A very traditional breakfast or dessert in northeast Brazil, bananas or plantains are fried in butter and coated with cinnamon-sugar. Delicious with vanilla ice cream too.

3 firm bananas, halved lengthwise
½ cup white sugar
1 ¼ teaspoons ground cinnamon
3 tablespoons butter

Steps:

  • Cut each banana half into 3 or 4 pieces.
  • Mix sugar and cinnamon together in a shallow bowl.
  • Melt butter in a skillet over medium-low heat; add banana slices and cook until golden brown, 5 to 10 minutes. Transfer banana slices to a paper towel-lined plate. Coat banana slices, 1 at a time, with cinnamon-sugar.

1 1/2 cups flour
1/2 cup corn starch
2 tblsp baking powder
2 tblsp sugar
1 1/2 tsp salt
1 tsp. cinnamon
2 yolks
1 1/2 cup club soda
1 bunch barely ripe bananas
veetable oil, for deep frying

Steps:

  • Preheat your oil in a heavy-based pot for deep frying to 365 degrees F. In a large mixing bowl combine flour, cornstarch, baking powder, sugar, salt, and cinnamon. Make a well in the center and add the yolks and club soda. Using a whisk, stir from the inside working your way out, slowly incorporating the dry ingredients without forming any lumps. Peel the bananas and dip in the batter and coat well. Fry in hot oil until batter is puffy and golden brown. Drain on paper towels when done. We served this with ice cream, chocolate sauce, and chocolate cake. It suggests serving it with ice cream, banana chips, and caramel sauce. Honestly, you could serve it with cough syrup and it would be delicious.

There is some debate in our ice cream parlor what the "traditional" split consists of. I did some research before we opened and it seems that this is the most consistently "traditional" split served, even though some have marshmallow, peanuts, crushed cherries and more. I prefer hot fudge over the chocolate syrup, personally :P

1/2 cup scoop vanilla ice cream
1/2 cup scoop chocolate ice cream
1/2 cup scoop strawberry ice cream
1 large ripe banana
2 tablespoons chocolate syrup (or Hot Fudge)
2 tablespoons strawberry ice cream topping (or fresh strawberries)
2 tablespoons crushed pineapple
2 tablespoons wet walnut ice cream topping
whipped cream
cherries

Steps:

  • Line up ice cream scoops next to each other in an oval deep dish or a banana boat.
  • Cut the ends of the banana off (about 1/4 inch) while still in the peel.
  • Slice in half longways.
  • Pop each half of the banana out of the peel onto each side of the ice cream row, pressing down and in a little so it'll stay put.
  • Top the vanilla ice cream with the pineapple, the chocolate with the chocolate syrup and the strawberry with the strawberry sauce.
  • Spoon the wet walnuts over all three scoops of ice cream.
  • Top each scoop with some whipped cream and a cherry for each.
  • Enjoy!

6 tablespoons all-purpose flour
2 tablespoons sugar
1 egg, beaten
1/4 cup milk
1 pinch salt
4 medium bananas (the firmer they are, the better)
peanut oil (for frying)

Steps:

  • Mix together the flour, sugar, egg, milk and salt to make a smooth, paste-like batter.
  • Leave to rest for one hour.
  • Peel the bananas and slice each one in half lengthwise, then across into chunks about three inches long.
  • Dip the banana pieces into the batter and shallow fry in hot oil for a few minutes or until golden brown all over.
  • Drain quickly on a wire rack or paper towel, and serve warm.
  • If you like, serve them with real maple syrup, powdered sugar, or honey, for extra sweetness.

2 cups sugar
1/4 cup of water
2 tablespoons of unsalted butter
1/2 cup of heavy cream
Pinch kosher salt
1 pint of vanilla bean ice cream
1/4 cup banana chips
1/4 cup toasted pecans

Steps:

  • Preheat your oil in a heavy-based pot for deep frying to 365 degrees F.
  • In a large mixing bowl combine flour, cornstarch, baking powder, sugar, salt, and cinnamon. Make a well in the center and add the yolks and club soda. Using a whisk, stir from the inside working your way out, slowly incorporating the dry ingredients without forming any lumps. Peel the bananas and dip in the batter and coat well.   • For the chocolate sauce: Combine the chocolate and 1/4 cup water in a heavy small saucepan. Stir over medium-low heat until the sauce is melted and smooth. Remove from the heat. Stir in small pinch cayenne pepper. Set aside.
  • For the bananas: Place the brown sugar in a pie dish or on a plate. Toss the bananas in the brown sugar until nicely coated. Melt the butter in a heavy large skillet over medium-high heat until the butter becomes golden brown. Add the bananas to the hot pan cut-side down. Turn the bananas over as soon as they are golden brown and the sugar forms a crunchy coat on the bananas, about 30 seconds per side (do not allow bananas to become soft and mushy).
