EGG IN A HOLE
A delicious runny yolk egg cooked in the center of a piece of toast and eaten with a fork is a great way to enjoy an egg in a slightly different way. My kids feel fancy when eating these.

Steps:
- Melt the bacon grease in a non-stick pan over low heat.
- Cut a 1 1/2 to 2-inch hole from the center of the bread slice; lay in the hot skillet. When the side facing down is lightly toasted, about 2 minutes, flip and crack the egg into the hole; season with salt and pepper. Continue to cook until the egg is cooked and mostly firm. Flip again and cook 1 minute more to assure doneness on both sides. Serve immediately.

Steps:
- With a biscuit cutter or the rim of a glass, press a hole in the center of the slice of bread.
- Heat a skillet over medium-low heat and melt in the butter. When the butter is all spread out, place the slice of bread in the skillet and crack the egg straight into the center of the hole.
- Cook until the egg sets a bit on the bottom, 30 to 45 seconds. Sprinkle the egg with salt and pepper. After about a minute, flip it over with a spatula and salt and pepper the other side.
- Move the toast around in the skillet, soaking up all of the glorious butter. Let it cook until the yolk feels soft. Here's the key: golden brown toast, white (not browned/burned) whites, soft unbroken yolk. Perfect.

FRIED BREAD AND EGGS
We eat this at dinner, but it can be a breakfast item, too. We never had a name for it, so we just call it fried bread and eggs. It sounds strange to soak the bread in water, but it doesn't come out right if you don't.

Steps:
- Dissolve the yeast and 1 Tablespoon sugar in warm water. Let stand about 10 minutes or until very bubbly and frothy.
- Add egg, milk and sugar. Whip until foamy. Add flour, salt and baking powder and mix to a thick dough. The dough should be soft and stick a little bit to your finger. Do not over knead. Cover and let rise for 30 minutes in a warm place.
- Roll dough out on a floured surface until it's 1/4 inch thick. Divide the dough into 12-16 equal sections by pinching off golf-ball sized balls of dough. Then roll out the dough balls into roughly 4-5-inch thin circles on a lightly floured surface. Keep them covered with plastic wrap while you prepare to fry them. Poke a small hole in the center with a fork.
- Heat vegetable oil (about 1 1/2" deep) in a large skillet until it reaches about 400°F. Place the dough in the oil, and then cook until golden brown. Then flip and cook the other side. Transfer to a paper towel lined plate.

3 WAYS TO COOK FRIED BREAD - WIKIHOW

Steps:
- Cook the fried meal that accompanies the bread (optional). Fried bread is almost always eaten with one or more other fried foods, as part of an English breakfast. This often includes eggs, English bacon, sausage, sliced tomatoes, mushrooms, and baked beans. Fry them all in the same pan before you start your bread. If cooking all of the above, start the sausages first, the mushrooms a couple minutes later, then the other ingredients a few minutes later. Finish with the fried eggs.
- Add more fat or oil (optional). Depending on how much meat and butter you used in the fry-up, you might already have enough fat in the pan. But let's be honest: caloric introspection has no place when frying bread. Add a small knob of butter, a splash of flavorful vegetable oil or, more traditionally, bacon drippings or lard.
- Heat the oil. Turn the stove on medium-high until the oil shimmers and gives off heat. A hot pan will keep the bread crisp, instead of weighed down by soggy grease.
- Add sliced bread to the pan. Slightly stale white bread is perfect, as the dry slice will soak up the flavorful oil more quickly. Save that fresh loaf of whole grain for the people who want toast instead. Slice the bread into triangles if you have a small pan.
- Spice it up (optional). A small sprinkle of salt and a quick turn of the pepper mill will add some flavor, but this isn't mandatory. Cayenne pepper is another option for people who enjoy spice with their breakfast.
- Cook for a few seconds or until golden brown. If the pan is hot and oily enough, you'll only need a few seconds on each side to make the bread crisp, golden brown, and full of the flavors of the fried meal. If your pan was too cold and not sizzling, you may need to fry the bread for 15-30 seconds, but pull it out before it gets too soggy.
NATIVE AMERICAN FRY BREAD
Steps:
- Gather the ingredients.
- In a deep, 10-inch cast-iron skillet or heavy saucepan, heat about 1 inch of oil to 350 F. If you don't have a deep-fry thermometer to attach to the pan, dip the handle end of a wooden spoon in the oil. The oil should bubble around it fairly steadily when it's ready. The popcorn method is another option: Place a kernel of popcorn in the oil, and it will pop when the oil reaches 350 to 360 F.
- Meanwhile, combine the flour, baking powder, and salt in a bowl. Mix well to blend.
- Add the milk and stir until the dough holds together.
- Knead 3 or 4 times on a floured surface.
- Divide the dough into 4 uniform pieces and shape each into a ball.
- Using a lightly floured rolling pin, roll each ball of dough into a circle that's about 1/4- to 1/2-inch thick. Make a depression in the center of each round of dough (it will puff up while frying).
- Carefully slide 1 or 2 pieces of dough into the hot oil. Fry for about 1 to 2 minutes on each side, or until lightly browned.
- Remove the fried dough to paper towels to drain.

- Heat a large skillet over medium-high heat until hot, then add the olive oil, bread, salt, and pepper flakes, if using. Reduce the heat to medium and stir occasionally until the bread is lightly toasted. Transfer to a plate.
- Return the skillet to medium heat. Carefully break the eggs into the skillet and cook them to your liking, adding more oil if needed. (The author prefers his eggs with a runny yolk, but if you like yours more like over easy, just cover the skillet toward the end of cooking or run the skillet beneath the broiler for a few seconds. If you’re using a skillet that’s smaller than 12 inches in diameter, you’ll probably need to fry the eggs in a couple batches.) Divvy the eggs among serving plates. Scatter the toasted bread crumbs over the eggs.
- Return the skillet to medium heat, add the vinegar, and swirl for just a few seconds to warm it. Dribble the vinegar over the eggs and then sprinkle with salt and sumac or pepper to taste. Serve at once.
