FRIED TULINGAN (MACKEREL)
In this Pinoy fish recipe, mackerel is first simmered in a tangy tamarind base and then fried. It is important that the fish is fresh. Instead of frying, you can also wrap the fish in banana leaves and grill it. Serve with mango relish.

Steps:
- Combine the mackerel, water, tamarind soup base, and fish sauce in a pot over medium heat. Cover and cook at a simmer for about 15 minutes. Flip the fish, cover again, and simmer another 15 minutes. Remove from heat and allow to sit, covered, for 1 hour.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Remove the fish from the pot and pat dry with paper towels to remove as much excess moisture as possible.
- Fry the fish in the hot oil until golden brown, 7 to 10 minutes. Serve hot.

- In a large bowl, empty can of mackerel, liquid and all. Add egg, flour and 1/4 cup cornmeal. Mix, adding a little bit more cornmeal, until you can easily make patties. Put about 1/2 inch of oil in a large skillet and heat. Place patties in hot oil and brown, flip and brown other side.
MACKEREL PATTIES
Steps:
- Dice onions. In a large bowl, using your hands, mix the first 7 ingredients. (Mix well). If mixture is too wet to form into patties, add extra cornmeal a little at a time until it gets to the right consistency.
- Form into patties about the size of your hands.
- Heat canola oil in frying pan on medium high. Add patties and fry until golden brown on first side, then flip over and fry until golden brown on opposite side. Drain on Paper towels and serve.
