the rest or it will be a lumpy mess.
- bring to a boil slowly over medium heat, whisking constantly. boil for 1 minute. it should now be the consistency of pudding.
- Spread the chickpea mixture into an even layer in the lined pan. Let cool for about 15 minutes, then cover loosely. Refrigerate for at least one hour, and up to a day. i like to speed this up by putting in the freezer for the first 10-20 minutes.
- turn your now solidified chickpea porridge over onto a plate or cutting board. looks gross, doesn't it? don't worry. it won't stay that way. cut into little fingers about 4 inches long by 1/2 inch wide.
- i like to gently coat the little fingers in bread crumbs for a crispier outer crust. you don't have to do that if you're frying them but it's a really good idea if you want to bake. if you hate deep fryers like i do, and want that addictive texture, freeze your fries in a single layer until solid before transferring to a bag. make a huge batch and keep them on hand all the time. impress your friends when you bring them to parties! make sure your fries are completely solid before baking. overnight would be good.i wouldn't suggest putting them right from the freezer into the deep fryer or they could blow up. hot oil spitting at your face=no.
- if you don't want to fry than put your now-frozen fries onto an oiled cookie sheet. drizzle/spray with cooking spray or oil to make sure they get crispy. if you do this with non-frozen fries they will melt into a puddle of goo, which then gets hard all the way through. don't do what Rowen don't does. bake at 450f for 25-30 min, flipping once. after you've flipped, spray with oil again before you finish baking. it's still way less fat than frying, don't worry.
- if you don't have a deep fryer and don't want to bake, you can heat 1/8-1/4" oil in a large skillet over medium heat.Place batches of the fries into the hot oil, turning when browned. After all sides have browned, remove from the oil and drain on paper towels, sprinkle with salt. Repeat with remaining chickpea fries.
- Serve with romesco sauce, tomato sauce, aioli, creamy srirachia dip, buffalo sauce, or chipotle mayo.

- Preheat oven to 220C. Combine cauliflower in an oven dish with 60ml olive oil and lemon rind, season to taste, stir to coat, and roast until dark golden brown and tender (30-35 minutes). Cool.
- Meanwhile, toss half the chickpeas with spices and remaining olive oil, season to taste and spread on an oven dish lined with baking paper. Roast, shaking pan occasionally, until crisp and golden brown (20-25 minutes). Set aside.
- For yoghurt flatbread, combine dry ingredients and 2 tsp salt in a bowl and make a well in the centre. Whisk yoghurt, oil and 100ml hot water in a bowl to combine, add to well and mix until a dough starts to form. Turn out onto a lightly floured surface, knead until smooth and elastic (4-5 minutes), then rub all over with oil, place in a clean bowl, cover with plastic wrap and stand at room temperature until doubled in size (40-45 minutes), then knock back. Dough can be refrigerated at this stage for 5 days. To cook, pinch off golfball-sized pieces of dough and roll out to 3mm-thick rounds on a lightly floured surface. Heat a large frying pan over high heat until very hot and cook bread one at a time until lightly scorched (1-2 minutes), then turn and cook other side (1 minute). Drizzle with extra oil and season to taste. Serve at room temperature or warmed in a moderate oven for 2-3 minutes.
- Process cauliflower (reserve a little for garnish), remaining chickpeas, lemon juice, tahini and garlic in a food processor until smooth, add extra-virgin olive oil, season to taste and process to combine. Top with reserved roast cauliflower, roast chickpeas, parsley and a little extra paprika and serve with yoghurt flatbread.

- Drain and rinse the chickpeas in a colander and spread them to dry on a towel-lined dish or sheet pan in the refrigerator for eight hours, or overnight.
- Heat the olive oil over medium-high heat in a 10" skillet. It should be about a 1/8" layer of oil. When the oil is shimmering but not smoking, add the chickpeas to the pan, and spread them to one even layer. Reserve the towel-lined dish or pan.PRO TIP: A cast-iron pan will hold the temperature more evenly and steadily than other types.
- Let the chickpeas fry in the oil for about 10 minutes, or until toasty brown, shaking the skillet every few minutes to make sure the beans cook evenly. You may need to lower the heat to medium.
HUMMUS FRIES WITH SPICY TAHINI DIP - HOST THE TOAST
From hostthetoast.com
- Grease a 9- by 13-inch baking dish and set aside. Mince 5 cloves of the garlic and add to a large saucepan. Add 4 cups water, 1 cup tahini, and the cumin. Whisk to combine. Set over medium-high heat and bring to a gentle boil; lower heat to maintain gentle boil. Whisk in chickpea flour a little at a time until fully combined. Whisk in salt and pepper. Continue to cook, whisking often, until batter is thickened and just beginning to pull away from the edges of the pot. Whisk in lemon juice, adjust seasonings to taste, and remove from heat.
- Quickly transfer chickpea mixture to greased baking dish, using a spatula to spread it into an even layer. Cover with plastic wrap and refrigerate until firm, about 3 hours.
- Combine remaining 1 cup tahini, remaining 1 clove garlic, and hot sauce in the bowl of a food processor and process until well combined. Slowly stream in cold water, with food processor running, until mixture is thinned to the desired consistency. Alternatively, mince garlic and whisk with tahini and hot sauce in a large bowl until smooth, thinning with water as necessary. Stir in yogurt, if desired. Transfer to a serving bowl and set aside.
- In a large pot, heat 2 inches of oil to 350°F. Run a butter knife or thin spatula around the edges of the baking dish, then flip it over onto a cutting board to release the solidified chickpea base. Cut chickpea base in half lengthwise, then cut the halves crosswise into thin, fry-like slices. Working in batches, fry slices until golden all over, about 4 minutes per side. Transfer to a paper towel–lined plate to absorb excess oil. Sprinkle with salt while hummus fries are still hot.
