Fried Calamari - deep fried calamari recipe Italian style. Serve with tomato sauce as dipping sauce, this is the best recipe ever, extra crispy, easy and delicious!

8-12 oz. (226 g-340 g) cleaned squid and tentacles
1 large egg, beaten
4 oz. (115 g) all-purpose flour
2 oz. (56 g) corn starch
1/8 teaspoon salt
3 dashes cayenne pepper
oil, for deep drying
bottled tomato sauce or pasta sauce, for dipping
chopped parsley, for garnishing

Steps:

  • Cut the tubes of cleaned squid into 1/2-inch ring.
  • Transfer the squid to a big bowl with a beaten egg. Stir to mix well.
  • In another big bowl, combine the all purpose flour, cornstarch, salt and cayenne pepper. Stir to mix well. Working in small batches, drop some squid into the flour mixture. Coat well and transfer the squid out to a strainer. Repeat until all squid are nicely coated with the flour mixture. Gently shake the strainer with squid to remove excess flour.
  • Heat up a skillet with 1-inch oil on high heat. When the oil is heated, deep fry the squid until they turn light brown in color. Remove the squid from oil and drain on paper towels.
  • Garnish the squid with parsley, serve warm with tomato sauce.

Living in New England we are spoiled to have some great fried seafood stands but they can be pricey so I thought about trying it on my own. This recipe is fantastic! And the dipping sauces really take it up a notch! Hope you love it as much as we do. Thanks Monica

2 c buttermilk
1 lb calamari rings
1 tsp srirachia sauce
2 c flour
1 tsp paprika
1 tsp cayenne pepper
salt and pepper to taste
3 eggs
canola oil for frying
FOR THE TOMATO BASED SAUCE
1 Tbsp olive oil
1 small onion chopped
1-2 cloves garlic, minced
1 Tbsp capers and a bit of the juice
1 can(s) diced tomatoes
few pinches red pepper flakes
2 anchovy fillets, or anchovy paste
handful italian parsley roughly chopped
1/4 c kalamata olives, pitted and chopped
1 tsp tomato paste
lemon
OLD BAY AIOLI SAUCE
1 c mayonnaise
1 lemon, juiced
1 Tbsp dijon mustard
1 Tbsp sriracha
1 Tbsp old bay seasoning
handful italian parsley chopped
salt and pepper to taste

Steps:

  • 1. in a bowl add the buttermilk, sriracha, and calamari and let soak for up to 4 hours in the fridge
  • 2. in a bowl combine the flour, salt, pepper, cayenne pepper, paprika and mix together.
  • 3. In another bowl beat the eggs
  • 4. get your deep fryer to 375 or a pan of oil
  • 5. remove the calamari from the buttermilk.
  • 6. dip the calamari in the egg and then into the flour mixture and shake off extra. Add the coated calamari to the oil and cook until golden brown. Remove and place on a paper towel or wire rack
  • 7. To make the tomato olive dip. add olive oil to a sauce pan and add the onions and garlic, red pepper flakes and cook for a few minutes.
  • 8. add the tomato paste, anchovies, olives, canned tomatoes and capers and let cook about 20 minutes. Taste and add salt and pepper to taste.
  • 9. add the parsley and some lemon juice to taste.
  • 10. For the old bay aioli dip Combine all ingredients in a bowl and serve Super easy! Super delicious!

My family loves this recipe as it beats anything they can order in a restaurant. It is light, crispy, not greasy and packed with suttle yet notable flavors.

1/4 lb calamari (tubes & tentacles)
2 Tbsp cornstarch
2 egg whites
1/2 tsp pepper
3/4 tsp salt
1 grated garlic clove
2-1/2 c panko bread crumbs
1/2 c canola oil
CALAMARI TOSS
1/4 tsp red pepper flakes
1 garlic clove (chop)
2 stalk(s) celery(inner yellow slice)
1/2 lemon(cut lengthwise into half moons)
DIPPING SAUCE
3/4 c mayonnaise
1 garlic (large, grate)
1 Tbsp italian parsley
1/2 tsp lemon juice, maybe more

Steps:

  • 1. Wash calamari and dry well with paper towels.
  • 2. Whisk egg whites, cornstarch, grated garlic, salt and pepper until foamy.
  • 3. Dip calamari into mixture, shake off excess and dip and coat with panko bread crumbs. Sit in frig for about 20 minutes.
  • 4. Heat oil to 350 degrees in small skillet or use deep fryer. Fry calamari until golden (about 1 minutes), drain on paper towels and sprinkle with a little more salt. Can keep warm in 180 degree oven on a rack with door ajar until ready to add to Toss.
  • 5. For Calamari Toss, saute pepper flakes and chopped garlic in a little oil for just a little bit(30 seconds). Don't burn garlic. Add sliced celery and saute about 1 minute. Add lemon (sliced moons) at end and saute for about 20 seconds and remove from heat. Toss with finished calamari.
  • 6. For dipping sauce - Combine mayo, grated garlic, Italian parsley and lemon juice. Place on a small bowl to the side of the calamari.
  • 7. Finish with a little lemon zest over the top - OPTIONAL.

This is the exact Carrabba's Italian Restaurant recipe from their cookbook. The fried calamari turns out perfect! Tender and crisp with a light, delicate coating. I have yet to find a better fried calamari recipe. We like to serve it with the ultimate dipping sauces, Marinara and Garlic Aioli sauce (both posted on my blog, both from Carrabba's cookbook). If you are looking for a yummy new appetizer and you love seafood, this recipe is for you!

1 LB Calamari (cleaned)
1/2 Cup All Purpose Flour
Vegetable Oil (for deep frying)
1/2 tsp Kosher Salt (or Sea Salt)
1/4 tsp Ground Black Pepper
Lemon Wedges (optional, for serving)
Marinara Sauce or Garlic Aioli Sauce (for dipping, optional, both recipes posted on my blog )

Steps:

  • Wash the Calamari (Squid). Preheat the oven to 200 degrees. Line 1 baking sheet with 2 layers of paper towels. Have a 2nd baking sheet lined with foil, nearby.
  • Pour enough oil to come 1 inch up the side of a large, heavy saucepan or skillet. Heat over high heat to 350 degrees (on a deep frying thermometer).
  • Cut the Calamari bodies (sacs/tubes) crosswise into 1/2 inch-wide rings. Cut each cluster of tentacles in halves or thirds. Season the Calamari with salt/pepper and mix.
  • Pour the flour into a bowl. Divide the calamari into 2 batches. Put the first batch of calamari into the bowl with flour and coat it with the flour, shaking off excess flour.
  • Add the coated calamari into the saucepan with the hot oil. Cook over high heat until the calamari are golden brown, about 2-4 minutes.
  • Using a slotted spoon transfer the calamari onto the baking sheet lined with paper towels to briefly drain.
  • Move the calamari to the second baking sheet lined with foil and place in the oven, to keep it warm and crisp. Repeat the same steps with the second batch of calamari. Add more flour to the bowl if there is not enough. I added a few extra spoons of flour.
  • Transfer the calamari to the serving plate. You can add lemon wedges to the plate, for decoration. Serve with Marinara Sauce and or Garlic Aioli Sauce for dipping, if desired. I served with both sauces because we like to dip our calamari into both sauces. Both Marinara and Garlic Aioli Sauce recipes are on my blog.

EASY THAI STYLE FRIED CALAMARI



Easy Thai Style Fried Calamari image

This simple Thai version of calamari is crisp and delicious-especially when dipped in Thai coconut dip. Perfect for parties or a weeknight treat.

2 large squid tubes (frozen or freshly prepared; OR 3 to 4 medium tubes. If frozen, thaw quickly in a bowl of cool water.)
1/2 cup semolina (a type of granular wheat flour available at health food or specialty food stores)
1/2 teaspoon salt
1/8 teaspoon cayenne pepper (or dried crushed chili)
1/8 teaspoon 5-spice powder
Pinch black pepper (or white)
1 cup canola oil (or other high-heat oil)
Optional: lettuce (or fresh coriander for serving)
Garnish: Thai sweet chili sauce (for serving, available in most supermarkets)

Steps:

  • Gather the ingredients.
  • Place semolina flour in a shallow bowl or spread over a plate. Stir in the salt and spices. Set aside.
  • Place squid tubes horizontally in front of you on a cutting board . Using a sharp knife and cutting toward you, make slices about 1/2-inch wide. This will create nice-size rings.
  • Open up the calamari rings and roll them one by one in the flour and salt mixture until they are covered. Place floured rings on a clean plate next to the stove.
  • Pour oil into a small- or medium-sized frying pan. The oil should be at least 1-inch deep.
  • Turn heat to high- or medium-high, until the oil begins to bubble or "move" from the bottom of the pan. To test if oil is hot enough: using a pair of tongs, dip one of the calamari rings into the oil. If it sizzles and begins to cook, the oil is ready.
  • Place as many rings into the oil as can comfortably fit at one time. Fry about 1 minute, then turn the rings over to cook on the other side.
  • Turn heat down to medium to prevent oil splattering. The calamari should turn a light golden brown. Avoid over-cooking, or squid will turn rubbery.
  • When rings are done frying, remove from oil and place on a clean kitchen towel or paper towel to drain.
  • Serve immediately while still hot. Serve with Thai sweet chili sauce.

Repeat with the remaining calamari, making sure the oil has gone back to 350°F before frying new batch. Once done, fry the basil leaves, if using, for 30 seconds or until the leaves have darkened. Garnish the calamari with the green onion slices and the fried basil leaves if using, and serve with the dipping sauce.
