2 large eggs
1/4 cup water
1 small onion, finely chopped
1-1/3 cups soft bread crumbs
2/3 cup grated Parmesan cheese
2 garlic cloves, minced
2 teaspoons Italian seasoning
1-1/2 teaspoons salt
1/4 teaspoon pepper
2 pounds ground beef

Steps:

  • Preheat oven to 375°. In a large bowl, combine eggs, water, onion, bread crumbs, Parmesan cheese, garlic and seasonings; mix well. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. Place meatballs on greased racks in shallow baking pans. Bake, uncovered, until no longer pink, 15-18 minutes. , Freeze option: Freeze cooled meatballs in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in the microwave.

1/2 cup panko bread crumbs
1/4 cup whole milk
1 pound ground beef
1 pound ground pork
1 onion, finely chopped
1/2 stick butter, softened
2 large eggs
1/2 cup chopped parsley leaves
Kosher salt
Freshly ground black pepper
Olive oil, for frying

Steps:

  • Soak the bread crumbs in the milk while you prepare the other ingredients.
  • Put the beef and pork into a large bowl. Add the onion, butter, eggs, and parsley and season well with salt and pepper. Put the soaked bread crumbs into the bowl and mix it all together well with your (clean) hands. Form the mixture into meatballs about the size of ping pong balls.
  • Heat about 1/4-inch of oil in a skillet over medium heat. Fry the meatballs until they are browned on all sides and cooked through, about 15 minutes.

  • Pre heat Deep fryer to 375 degrees. Put the mixed flour and cornmeal (dry) into a meatloaf pan. In a small food processor, blend Jalapeno, pickle wedges and bell pepper until they resemble relish. Mix all together thoroughly in a large bowl.
  • Roll mixture into 1oz balls and roll balls in dry flour/cornmeal mix until completely coated. Put in fry basket (sides NOT touching), deep fry for 5 minutes.

This is a very old recipe that is a tradition in our Italian family. My mom's meatballs recipe is tried and true. We love them extra crispy and fried. You can fry, air fry or bake.

2 lbs ground chuck, ground round hamburger, a mixture of veal, pork and beef hamburger meat or you can use all ground lean turkey
4 slices of Italian bread run under warm water, and then tightly squeezed out
1/2 cup Italian flavored bread crumbs
1/4 cup grated cheese
1 or 2 large cloves finely minced fresh garlic or more to taste
2 tablespoon fresh chopped parsley
1/2 teaspoon granulated garlic powder
1/4 teaspoon of cayenne pepper
1/2 teaspoon of black pepper
1 tablespoon of extra virgin olive oil
2 eggs
canola oil or grandma always used vegetable oil around 2 inches deep.
If you're baking line with oil sprayed foil or I prefer parchment paper
ice cream scoop medium-sized for perfect round meatballs

Steps:

  • Place all ingredients in a large bowl and mix all together.
  • Shape into balls by hand or using an ice cream scoop to form the meatball.
  • Fry in 2 inches of heated oil or bake on a lined oiled sprayed cookie sheet until crispy on both sides turning a few times while cooking.
  • These are hot so be careful eating until cooling a few minutes.
  • These can be added to a rich tomato Traditional Sunday Sauce
  • Note: If Air Frying shape meatballs to fit air fryer into an oil sprayed basket and air fry at 400 degrees until browned around 15 minutes to 20 minutes.
  • If baking place meatballs on parchment paper or a heavily greased baking sheet and bake at 400 degrees until browned around 35 minutes.

1 pound ground beef (I used 80/20)
1 pound ground veal
1/2 pound sweet italian sausage
1 large vidalia onion (cut into quarters)
4 cloves of garlic
1/2 cup chicken stock
1 tablespoon fish sauce
1 cup panko bread crumbs
1 1/4 cup fresh grated parmesan cheese
3 tablespoons fresh chopped parsley
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
1 large egg (lightly beaten)

Steps:

  • Using your hands, lightly mix the beef, veal and sausage. Set aside.
  • In a blender, add the onion and garlic. Blend until pureed.
  • Add the onion mixture, stock, fish sauce, panko, parmesan, parsley, salt, pepper and egg to the meat mixture and, using clean hands, mix the ingredients together until well combined.
  • Gently shape the mixture into balls approximately the size of a golf ball.
  • Heat the olive oil in a deep skillet or dutch oven over medium high heat.
  • Add the meatballs to the pan and cook until golden brown.
  • Flip the meatballs and continue to brown on all sides turning once crusty and golden.
  • Cover the pan and turn the heat to low.
  • Cook the meatballs for an additional 5-10 minutes until cooked through. (Be sure to check your meatballs to make sure they're not burning. If they seem a bit dry, add 2-3 tablespoons of water to the pan and cover.)
  • Serve your meatballs with your favorite sauce.

2 tablespoons oil

Steps:

  • Combine meat, onion, garlic, stock powder, breadcrumbs, egg, nutmeg and mint together and mix well in a bowl.
  • Roll 2 level tsp of mixture into balls.
  • Heat oil in a pan, add meatballs.
  • Cook until brown and tender.
  • Drain on absorbent paper.
  • Serve with sauce.
