Steps:
- Butterfly then cut each chicken breast into quarters (you'll end up with eight pieces in total). Remove any fat/gristle.
- Place in a bowl and cover with the buttermilk. Cover it and refrigerate for at least six hours (overnight works, or up to one day).
- Make the sauce by combining the sauce ingredients together (I just mix them with a spoon). Keep in the fridge until you're ready to use it. Can be made ahead a day or two if needed.
- Add the smoked paprika, onion powder, garlic powder, chipotle chili pepper, and salt and pepper (I am generous with both) to the flour and stir it in.
- Heat about 1/2" of peanut oil in a heavy pot on medium-high heat.
- To test if the oil is hot, I drop a little flour in and see if it sizzles (a thermometer should read between 350-375F). Add the chicken pieces in one at a time (take a piece of chicken out of the buttermilk, coat in flour, place in pan, repeat). Cook for about 5 minutes/side or until they're cooked through. Don't overcrowd the chicken. You'll probably have to do at least two batches. Best practices say the oil should be kept around 300-325F while cooking (the temperature will drop once you add the chicken in). I use tongs to turn the chicken.
- (Optional) If desired, you can toast the buns. Oven method: cut the buns in half and butter them then put them in a 350F oven for about 5 minutes or they're done to your liking. You could also butter them then place them in a separate skillet on medium heat until the inside of the buns are golden and toasted. You may need to soften the butter in the microwave to make the buttering process easier (if it's melted to oblivion, brush it on).
- Assemble sliders by adding the mayo, chicken, and pickles. Devour!

- Special equipment: 7-inch round waffle iron, 8 bamboo skewers, cast iron skillet For the brine: To a saucepan, add 2 cups water, the salt, sugar, red chile flakes, peppercorns, garlic thyme leaves and bay leaf. Bring to a simmer to dissolve the sugar and salt. Once boiling, remove from the heat and add the ice. Once the liquid is cool, place into a freezer bag, and add the chicken to the brine, making sure it is completely submerged. Refrigerate for 1 hour. For the waffle batter: Combine the flour, sugar, baking powder, salt and baking soda. In a separate bowl, beat together the buttermilk, butter and eggs. Make a well in the center of the dry ingredients and add the wet ingredients to the dry while stirring with a whisk. Mix until well combined and there are no lumps. Cover with plastic wrap. Pour the waffle batter into the waffle iron and cook according to the manufacturer's instructions. Repeat for the remaining waffle batter. For the mayo: Whisk together the honey, mayonnaise, Sriracha, garlic powder, onion powder and salt, and set in the refrigerator to allow flavors to come together. For the slaw: Mix mayonnaise, sour cream, mustard and vinegar together in a large bowl. Then add green cabbage, carrot, red cabbage, red onion and apple. Season with salt and pepper. Stir well so everything is coated evenly. Keep the slaw refrigerated until ready to use. For fried chicken: Combine the flour, garlic powder, onion powder, salt, Italian seasoning, paprika and black pepper. In a separate shallow dish, whisk together the eggs, buttermilk and hot sauce. Dredge each piece of chicken in the flour mixture, then into the egg, shake off excess, and then back into the flour mixture. Heat the canola oil in a cast-iron skillet over medium-high heat. Brown the chicken in the hot oil until golden and crispy, 3 to 4 minutes per side. Place the cooked chicken onto a rack on a sheet tray and keep warm while you finish cooking the rest of the chicken. Place the chicken into a warm oven to keep warm and crisp while you prepare the sliders. Spread the prepared mayonnaise on the bottom waffle and top with a couple of pieces of fried chicken to create a slider. Top with a pile of slaw. Finish with the second waffle piece and hold together with a bamboo skewer. Repeat for the remaining waffles and chicken. Cut into quarters and serve.
FRIED CHICKEN SANDWICHES WITH TANGY COLESLAW AND SPICY MAYO
Sometimes you just need a fried chicken sandwich and this one will not disappoint. The chicken is moist and tender from the yogurt marinade and gets a little punch of heat from a spicy mayo. Everything is cooled down by the tangy, crunchy coleslaw. There's no need to venture away from home to satisfy that chicken sandwich craving!

- For the tangy slaw: Whisk together the vinegar, sugar, celery salt and pepper in a small bowl until combined. Stir in the mayo until incorporated. Add the scallions and green and red cabbage and toss to coat. Set aside, or refrigerate for up to 4 hours in advance.
- For the spicy mayo: Whisk together the mayonnaise and hot sauce in a small bowl. Taste and add more hot sauce depending on how spicy you like it. Refrigerate in an airtight container for up to a week.
- For the fried chicken: Mix the yogurt, 1 teaspoon of the paprika, garlic and 1/2 teaspoon salt together in a large bowl. Add the chicken cutlets and coat evenly. Let the chicken sit in the marinade for about 15 minutes at room temperature or up to 2 hours refrigerated.
- Once the chicken has marinated, pour about 2 inches of oil in a deep 10-inch cast-iron skillet and place over medium-high until it registers 350 degrees F on a deep-fry thermometer. Line a sheet pan with paper towels.
- While the oil heats, whisk together the flour, onion powder, remaining 1/2 teaspoon paprika, 1/2 teaspoon salt and the black pepper in a small shallow dish. Remove the cutlets from the yogurt, allowing any excess yogurt to drip off, and dredge the cutlets in the flour mixture.
- Carefully add the dredged chicken to the hot oil and fry until the chicken is deeply golden brown on both sides and cooked through, 7 to 8 minutes, flipping the cutlet about halfway through the cooking time. Drain on the paper towels and immediately sprinkle the chicken with more salt to taste.
- Toast the burger buns until golden brown. Spread 1 tablespoon of the mayo over the top and bottom of each bun. Place a piece of fried chicken on each bottom bun, top that with slices of tomato and some slaw and cover with the top buns. Serve immediately.

- Add buttermilk, chipotle peppers, Tabasco sauce, Worcheshire sauce, salt and pepper to a heavy duty blender or food processor and process until smooth.
- Pour the marinade into a large bowl then add chicken making sure to completely submerge then cover and refrigerate for 5-6 hours.
- When ready to fry, add flour, cornstarch, salt, paprika, onion and garlic powder, Italian seasoning, black pepper and cayenne to a plastic bag and shake together until combined.
- Next, drizzle buttermilk into the flour mixture and use a fork to mix it in to create crumbs.
- Using tongs, remove one piece of chicken at a time and add to the flour bag. Coat thoroughly, shake off access then set on a parchment paper lined baking sheet. Repeat until all pieces are on the tray then add to the refrigerator for 20 minutes.
- Add vegetable oil to a cast iron skillet or dutch oven about ¾ inch deep and heat to 350 degrees.
- Remove chicken from the refrigerator and let it get back to room temperature for 10 minutes then add a few at a time to oil making sure you don't overcrowd the pan. Fry for 13-15 minutes turning chicken halfway. To make sure chicken is done, check for golden brown crunchy exterior and an internal temperature of 165 degrees.
- Remove and drain on paper towels. Add chicken to a preheated oven to stay warm while you complete the rest of the components.
- To make the waffles, preheat a waffle iron. If you want to hold the finished waffles until serving time, preheat an oven to 200°F.
- In a large bowl, whisk together all ingredients until just combined.
- Grease the grids of your waffle iron then spoon in batter according to the manufacturer's instructions then bake until crisp and golden brown. Separate the waffles into four sections/quarters based on the waffle grid. Each waffle will make two complete sliders (2 waffle quarters).
- Add completed waffles to a preheated oven just so they stay warm while you make the rest.
- Whisk together together butter, brown sugar, maple syrup, Tabasco sauce and cayenne pepper until well mixed. Chill in the refrigerator, for about 30 minutes. Form into a roll using parchment paper and serve over chicken and waffle sliders.
- Brush or spread maple butter over the top of chicken allowing it to melt down over it and glisten. Add maple butter to the bottom waffle as well allowing it to melt down.
- Next sandwich the chicken between two waffle quarters. Serve with extra Tabasco and Maple Syrup.

WAFFLE FRY SLIDERS

- For the fries: Bake the waffle fries according to the instructions on the package.
- For the slider patties: Add the ground beef to a bowl and mix together with the garlic powder, lemon pepper, seasoned salt, salt and pepper. Mix together well with your hands and form eight 2-ounce patties. Set the patties aside on a plate.
- Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the patties to the skillet and cook for 3 minutes. Flip the patties and allow them to cook for 30 to 45 seconds, then top each patty with a quarter slice of cheese. Cover the skillet and cook for another 3 minutes. (The lid will help the cheese melt over the patties.)
- Remove the patties to a plate.
- For the sliders: Top a waffle fry with a piece of lettuce, then top with 1 teaspoon ketchup and 1 teaspoon mayo. Add red onion and a patty on top. Top the patty with a Roma tomato slice and then a pickle slice. Place a waffle fry on top and secure with a toothpick. Repeat 7 more times and enjoy!

- Filet the chicken breasts in half, then cut into 2 inch squares and pound out to ¼ inch thick pieces. Place in a large freezer bag. In a bowl, mix the buttermilk and Cholula Original hot sauce and pour over the chicken. Refrigerate for at least 2 hours up to overnight.
- To make the waffles, preheat a regular waffle maker. Mix the batter and place ⅛ cup in the center of the iron. Cook for 3 minutes or according to your maker's instructions. Set on a cooling rack and repeat until you have about 24 mini waffles. Waffles can be made ahead, frozen and then toasted before serving.
- To fry the chicken, remove the chicken from the fridge and allow it to rest in the bag at room temperature for 30 minutes. Remove the chicken from the bag, and pour the reserved buttermilk mixture into a shallow bowl. Stir the flour, kosher salt and garlic powder until combined and pour half of the flour mixture into another gallon freezer bag. Dredge 4-5 chicken pieces in the reserved buttermilk mixture, shake off the excess, then place the pieces in the bag with the flour and shake until well coated. Repeat the process one more time. Place the coated chicken pieces on a wire cooling rack with a tray underneath and let the chicken rest for 15 minutes. Repeat with all of the chicken pieces.
