A classic fried cake donut recipe that makes the most delicious old fashioned donuts ever! Light and crispy on the outside, tender, moist, and cakey on the inside.

4 ounces unsalted butter (softened but not melted)
5 ounces granulated sugar
2 large eggs (room temperature)
6 ounces buttermilk (room temperature)
2 teaspoons vanilla extract
15 ounces All-Purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon nutmeg
1/2 teaspoon salt
32 ounces lard or oil (for frying (4 cups))
5 ounces powdered sugar
2 Tablespoons milk (or water)
4 ounces chocolate chips
2 Tablespoons butter
1 Tablespoon corn syrup (or glucose/honey)
2 Tablespoons heavy cream
1 cup granulated sugar
2 Tablespoons cinnamon

Steps:

  • In the bowl of your stand mixer with the paddle or the whisk attachment, cream the softened butter and the sugar on medium high speed until the mixture is light in color and fluffy.
  • While mixing on low, add in one egg, let it mix in and then add in the second egg and mix on medium speed until everything is smooth and combined
  • Add in the buttermilk and the vanilla and mix until combined
  • While mixing on low, add in the flour, salt, baking powder, baking soda, and nutmeg and mix until the dough is combined. Do not over-mix. The dough will be sticky.
  • Lightly flour your work surface and transfer the sticky dough to the floured surface.
  • Press the dough down lightly until its about 1" thick.
  • Fold the dough over onto itself 3-4 times until the dough is smooth.
  • Flatten the dough down to about 1/2" or use a rolling pin. Let the dough rest for 5-10 minutes while your oil is heating up.
  • Turn on your FryDaddy or begin heating your oil to 360ºF-375ºF (182ºC -190ºC). Set up a draining station for the donuts by placing a cooling rack over a sheet pan to catch the oil.
  • Use a donut cutter or ring cutter to cut out the donuts. You can press together the scraps and roll them out again to get as many donuts as you can. Just keep in mind the more you work the dough, the tougher the donuts will get.
  • Add the donut to the hot oil using your slotted spoon to lower it gently. Fry the donut for 2 minutes then flip it over and fry it for 1 more minute.
  • Fry your donut holes for about 1 minute, stirring and pushing them down with your spoon until golden brown on the outsides.
  • Transfer the dough to a cooling rack over a sheet pan to let the oil drain away from the donut
  • Once your donuts are cooked you can roll them in powdered sugar, cinnamon sugar, glaze them with donut glaze or chocolate glaze!
  • Store donuts in a paper bag at room temperature for up to two days. They are best eaten fresh! Do not refrigerate.
  • Sift the powdered sugar into a bowl and add the milk (or water). Whisk together to combine, add more powdered sugar to make it thicker or more milk to make it thinner.
  • In a medium sized bowl, add the heavy cream, butter and corn syrup to the chocolate chips. Microwave for 30 seconds and stir together until the chocolate is melted. Microwave for another 15 seconds if needed.

1/2 cup (1 stick) unsalted butter, room temperature, plus more for pans
2 1/2 cups unbleached all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/8 teaspoon freshly grated nutmeg
3/4 teaspoon kosher salt
1/2 cup granulated sugar
1/4 cup light brown sugar
2 eggs, room temperature
1 teaspoon pure vanilla extract
1 cup whole milk, room temperature

Steps:

  • Preheat oven to 425 degrees. Lightly brush two standard donut pans with butter. In a medium bowl, whisk flour, baking powder, baking soda, nutmeg, and salt; set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with a hand mixer, beat butter and sugars on high speed until light and fluffy, about 3 minutes. Reduce mixer speed to medium; add eggs and vanilla, beating until combined, scraping down the sides of the bowl as needed. Reduce speed to low. Add flour mixture in two batches, alternating with milk, and beat just until combined.
  • Transfer batter to a piping bag or a resealable plastic bag, and snip a 1/2-inch hole in one corner of bag. Divide mixture evenly between prepared pans. Bang pans several times on counter to release air bubbles.
  • Bake until tops of donuts spring back when lightly pressed, 12 to 14 minutes. Let cool 10 minutes, then transfer to a wire rack to cool. To decorate, see Variations below.

Steps:

  • In deep fryer or 3-quart saucepan, heat 3 to 4 inches oil to 375°F.
  • In large bowl, beat 1 1/2 cups of the flour and the remaining ingredients except Rainbow Doughnut Icing with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 2 minutes, scraping bowl occasionally. Stir in remaining flour.
  • On generously floured surface, roll dough lightly to coat. Gently roll to 3/8-inch thickness. Cut dough with floured 2 1/2-inch doughnut cutter.
  • Fry doughnuts in oil, 2 to 3 at a time, turning as they rise to the surface. Fry 2 to 3 minutes or until golden brown on both sides. Remove from oil with slotted spoon; drain on paper towels. Cool slightly and frost with doughnut icing.

There's nothing better than homemade doughnuts! I like cake donuts better than yeast donuts. This is how I make my favorite doughnuts for my family on the weekends. Real simple ingredients you already have on hand. The hardest part is letting the dough chill for an hour before frying them. You can make the dough the night before and have them ready to go in the morning, that's what I do ;) either douse them in cinnamon sugar or icing sugar or .....(you get the idea) I use a dough hook on my Stand Mixer which makes this real easy to whip up. NOTE: Prep time does not include chill time.

1 cup sugar
4 teaspoons baking powder
1 1/2 teaspoons salt
1/2 teaspoon nutmeg
2 eggs
1/4 cup unsalted butter, melted
1 cup milk
4 cups flour (plus a little more if dough is sticky)
oil (for frying)

Steps:

  • In a large bowl mix the sugar, baking powder, salt and nutmeg.
  • Add eggs, milk and melted butter. Beat well.
  • Add 3 cups of the flour, beating until blended. Add one more cup of flour and beat well. The dough should be soft and sticky but firm enough to handle. If you feel its necessary, add up to 1/2 cup more flour.
  • Cover with plastic wrap and chill for *at* *least* one hour.
  • Remove your dough from the fridge and begin heating about 1" of oil to 360F in a large metal skillet.
  • Working half the dough at a time, roll it out on a floured surface to about 1/2" thickness. Cut out circles using a doughnut cutter or large biscuit or cookie cutter. For the center, I actually use the cap off my martini shaker ;) to cut the holes.
  • Gently drop the doughnuts in batches into the hot oil. Flip them over as they puff and turn them a couple more times as they cook. They will take about 2-3 minutes in total and will be lovely and golden brown all over.
  • Remove from the oil and set them on paper towels or brown paper bag (that removes all the fat, you know).
  • Douse them with sugar and cinnamon, icing, chocolate dipped with sprinkles or whatever you like.

Grandma Dixon used to make these for the grankids as a special breakfast treat. Served beside her fried fish and eggs it was cholesterol heaven. Still nothing better to use those left over mashed potatoes. Psst, I think she made extra potatoes on purpose! Eat plain, glazeed or cover in cinnamon powdered sugar and enjoy!

1 1/2 c mashed potatoes
3 eggs
3/4 c milk
1 tsp baking powder
1 tsp salt

VARIATION
2 c grated apples ( i use a hand cheese grater )

Steps:

  • 1. In mixer beat eggs, sugar and potatoes until light and fluffy. Add oil and dry ingredients and mix well. Roll out on floured surface until desired thickness. Cut into doughnut shapes, reserving the holes. Fry in deep fat fryer at 350 degrees. Flip over when first side is golden brown and cook until the whole doughnut is golden brown. Drain on paper towel. Eat plain, with glaze or roll in cinnamon and sugar. Excellent eaten warm but will store in an airtight container up to one week. Note: Sometimes your mashed potatoes may be dry or other times extremely wet. Adjust the flour added accordingly. I just made a batch this morning and it took 3 cups of flour to get the doughnuts to the roll out consistency.
  • 2. Fold in 2 c of grated apples to make a darn good addition to these doughnuts. These are moist to start with inside but when you add the apples they are even moister. Yum!

Steps:

  • In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg. In a medium bowl, lightly beat egg. Whisk in brown sugar, milk, and yogurt, until smooth. Add melted butter and vanilla. Pour wet ingredients into dry ingredients and stir until just combined. Don't over mix.
  • Pipe or spoon batter in 3-inch silicone donut mold.
  • Preheat air fryer at 400˚F/204˚C for 2-3 minutes. Place donut mold in air fryer and bake at 330˚F/166˚C for 6 minutes, or until internal temperature of donuts reads above 160˚F/71˚C. Remove from air fryer and let cool for 2 minutes in mold, then carefully remove donuts from the mold.

3 cups all-purpose flour (, spooned and leveled)
1 tablespoon baking powder
1/4 teaspoon baking soda
1 teaspoon nutmeg
1/2 teaspoon salt
1 large egg
1 large egg yolk
3/4 cup sugar (plus 2 tablespoons)
1 teaspoon vanilla
3 tablespoons unsalted butter (, cooled to room temperature)
2/3 cups buttermilk (, room temperature)
Oil for frying

Steps:

  • In a large bowl whisk together the flour, baking powder, baking soda, nutmeg and salt. Set aside
  • In a separate large bowl using a stand or hand-held electric mixer beat together the egg, egg yolk and sugar on medium speed. Once combined, turn off the mixer and stir in the vanilla and melted butter.
  • Using a large rubber spatula or wooden spoon fold in half the flour mixture, followed by the buttermilk. Mix briefly with the electric mixer on low to fully combine. Repeat with the remaining flour mixture & buttermilk until everything is combined. The dough will be thick.
  • Flour a flat surface, and roll out the dough using a floured rolling pin until the dough is approximately 1/4 to 1/2 inch thick. Cut into doughnuts using a doughnut cutter. Form a ball with the left over pieces of dough, roll-out again and cut doughnuts from the remaining batter.
  • Clip a deep fry/candy thermometer to the inside of a heavy-bottom Dutch oven pot with high sides. Pour oil into the bottom of the saucepan so its about 2-inches deep. Heat the oil on medium-high heat until a temperature of 375F degrees is reached. Carefully place 2 or 3 doughnuts into the saucepan. Fry the doughnuts for about 60 seconds on the first side. Then flip using a heat proof tool - such as the end of a wooden spoon or tongs, and fry on the second side for about 60 seconds. Remove from the hot oil using a large slotted spoon, the end of a wooden spoon or tongs and place on a flat surface lined with clean paper towels. Allow the oil to return to 375F before continuing with process with the rest of the doughnuts. Doughnut holes will take about half the time, or about 30 seconds per side. After frying the first set of doughnuts and allowing them to cool for a few minutes - break the doughnut open to ensure it's cooked throughout and adjust your frying time accordingly.

1 tablespoon baking powder
1/2 teaspoon fine salt
1/2 teaspoon freshly grated nutmeg
3 tablespoons (43 grams) unsalted butter, (melted and cooled to lukewarm)
1/2 cup buttermilk, (at room temperature)
2 large eggs, (at room temperature)
3/4 cup (150 grams) granulated white sugar
1 1/2 teaspoons pure vanilla extract
Vegetable, canola, refined coconut oil, vegetable shortening, or peanut oil, for frying
1 stick (113 grams) unsalted butter
1/4 cup whole milk
1 tablespoon light corn syrup*
2 teaspoons vanilla extract
4 ounces semisweet chocolate, (chopped)
2 cups (250 grams) powdered sugar, (sifted)
Rainbow sprinkles, (if desired)

Steps:

  • In a large bowl, mix together the flour, baking powder, salt, and nutmeg. Combine butter and buttermilk in a small bowl or measuring cup, and set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the eggs and sugar until thick and pale, about 5 minutes. Beat in the vanilla extract. On low speed, alternately add the flour mixture with the melted butter and buttermilk, starting and ending with the flour. The dough will be soft. Cover tightly with plastic wrap and let sit at room temperature for 30 minutes, or until the dough is firm enough to handle.
  • MAKE AHEAD: At this point you can also refrigerate the covered dough for up to 48 hours. Let come to room temperature before proceeding with recipe as written.
  • Turn the dough out onto a floured work surface. Roll the dough out into just over 1/4-inch thickness and cut with a doughnut cutter or with a large round cutter and a small cutter for the holes. Brush off any excess flour and place the doughnut shapes on a lightly floured parchment lined baking sheet. Cover and let the doughnuts sit at room temperature while you heat the oil.
  • Heat at least 1 1/2 inches of oil in a large and heavy pan to 350°F. Place three to four doughnuts in the oil at a time and fry until golden brown, about 1 minute or less per side (30 seconds for the holes). Do not overcook the doughnuts. Drain on a paper towel-lined plate.
  • In a medium saucepan over medium heat, combine the butter, milk, corn syrup, and vanilla and heat until the butter melts. Decrease the heat to low and add the chocolate, whisking until melted. Turn off the heat and add the powdered sugar, whisking until smooth.
  • Immediately dip the doughnuts into the glaze. If the glaze begins to set, return the saucepan to low heat and stir until liquid again. Garnish with sprinkles, if using. Let the glaze set on the doughnuts for 30 minutes before serving.
  • Doughnuts are best made the day they're fried. However, you can store the glazed doughnuts in an airtight container for up to 2 days.

1 teaspoon freshly grated nutmeg
3/4 teaspoon salt
2 tablespoons unsalted butter, at room temperature
3/4 cup sugar
1 large egg plus 1 egg yolk
1/2 cup whole milk
1 teaspoon vanilla extract
Vegetable shortening, for frying

Steps:

  • Line a baking sheet with parchment paper. Use a 3-inch-round cookie cutter or glass to trace 12 circles on the parchment, leaving space between each. Flip the parchment over and lightly coat with cooking spray. Fit a pastry bag with a 1/2-inch round tip or snip a 1/2-inch hole in one corner of a large resealable plastic bag.
  • Sift the flour, baking powder, nutmeg and salt into a medium bowl. Beat the butter and sugar in a large bowl with a mixer on medium speed until well combined, about 2 minutes. Beat in the whole egg and yolk until incorporated and the mixture turns pale yellow, about 3 minutes. Beat in the milk and vanilla until smooth, scraping down the bowl as needed. Reduce the mixer speed to low; gradually beat in the flour mixture until just incorporated (do not overmix). Transfer the batter to the prepared pastry bag.
  • Using the circles as a guide, pipe the batter into 3-inch rings. (To make doughnut holes with the remaining batter, pipe 1-inch rounds onto the parchment.) Refrigerate while you heat the shortening, or cover with plastic wrap and refrigerate overnight.
  • Heat about 6 cups shortening in a large pot over medium-high heat until a deep-fry thermometer registers 340 degrees F. (You want to have about 2 inches of liquid once the shortening melts.) Use scissors to cut the parchment around each doughnut, leaving a 1-inch border. Carefully invert 2 doughnuts into the shortening and peel off the parchment with tongs. Fry until golden brown, 1 minute 30 seconds per side. (Fry the doughnut holes 30 seconds per side.) Remove with a slotted spoon and drain on paper towels. 2 ½ cups all-purpose flour
½ cup white sugar
1 tablespoon baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 cup milk
1 egg, beaten
¼ cup butter, melted and cooled
2 teaspoons vanilla extract
2 quarts oil for deep frying
½ teaspoon ground cinnamon
½ cup white sugar

Steps:

  • In a large bowl, stir together the flour, 1/2 cup sugar, baking powder, salt, 1 teaspoon of cinnamon and nutmeg. Make a well in the center and pour in the milk, egg, butter, and vanilla. Mix until well blended. Cover and refrigerate for 1 hour.
  • Heat oil in a deep heavy skillet or deep-fryer to 370 degrees F (185 degrees C). On a floured board, roll chilled dough out to 1/2 inch thickness. Use a 3 inch round cutter to cut out doughnuts. Use a smaller cutter to cut holes from center. If you do not have a small cutter, use the mouth of a bottle.
  • Fry doughnuts in hot oil until golden brown, turning once. Remove from oil to drain on paper plates. Combine the remaining 1/2 teaspoon cinnamon and 1/2 cup sugar in a large resealable bag. Place a few warm donuts into the bag at a time, seal and shake to coat.

For the Doughnuts
2 1/4 cups flour (plus more for rolling and cutting)
1 1/2 teaspoons baking powder
1 teaspoon fine sea salt
3/4 teaspoon ground nutmeg
1/2 cup sugar
2 tablespoons lard (or shortening or butter)
2 egg yolks
2/3 cup sour cream (or crème fraîche )
Oil (canola, vegetable, or lard; for frying)
For the Glaze
3 1/2 cup powdered sugar
2 teaspoons light corn syrup
1/4 teaspoon fine sea salt
1/2 teaspoon vanilla extract
1/2 cup water (hot)

Steps:

  • Gather the ingredients.
  • In a medium bowl, combine flour, baking powder, salt, and nutmeg. Set aside.
  • Mix sugar and shortening in a standing mixer or with a hand-held mixer until sandy-about 1 minute.
  • Add the egg yolks and mix until lighter and thicker-about 1 minute.
  • Mix in sour cream.
  • Stir in flour mixture, being sure to combine dough thoroughly.
  • Cover dough and chill for at least 45 minutes and up to overnight.
  • Heat a large, heavy pot with at least 2 inches of oil in it to 325 F.
  • While oil heats, roll out dough on a well-floured work surface. Roll out to an even 1/2-inch thick. Use a doughnut cutter or a 3-inch circle and a 1/2-inch circle cutter and cut out as many doughnuts (and doughnut holes) as fit.
  • Gently knead the remaining dough back into a mass.
  • Re-roll to 1/2-inch thick and cut remaining doughnuts.
  • Dust off any excess flour from the doughnuts and gently slide a few into the oil. Fry only as many as will fit in the pot without touching.
  • Once the doughnuts float to the top of the oil, fry for 15 seconds.
  • Gently flip them over and fry until golden brown and cracked-about 90 seconds.
  • Flip back over and finish frying until golden and cracked on the second side-about 75 more seconds.
  • Transfer cooked doughnuts to a cooling rack (you can set it over a tray or layers of paper towels to catch the grease).
  • Repeat with remaining doughnuts.
  • Gather the ingredients.
  • Whisk the powdered sugar, corn syrup, salt, vanilla, and 1/2 cup hot water in a medium bowl until smooth.
  • Dip doughnuts in the warm glaze while they are also still warm.
  • Let sit to cool and set up for 10 to 15 minutes before serving.

Well, after much testing, we cracked the code for creating a tender doughnut that is not deep fried - it's all about using a combination of all-purpose and cake flour. This recipe results in a tender doughnut that is lighter than air. Dusted in cinnamon sugar, these become simply irresistible!

2 1/4 teaspoons active dry yeast
3/4 cup whole milk, warmed (110 degrees F)
1 large egg
2 tablespoons canola oil
1/2 teaspoon pure vanilla extract
4 tablespoons unsalted butter, melted, plus more for the bowl
2 1/4 cups all-purpose flour, plus more for dusting
1 cup cake flour (not self-rising)
1/2 cup sugar
1/2 teaspoon kosher salt
2 tablespoons ground cinnamon

Steps:

  • Sprinkle the yeast over the warm milk in a liquid measuring cup. Let stand until foamy on top, about 10 minutes.
  • Beat the egg and oil using a stand mixer fitted with the paddle attachment on medium speed until combined. Add the vanilla, 2 tablespoons of the melted butter, and the yeast mixture. Mix on low speed until combined.
  • Whisk the all-purpose flour, cake flour, 1/4 cup of the sugar, and the salt in a medium bowl. Add to the stand mixer in two additions, mixing on low speed after each addition until combined. Continue beating on medium speed, scraping down the sides of the bowl as needed, until the dough is no longer sticky to the touch, about 1 minute.
  • Turn the dough out onto a lightly floured surface. Knead into a smooth ball. Brush a large bowl with melted butter. Add the dough and cover with a clean kitchen cloth. Let rise until doubled in size, about 2 hours.
  • Turn the dough out onto a lightly floured surface. Roll out to 1/2 inch thick. Cut out 8 doughnuts with a doughnut cutter (or use a wide-mouth Mason jar to create the outer edge and the wide end of a metal pastry tip or a shot glass for the inner edge). Reserve the smaller rounds for making doughnut holes. Cover with the clean cloth and let rise for 30 minutes more.
  • Place half of the doughnuts in a 6-quart air fryer and cook at 350 degrees F until golden brown all over, 5 to 6 minutes. Remove to a cooling rack and repeat with the remaining doughnuts and doughnut holes.
  • Brush the doughnuts on all sides with the remaining 2 tablespoons melted butter. Combine the remaining 1/4 cup sugar with the cinnamon in a shallow bowl. Place the doughnuts into the cinnamon sugar and sprinkle to coat on all sides. Serve warm or at room temperature.
