FRIED BOLOGNA AND EGG SANDWICH
This fried bologna and egg sandwich, topped with sizzled tomatoes and melted cheese is ready in 15 minutes and is the perfect recipe for a lazy weekend brunch.

- Preheat broiler on high.
- Cut a rectangle out of the middle of the bread, approximately 1 inch by 2 inches.
- In a large skillet, melt 1/2 tbsp. butter on medium heat, swirling the butter around to cover the surface of the pan.
- Once butter is sizzling, add the bread to the pan. Crack the egg into the hole in the bread.
- Cook for approximately 2 minutes. If you prefer your egg less runny, add 1 - 2 additional minutes to the cooking time, but be sure to peek under the bread during cooking and if it's getting too brown, turn heat down.
- Using a spatula, flip the bread over, making sure the bread lands on the side of the pan rather than the middle.
- Add the remaining 1/2 tbsp. butter to the empty space in the pan. Add bologna and tomato slices to the pan. Cook bread, bologna and tomato for 2 minutes. Flip bologna and tomato during cooking time to ensure even browning. Turn down heat if they are browning too fast.
- Remove bread to an oven-safe tray. Add tomato slices on top of the bread, then pile on the bologna. Top with cheese slice(s). Broil for 2 - 3 minutes or until cheese is bubbly and slightly brown. Watch carefully during broiling to avoid burning.
- Remove from tray onto a serving plate. Top with freshly ground black pepper and serve immediately.
FRIED BOLOGNA SANDWICH

- Spread one slice of bread with mayonnaise and the other slice with yellow mustard.
- Heat a medium skillet or griddle pan over medium-high heat. Make a 1-inch X in the center of each piece of bologna to keep it from curling up in the skillet. Wipe the skillet with a stick of butter until lightly greased. Add the bologna and fry a couple of minutes on each side until browned. Stack up the bologna in the skillet and top with the cheese. Cover with a large inverted bowl and heat until melted.
- Transfer the bologna to one of the slices of bread. Top with the chow chow, potato chips and lettuce. Top with the other slice of bread and give it a little push to crush the potato chips down a bit. Enjoy immediately.

- Put oil in a frying pan and heat to med. high.
- Put slit in bologna from middle to all the way through the end.
- Put bologna in heated oil.
- Brown both sides.
- Add cheese to top while last side is browning.
- Spread mustard on both sides of bread.
- Add bologna between slices and gobble it up!

Steps:
- Melt a pat of butter in a fry pan and fry the bologna till golden.
- Remove the bologna and fry the egg (break the yolk, if you wish) in the same pan.
- Slice open the kaiser roll and place the cooked bologna slice on the roll.
- When you have flipped the egg and its near done, place the slice of cheese on top till melted. Remove and place on top of bologna and top with the other half of bun. Enjoy!

- (Optional) Toast the bread or buns if desired. You can toast bread slices in a toaster, but if using buns I prefer to toast them in a dry pan before cooking the bologna and eggs.To do this in your frying pan or skillet, combine the optional butter and garlic salt and spread on each bun half. Then toast over medium heat until lightly golden. Remove and set aside.
- In a large skillet or frying pan, heat to medium and add the bologna slices in a single layer (typically 3-4 slices at a time). Cook on the first side until golden and browning slightly, about 2 minutes. Flip and cook the reverse side for a minute, until golden as well. Remove and set aside (repeat if necessary).
- Crack your eggs into the skillet or frying pan, still over medium heat. Break the yolk if desired, season with salt and pepper, and cook until the white is firm enough to flip or about 3 minutes.
- Flip and cook the reverse side for one minute, add cheese slices and cover. Cook for an additional 30 seconds then remove from heat and assemble your fried egg and bologna sandwiches.
- Place the fried bologna on the bottom slice of bread or bun, top with the egg and melted cheese, then close with the second slice of bread or bun half. Serve immediately and enjoy.

I was craving fried bologna. Came across an Egg, Cheese Bologna recipe and tweaked it a little bit to make it like a grilled cheese sandwich! Delicious!!

- Prep:.
- Slit the bologna in 4 places alond the side to 1/2 to middle (like a pinwheel) to prevent it from curling when fried.
- Mayo one side of 2 slices of bread (I prefer to grill with mayo -- browns better than butter -- a trick I learned from a diner).
- Add small pat of butter to grease a non-stick frying pan on medium. Add the bologna. Fry to your liking turning frequently as not to burn. Transfer to one piece of your bread on the un-mayo side.
- Fry an egg. You will have plenty of grease to fry it inches Poke yolk. Flip. Add a slice of cheese to cooked side. Fry it through. Transfer to on top of bologna.
- Put other slice of bread over. Mayo side out. Transfer to fry pan. Grill it like you would a grilled cheese sandwich. I put Frank's Red Hot cayanne pepper sauce as a condiment. (milder than Tabasco) -- use whatever condiment you want or leave it plain! Super YUMMY!
