When cooking fried rice recipes, it's better to have day old rice that's been refrigerated. The rice is best when it's cold, firm and easy to separate the kernals. Fresh hot cooked rice will be more challenging and result in gummy fried rice. Our recipe is perfect for days when you have left over rice. If you don't have left over rice, try to make rice the day ahead of time and then refrigerate the rice.

Number Of Ingredients 11

about 2 1/2 - 3 cups (loosely packed)(600-700ml) day-old cooked white rice
1 pound boneless chicken (breasts or thighs) (, cut into small pieces)
2 Tablespoons (30ml) cooking oil (, divided)
1 medium onion (, chopped)
3 cloves garlic (, minced)
1 cup (240ml) fresh pineapple (, cut into small bite sized pieces (or canned pineapple, drained & cut in small pieces))
1/2 cup (120ml) sliced celery
1/2 teaspoon kosher salt
2 Tablespoons fish sauce ((or soy sauce, but the fish sauce tastes better!)For Gluten Free use Tamari)
1 large egg
ground black pepper (, to taste)

Steps:

  • (If using a non-stick pan, the 2 Tablespoons of oil should be enough. The rice sticks less to non-stick, thus using less oil.) In large non-stick pan, turn on medium heat, warm the pan, then add 1 Tablespoon of oil (save other half of oil for another step). Once oil is hot, add onions and garlic. Cook until translucent.
  • Add chicken, cook for about 1 minute untnil chicken becomes brown. Then add pineapple, celery, salt and cook for about 2-3 minutes till chicken is fully cooked. Remove from pan and add mixture in medium bowl. Set aside.
  • In same heated pan, add 1 Tablespoon of oil. Allow oil to get hot then add rice. If rice sticks too much, add a little more oil or water, 1 Tablespoon at a time.
  • Cook and stir rice for about 2 minutes until it becomes hot. Add fish sauce and egg. Gently break up the egg in the rice, and mix egg in rice till it combines well into rice.
  • Cook rice for about 1 more minute till egg becomes cooked, then remove any excess moisture from the chicken/pineapple mixture. Then add the chicken/pineapple mixture back into the pan with the rice.
  • Continue cooking for about 3-4 more minutes until rice, egg and chicken/pineapple mixture are fully combined and cooked. Season with black pepper and/or salt to taste.
  • Serve hot.

Steps:

  • In a large saucepan, combine brown sugar and cornstarch. Stir in the pineapple, soy sauce, garlic salt and ginger. 1 egg
1 pound chicken breast tenderloins
¼ cup all-purpose flour
¼ cup potato starch
½ teaspoon salt
¼ teaspoon ground black pepper
vegetable oil for frying
¼ cup honey
¼ cup brown sugar
2 tablespoons soy sauce
2 tablespoons gochujang (Korean hot pepper paste)
1 tablespoon Worcestershire sauce
2 teaspoons red pepper flakes

Steps:

  • Whisk milk and egg together in a large bowl until thoroughly combined and smooth. Add chicken tenders to egg wash and let marinate in the refrigerator for 15 minutes.
  • Combine flour, potato starch, salt, and pepper in a large mixing bowl. Pour mixture into a large, resealable plastic bag. Drain and discard marinade from chicken tenders. Add chicken to the bag, seal it, and shake until each piece is completely dredged in mixture.
  • Heat oil in a deep-fryer or large saucepan to 325 degrees F (165 degrees C).
  • Add chicken pieces to the hot oil about 5 pieces at a time so as not to drop the temperature of the oil. Fry for 2 minutes. Transfer chicken to a plate lined with paper towels to drain. Continue with remaining chicken pieces.
  • Increase oil heat to 350 degrees F (175 degrees C) until continuously boiling. Carefully add the first batch of cooked chicken and fry again until cooked through and crispy about 2 minutes more. 1 lime, zested and juiced
1 red chilli, deseeded and finely chopped
½ tsp smoked paprika
½ tsp cayenne or chilli powder
1 tbsp honey
20g butter

Steps:

  • Blitz the pineapple in a blender until smooth, then tip into a dry frying pan over a medium-high heat. Add the lime zest and juice. Stir in the chilli, paprika, cayenne or chilli powder and a pinch of salt and cook for about 5 mins, stirring continuously.

8 boneless, skinless chicken thighs
2 heaped tsp fine sea salt
500ml buttermilk
200g rice flour
100g cornflour
3½ tsp baking powder
2 tsp hot smoked paprika
2 tsp garlic granules
1 tbsp dried oregano
1 litre vegetable oil, for deep-frying
10g oregano leaves

Steps:

  • Quarter each chicken thigh, then tip into a large bowl. Season well with the salt, then pour over the buttermilk and give it all a good mix. Cover and chill overnight.
  • Combine the rice flour, cornflour, baking powder, paprika, garlic granules, dried oregano, 1 tsp salt and ½ tsp freshly ground black pepper in a medium bowl. Drop in the brined chicken pieces, four at a time, tossing lightly to coat well. Gently shake off any excess, then arrange on a baking tray.
  • Heat the oil in a large, deep saucepan (ensuring it is no more than two-thirds full) to 170C or until a cube of bread dropped in browns within 30 seconds. Fry the chicken in small batches for 3 mins at a time until golden and cooked through. This will help keep the oil at the right temperature and won't overcrowd the pan.
  • Remove the fried chicken pieces to a clean tea towel using tongs to drain off any excess oil, then transfer to a wire rack to ensure they stay crisp. Alternatively, put the fried chicken on a clean baking tray and keep warm and crisp in a low oven. When all the chicken pieces have been fried, drop the oregano leaves into the hot oil and fry until crisp, about 30 seconds- 1 min. Arrange the chicken on a serving platter, scatter over the fried oregano and serve with the pineapple sauce (see 'goes well with', below).
