SOUTHERN FRIED CABBAGE WITH SAUSAGE
This is a family favorite cabbage recipe. The cabbage is cooked down with tomatoes, seasonings and smoked sausage for a hearty and delicious meal-in-itself. Serve with cornbread.

Steps:
- Chop/slice the sausage, cabbage, and onion.
- In a large non-stick skillet, pre-cook the sliced sausage about 3 minutes to render some of the fat out. Remove sausage from skillet and drain on paper towels if needed. Set aside. Wipe the skillet clean.
- In the same skillet, melt the butter. Add cabbage and onion and cook and stir on medium-high for about 5 minutes, until cabbage starts to wilt.
- Add remaining ingredients, and the sausage.
- Cover the skillet and cook for about 10 minutes.
- Uncover, and finish cooking until cabbage is desired tenderness and most of liquid has been reduced.
FRIED CABBAGE WITH SAUSAGE
This fried cabbage with sausage is a quick and easy one dish meal. It's a nice recipe to make when you don't have much time to cook.

Steps:
- 1. Cook sausage in large skillet until hot. Remove from pan and set aside.
- 2. Melt butter in the same large skillet. Add cabbage, onion, and green pepper. Cook on medium high for about 5 minutes stirring to keep it from sticking to the pan,
- 3. Add tomatoes, salt, pepper and cooked sausage, cover and simmer for 20 - 25 minutes.
FRIED CABBAGE WITH SAUSAGE
This fried cabbage recipe comes together quickly and makes a great lunch! Be sure to brown the sausage nicely for extra flavor. The lowest carb smoked sausage I've found is Hillshire Farms Naturals, but any variety you love will work. Macros are calculated based on 1 carb per 2 ounces of smoked sausage. Steps:
- Slice the smoked sausage into thin rounds.
- Heat 1 tablespoon olive oil in a dutch oven or large, deep skillet over medium heat. Add the sausage to the skillet and cook, stirring often, until sausage is browned on both sides, about 4 minutes.
- Add the onion and garlic to the skillet and cook 3 more minutes to soften onions.
- Add the remaining tablespoon of oil to the skillet along with the cabbage and sprinkle with salt and pepper.
- Cook the cabbage, stirring constantly, until it becomes tender, about 10 minutes.
- Serve immediately.
