Yield 6 servings

Number Of Ingredients 11

3 pounds boneless, skinless grouper fillet, or substitute snapper or orange roughly
1/2 cup unpeeled slivered almonds
1/2 teaspoon allspice
1 teaspoon salt
1 teaspoon freshly ground black pepper

In a shallow baking dish, spread out the nut spice mixture. Dredge the fillets in the mixture, one at a time, shaking off the excess.
  • In a large heavy skillet, heat the olive oil over medium high heat. Fry the fillets for about 3 minutes on each side, until light brown. With a slotted spatula, remove the fish to a warm platter or individual serving plates and scatter with the parsley sprigs. Serve with wedges of lemon.

FRIED ALMONDS

Fried Almonds image

A delicious and extremely quick-to-make recipe which I was delighted to find in the October-November 2008 issue of 'dish'. As I don't like hot and spicy flavours, I made these with a mild paprika. Those who do like foods hot and spicy might want to add cayenne pepper. Please, do adjust the spices to meet your taste preferences. As almonds boost energy levels particularly at those times such as early afternoon when - given the choice - many of us may choose to have a siesta, I intend to have these on hand in a container at all times at work as a quick energy-boosting snack. I've found that even half a dozen almonds can provide the boost needed at such times, and these will offer a more flavoursome alternative to plain almonds.

Provided by bluemoon downunder

Categories     Lunch/Snacks

Time 10m

Yield 1 1/2 cups

Number Of Ingredients 6

25 g whole blanched almonds (30g = 1oz, so just under an ounce, though precise measurements aren't crucial here)
2 tablespoons olive oil
1 teaspoon sea salt
1 teaspoon caster sugar
1/2 teaspoon hot smoked paprika
1/2 teaspoon ground cumin

Steps:

  • Heat the oil in a sauté pan, over a medium heat, add the almonds, stirring frequently until they are well-coated with the oil and golden. Do not have the oil too hot as the almonds will then brown and their middles will still be raw.
  • Combine the remaining ingredients in a bowl to make the spice mix.
  • Transfer the almonds to a plate using a slotted spoon and sprinkle with the spice mix.
  • Cool before serving.

PANFRIED TROUT WITH ALMONDS AND PARSLEY

Panfried Trout with Almonds and Parsley image

Sauteed almonds make a zesty topping for panfried trout. For a light, quick supper, serve the fish with baby lettuce leaves and lemon wedges.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes

Number Of Ingredients 8

4 trout fillets
3/4 teaspoon coarse salt
Freshly ground pepper
1 tablespoon plus 1 teaspoon olive oil
3 ounces whole shelled almonds, coarsely chopped
1 cup loosely packed flat parsley leaves, coarsely chopped
Finely grated zest plus freshly squeezed juice of 2 lemons
Nonstick cooking spray

Steps:

  • Lightly coat a large skillet with cooking spray. Place over medium-high heat. Sprinkle the trout with the salt, and season with pepper; gently place 2 fillets in skillet, skin sides up. Reduce heat to medium, and cook until undersides are golden brown, 4 to 5 minutes. Carefully flip fish, using two spatulas if necessary. Cook until fish is slightly flaky in center when poked with a fork, about 2 minutes more. Transfer fish to a platter; keep warm. Wipe out skillet, and repeat with remaining 2 fillets.
  • Wipe out skillet; add oil and almonds. Cook over medium heat, stirring, until almonds start to turn golden, about 1 minute. Remove from heat, and immediately add parsley and lemon zest; stir to combine. Stir in lemon juice; as soon as it starts to bubble, pour sauce over fish. Serve immediately.

FRIED ALMOND TAPAS

Fried Almond Tapas image

A lovely addition to your tapas table, these golden fried almonds are hard to resist. Enjoy them with wine or cocktails! We liked these so much I ordered a huge bag of blanched almonds online, and I've been making them once a week! Provided by Laurel Johnson

Categories     Other Appetizers

Time 10m

Number Of Ingredients 3

2 c raw, blanched whole almonds
1/4 c extra virgin olive oil
sea salt

Steps:

  • 1. Over medium heat, in a small saute pan so the almonds are a bit crowded, pour a generous 1/4 cup of EVOO and the almonds.
  • 2. Keep the almonds moving, constantly stirring them in the oil. It might seem like there is too much oil, but it's OK.
  • 3. Keep frying the almonds, constantly stirring and mixing. They will start to sizzle in the oil, and this is what you want. After 5 or 6 minutes they should be a light golden color. (Once they begin to turn golden they go pretty fast. I had to adjust my heat to low so they wouldn't get too dark too fast.) Do not overcook as they can become bitter.
  • 4. With a slotted spoon, transfer the almonds to a paper towel-lined tray and immediately sprinkle with sea salt. Shake the tray to disperse the salt through the almonds.
  • 5. Allow to cool for at least 10 minutes and transfer to serving dish.

SPICY GLAZED CHICKEN BREASTS

Spicy Glazed Chicken Breasts image

This one-skillet chicken has a spicy, pleasantly tart and punchy glaze that's built on frying a little tomato paste in garlic- and almond-infused oil, then deglazing with lemon juice. It tastes like you sun-dried lots of tomatoes for weeks. (But you don't need to do that.) The final flourish is the crunchy fried almonds and garlic. You could skip them, but they add a special touch that belies how fast the dish comes together. Besides chicken, the dish also can be made with any other ingredient that browns well, like tofu or even broccoli.

Provided by Ali Slagle

Categories     poultry, main course

Time 20m

Yield 4 servings

Number Of Ingredients 8

4 boneless, skinless chicken breasts (1½ to 2 pounds total)
1/4 cup extra-virgin olive oil
1/4 cup sliced almonds
3 garlic cloves, thinly sliced
Kosher salt
2 tablespoons tomato paste (preferably double concentrate)
1/2 teaspoon red-pepper flakes
1 tablespoon lemon juice

Steps:

  • Pat chicken dry and pound to an even ½-inch thickness with a heavy skillet or meat pounder.
  • In a large (12-inch) skillet, combine the oil, almonds and garlic. Season with salt, then set over high heat. Once the mixture starts to sizzle, reduce heat to medium and cook, swirling occasionally, until light golden, 3 to 5 minutes. Turn off the heat and use a slotted spoon to transfer the almonds and garlic to a paper towel-lined plate. (Keep the oil in the skillet.)
  • Set the skillet over medium-high. Season the chicken all over with 1 teaspoon salt, then add to the skillet and cook until browned underneath and opaque halfway up the sides, 3 to 5 minutes. Reduce the heat to low and transfer the chicken to a plate, seared side up.
  • With the skillet still over low heat, add the tomato paste and red-pepper flakes and cook, stirring constantly and scraping up browned bits, until the paste is a shade darker and starts to stick to the skillet, 1 to 2 minutes. Return the chicken, as well as any accumulated juices, seared side up to the skillet, cover, and cook until the chicken is cooked through, 4 to 6 minutes. (The moisture from the chicken will keep the tomato paste from burning, but if you're concerned, add a teaspoon of water as a preventative measure.)
  • Uncover, add the lemon juice, then flip and drag the chicken through the tomato-lemon glaze to coat all sides. Transfer to plates, spoon over any remaining glaze and sprinkle with the fried almonds and garlic.
