- In a mixer mince meat leftovers, mortadella ham, Grana padano (or Parmigiano cheese), 1 small garlic clove and parsley. Then, in a bowl mix a whole egg with ground beef, a pinch of salt and ground black pepper. Meantime, in a bowl, soak the stale bread in the milk.
- Once the bread is soaked, squeeze it with your hands to let the excess milk out. Add it to the ground beef and the meat leftovers, then add the grated lemon zest and mix all together with a wooden spoon. Now, take a little bit of the mixture and make balls with your hands with a diameter of about 3/4 cm (1 inch and a half). Meatballs can be round or slightly oval, as you prefer.
- Roll and cover the meatballs in bread crumbs and fry them in a pan for about ten minutes, turning them frequently, with butter or a oil for frying. Serve fried Italian meatballs with a side dish of fresh green salad or baked potatoes.

- In a large mixing bowl stir together bread crumbs and milk while adding more milk 1 Tbsp at a time to moisten bread fully. Let rest while you prep ingredients (or at least 5 minutes).
- To breadcrumb mixture add beef, pork, eggs, onion, garlic, basil, parsley, oregano, parmesan and season over top of ingredients evenly with salt and pepper (I only use 3/4 tsp salt if I plan on using jar sauce to coat since it can be salty).
- Shape mixture with greased hands into even size meatballs, about 1 1/4-inches each (or about 38g).

- Add 17 ounces of minced beef, 17 ounces of minced pork, 1 teaspoon garlic powder, ½ teaspoon salt, ¼ teaspoon ground pepper, 1 tablespoon parsley, ½ cup of parmesan to a bowl and mix everything until well incorporated.
- Make a little well in the meat mixture and add 1 egg to the well. Mix the egg into the meat mixture.
- Roll out the meat mixture into 1.7-ounce meatballs. There should be roughly 20 meatballs once they are all rolled out. Then roll the meatball into breadcrumbs until they are completely covered.
- In a deep fryer or a deep pot or skillet, add the frying oil (use enough oil to totally submerge the meatballs in the oil). Once the oil reaches a temperature of 300°F, place the meatballs in the oil using a slotted spoon. The meatballs should sizzle as soon as they touch the hot oil.
DEEP-FRIED MEATBALLS: A REAL TREAT FOR ADULTS AND CHILDREN

- There is not a unique recipe to prepare deep-fried meatballs, there can be many ingredients according to personal taste. I propose you a base of minced beef meat to which add chopped green olives, eggs and bread soaked in milk. If you want you can also add capers, sautéed mushrooms and grated Parmesan cheese.
- First, to prepare the deep-fried meatballs remove the crust from the slice of bread, cut into small cubes and soak them in milk.
- In a bowl, put all the ingredients of the meatballs: minced meat, olives, the two eggs, the bread slightly dried from the milk. Add salt and amalgamate everything. If the mixture is too soft, add a bit of breadcrumbs.
