JUICY STOVETOP CHICKEN BURGERS RECIPE
These delicious and juicy chicken burgers are cooked in a skillet, perfect for an easy weeknight meal. Packed full of flavor, these ground chicken burgers are quick to make and will be a hit with the whole family!

- Heat 1½ tablespoons of oil in a large skillet over medium heat.
- In a small bowl, whisk together Worcestershire Sauce, milk and 1½ teaspoons of canola oil.
- Place the chicken in a medium bowl and fold in the Worcestershire/milk/oil mixture. Don't overwork the mixture or the burgers will be tough.
- The chicken mixture will be sticky, so it's best to spray your hands with cooking spray and carefully (the oil is to place the chicken in the hot skillet.) Gently form each portion into a patty about 4 inches in diameter and ½-inch thick, and liberally salt and pepper the top of the patties.
- Cook the chicken until golden brown on the bottom side.
- Flip the burgers over and season the second side with salt and pepper. Cook until the internal temperature reads 160°F, turn off the heat and top each patty with a slice of cheese. Cover the skillet until the cheese has melted, and transfer the patties to a paper towel-lined plate.
- Cover with foil and set aside for a few minutes. (The burgers will continue cooking and will reach 165°F.)
- Serve on toasted buns with your favorite burger toppings and condiments.

- Make the buttermilk marinade: In a medium bowl, combine the buttermilk, salt, pepper, and cayenne. Toss in the chicken thighs in the marinade to coat. Marinate for at least 1 hour in the refrigerator, or overnight.
- Make the dill dressing: In a small bowl, combine the yogurt, dill, garlic powder, lemon juice, and Parmesan cheese. Cover and let sit for at least 1 hour in the refrigerator to chill.
- Make the seasoned flour: In a medium bowl, combine the flour, salt, pepper, cayenne, and garlic powder. Dip the marinated chicken in the flour mixture until the chicken is completely covered.
- Heat the oil in a deep pot until it reaches 350˚F (180˚C). Do not fill more than halfway with oil. Carefully fry the chicken for 7 minutes, or until cooked through.
- The internal temperature should reach 165˚F (75˚C), and the chicken should be golden brown and crispy. Drain on a paper towel-lined plate or wire rack.

- Mix Garlic Mayo ingredients in a small bowl, set aside for 20+ minutes.
- Mix Seasoning in a flat bowl / dish.
- If required, pound chicken to about 1 cm / 2/5" thick. If wanting to be exact, trim to shape of rolls BUT ensure it is about 15% larger (it shrinks) (Note 2).
- Heat 1 tbsp oil in a skillet over high heat (if doing on BBQ, drizzle flat plate).
- Add onion and cook, turning regularly, for 5 minutes until golden. Season with salt and pepper, toss, then remove.
- While cooking the onions, preheat oven to 160C/320F. Split rolls, then lightly toast / warm the rolls (if using BBQ, just toast the cut side until crispy). Leave in turned off oven with door ajar while you cook chicken.
- Heat 1 tbsp oil into the same skillet, still on high heat.
- Dredge chicken in Seasoning, shake off excess, then place in skillet. Repeat.
- Cook for 2 ½ minutes until golden, then flip.
- Top with cheese then leave for 1 1/2 minutes. When the underside is golden, if the cheese is not yet melted, place lid on for 15 seconds (or tray or foil).
- Remove chicken from skillet onto plate. Cover loosely with foil while you start assembling the burgers.

- 1. Butterfly cut each chicken breast, or pound it gently but firmly with the side of a saucer as in this photo. You will be making the meat thinner and larger.
- 2. Put corn flake crumbs, flour and spices together in bowl. Mixing well.
- 3. Beat the eggs and water together in a separate bowl.
- 4. Coat the chicken with the corn flake mixture.
- 5. Dip coated chicken into the egg mixture.
- 6. Coat with the corn flake mixture again. Then put in Skillet with vegetable oil to fry.
- 7. Fry the chicken about 7 minutes on each side, until chicken is browned, cooked and juices are clear.

- Mix seasonings together. Lightly coat chicken breast halves in oil and sprinkle seasonings all over both sides of the chicken.

- Cut the chicken: Remove the chicken tenders from the chicken breast. And then slice the remaining chicken breast in two, lengthwise. This will give two thinner chicken pieces along with one chicken tender. You can also pound the chicken thinner with something heavy.
- Make the marinade: Whisk the egg. Mix all the marinade ingredients together in a large bowl and add your prepared chicken breasts to it. Marinate for about 1 hour, covered in the fridge.
- Prepare the bread crumbs: To make the panko bread crumbs, we mix all the dry ingredients together in a large dish.
- Make the orange honey mustard: Mix all ingredients together, taste and season accordingly.
- Prepare your add-ons: Cut your preferred vegetables (for example spinach, tomato, avocado, onion and pickled jalapeños) and make the garlic mayo. Mix mayonnaise with garlic powder, season with salt and pepper to taste. Toast burger buns when chicken is almost done.
- Heat the oil: Pour 3 cups of oil into a large pan, make sure it will not be more than 1/3 full. The oil is hot enough when a drop of water into the oil sizzles. This will be at a temperature around 350-375 F (175-190C). The temperature will drop once the chicken is in.
- Bread the chicken: When the chicken has marinated for 1 hour, let the excess marinade drip off the chicken before placing it in the panko bread crumb mixture. Cover it nicely with the dry mixture, preferably using tongs.
- Fry the chicken: Add breaded chicken to the hot oil. Because the temperature is supposed to drop, I do suggest filling the pan, although not overcrowding it. If you cook one piece at a time, the oil will be too hot, burning the panko bread crumbs. Depending a little on the size of your chicken and the temperature of the oil, the chicken will be done at 5-8 minutes. If the oil doesn't cover the chicken entirely, flip them over once mid-frying. Remove from heat when they're golden brown. Sprinkle with some salt and drain on a paper towel.
- Assemble the burger: Slice your warm bun, spread garlic mayo on the bottom and orange honey mustard on the top. Get some greens and tomatoes on the bottom, add the chicken burger, onion, pickled jalapeños and avocado. Put the burger top on and you are officially ready to dig in.

- Lay chicken breasts on a flat surface and cover with a sheet of cling film (pinch around the edges so no juices escape). Pound with a rolling pin or mallet until even thickness, but not so much they start to tear apart. You're looking for around 3/4" thickness. If the breasts are particularly long you can cut off the very end of the tail to make them more circular and burger shaped (keep in mind they will also shrink slightly when frying).

Place in your chicken breasts, use tongs to fully coat then tightly cover with cling film and marinate in the fridge. - In a large shallow bowl (or curved tray) combine 1.75cups/250g flour with 2 tsp paprika, 1 tsp oregano, baking powder & salt, 1/2 tsp onion powder, garlic powder & cayenne pepper and 1/4 tsp black pepper. One by one coat the breasts in the flour, making sure you completely coat each time. Really get in all the cracks and crevices of the chicken. Place to one side.
- In a large pot or deep pan heat up your oil to 180C/356F. In batches of 1-2 (depending on pot size), carefully place your chicken in the hot oil. The temp will likely drop, and that's fine, but make sure the temp stays at around 165C/300F as the chicken fries. Depending on the size and thickness of your breasts you're looking at around 4-5mins on one side, then flip and continue frying until golden. The internal temp of the chicken should reach 75C/165F. Carefully remove and rest on wire rack with paper towels underneath (don't place directly on paper towel or they'll lose crispiness). Bring oil temp back up to 180C/356F between each batch.
