CRACKER BARREL FRIED APPLES
I grew up eating fried apples and then as an adult I discovered Cracker Barrel and their fried apples. This recipe is from another site and is as close as I have seen to Cracker Barrel. The recipe says you can freeze the cooked apples. I have never done this as there is never any left.

- Melt butter in a skillet and cook apples over low heat until they become tender. If they take too long cooking, as can happen with certain types of apples, you can add a little water to help them along, but don't add it unless needed, as you could overcook your apples. Some apples just soften up real quick, but others don't. It all depends.
- Sprinkle apples with cinnamon and stir in Splenda brown sugar and cook until apples caramelize, but not so long as to burn the sugar.

- Position racks in the upper and lower third of the oven; preheat to 200 degrees F. Line 2 large baking sheets with parchment paper.
- Using a sharp knife or a mandoline (if you have one), slice 2 large apples as thin as possible, about 1/8 inch thick. (We skip peeling and coring because we like the look of the dried skins and the pretty pattern the core makes in the center.) Soak the slices in the lemon water for 30 minutes. Drain and pat the slices as dry as possible with paper towels (or clean kitchen towels). Place on the prepared baking sheets in a single layer.
- Bake the slices on the upper and lower racks for 1 hour. Remove from the oven and turn each slice over; return the pans to the oven. Bake 1 more hour for soft dried apples or about 2 more hours for crispy apple chips. (Timing depends on your oven, the type of apple and thickness of the slices; check periodically and reduce or increase the total time as needed.) Turn off the oven, crack the door and leave the apples in the oven until the oven cools completely, 1 to 2 hours.

- Add 1/2 cup apple juice, cornstarch, and sugars in a blender. Pulse for 3-second increments until the mixture is combined and there are no visible cornstarch clumps; set aside until step 5.
- In a large skillet over medium heat add the remaining 2 cups of apple juice, butter, apple pie spice, and a pinch of salt and place the apples in an even layer in the pan.
- Bring the juice mixture to a simmer, and adjust the temperature to keep the heat at a simmer, and cook the apples until they are fork tender, turning them every couple of minutes, for a total of 10-15 minutes. Be careful not to over-cook the apples because they will turn mushy!
- Use a slotted spoon to remove the apples from the pan, leaving most of the apple juice in the pan. Place the apples in a bowl while you make the sauce.
