This is a fried bologna sandwich that I had often growing up. I see so many of my favorite sandwiches on here, but I didn't see this one.

Steps:
- Put oil in a frying pan and heat to med. high.
- Put slit in bologna from middle to all the way through the end.
- Put bologna in heated oil.
- Brown both sides.
- Add cheese to top while last side is browning.
- Spread mustard on both sides of bread.
- Add bologna between slices and gobble it up!

Steps:
- Heat oil in a medium skillet over medium heat, and sauté the onions until soft and begin to brown, about 8 to 10 minutes.
- Remove the onions from the pan and fry the mortadella 30 seconds to 1 minute per side or until lightly browned.
- Assemble the sandwich by adding the cheese followed by the onions and topped with the mortadella. Spread dressing on top half of the roll or sliced bread.

Don't know if it is a Southern thing or not but I grew up on these! I sometimes indulge in one of these late at night or as a late breakfast! Don't stick your nose up until you try them. LOL!

- Melt the butter in a frying pan and cut several slits in the edges of the slices to keep them from curling. Fry to your liking (some like them crisp: others just like it warmed). Melt Cheese on top if desired. Put between hamburger buns, spread with mustard, and enjoy!

FRIED BOLOGNA AND EGG SANDWICH
This fried bologna and egg sandwich, topped with sizzled tomatoes and melted cheese is ready in 15 minutes and is the perfect recipe for a lazy weekend brunch.

- Preheat broiler on high.
- Cut a rectangle out of the middle of the bread, approximately 1 inch by 2 inches.
- In a large skillet, melt 1/2 tbsp. butter on medium heat, swirling the butter around to cover the surface of the pan.
- Once butter is sizzling, add the bread to the pan. Crack the egg into the hole in the bread.
- Cook for approximately 2 minutes. If you prefer your egg less runny, add 1 - 2 additional minutes to the cooking time, but be sure to peek under the bread during cooking and if it's getting too brown, turn heat down.
- Using a spatula, flip the bread over, making sure the bread lands on the side of the pan rather than the middle.
- Add the remaining 1/2 tbsp. butter to the empty space in the pan. Add bologna and tomato slices to the pan. Cook bread, bologna and tomato for 2 minutes. Flip bologna and tomato during cooking time to ensure even browning. Turn down heat if they are browning too fast.
- Remove bread to an oven-safe tray. Add tomato slices on top of the bread, then pile on the bologna. Top with cheese slice(s). Broil for 2 - 3 minutes or until cheese is bubbly and slightly brown. Watch carefully during broiling to avoid burning.
- Remove from tray onto a serving plate. Top with freshly ground black pepper and serve immediately.
FRIED BOLOGNA SANDWICH

- Spread one slice of bread with mayonnaise and the other slice with yellow mustard.
- Heat a medium skillet or griddle pan over medium-high heat. Make a 1-inch X in the center of each piece of bologna to keep it from curling up in the skillet. Wipe the skillet with a stick of butter until lightly greased. Add the bologna and fry a couple of minutes on each side until browned. Stack up the bologna in the skillet and top with the cheese. Cover with a large inverted bowl and heat until melted.
- Transfer the bologna to one of the slices of bread. Top with the chow chow, potato chips and lettuce. Top with the other slice of bread and give it a little push to crush the potato chips down a bit. Enjoy immediately.
CARL JOHN'S FRIED BOLOGNA SANDWICH
Steps:
- In a cast-iron skillet set over medium-high heat, melt the butter and then add the bologna. Fry until the bologna turns dark golden brown and then flip and fry the other side, about 2 minutes per side. Top each slice of bologna with 2 slices of cheese and let melt.
- Assemble the sandwiches by spreading mayonnaise on 4 slices of the bread and mustard on the remaining 4 slices. Place a slice of cheese-covered fried bologna on a slice of bread topped with mayonnaise, then layer on a piece lettuce and tomato. Top with a slice of bread topped with mustard. Repeat with the remaining slices of fried bologna. Slice each sandwich in half and serve.

- Place the bologna halves in a skillet on Medium to Medium High heat and cook till it starts to turn brown on the edges. Remove the bologna from pan when done. Place on a paper towel.
- Butter your bread on one side while the bologna is cooking. I used sourdough for me and whole grain white for my daughter.
- Place the bread butter side down in the skillet. Cook on medium - medium high heat. Add Mayo or Miracle Whip to the side up. Place one slice of cheese on bread. Place your fried bologna on top of the cheese. Use as many halves as you want. I usually go with 3-4.
