Fresh Yogurt Sauce for Grilled Meat or Fish image

This sauce is a traditional Turkish sauce which fits well with grilled meat, fish baked potatoes, bread or salad. With smoked salmon it's delicous!

2 tablespoons olive oil
2 tablespoons lemon juice
1 garlic clove
1/2 teaspoon pepper
1/2 teaspoon salt
8 mint leaves, chopped
1 teaspoon fresh dill, chopped

  • Mix everything well together and serve chilled.

I swore I wouldn't post a recipe that I hadn't made, but the San Diego Zaarites are hassling me because I don't have anything posted, so... let me know how it works out and I'll update this once I've made it! PREP TIME INCLUDES 15 MIN SIT TIME! This recipe is from the Dannon company, but seems healthy and easy to prepare. (If you can figure a way to bake rather that fry it, please z-mail me!)

1 cup plain yogurt
1 teaspoon hot sauce (like Tabasco)
1 cup cornmeal
4 (6 ounce) catfish fillets (4 pieces) or 4 (6 ounce) tilapia fillets (4 pieces)
olive oil, as needed to prevent sticking

Steps:

  • Combine yogurt and hot sauce.
  • Add fish fillets to marinate for 15 minutes.
  • Drain fish and coat with cornmeal.
  • Use oil to pan fry fish 3-4 minutes on each side.
  • Serve with lemon and/or tartar sauce.

Cod Fillets With Cilantro Yogurt Sauce image

This cooling herbed yogurt sauce is adapted from the chef Yotam Ottolenghi in London, who serves it with leek fritters. But it's wonderful with mild fish like cod. The fish, while delicious, is utterly simple: fillets baked in a 300-degree oven until opaque, 10 to 20 minutes depending on the thickness of the pieces. It is the sauce that is the star, and that comes together quickly in a food processor. Combine roughly chopped cilantro and parsley, garlic that has been mashed to a paste, lemon juice, olive oil, salt and yogurt. (Whole-milk yogurt would be best for body and flavor, while low-fat is O.K., and nonfat untenable.) Process until the mixture is smooth and green. There will be sauce left over, which you can use on yet more fish, or as a dip for vegetables or fritters, anything that would thrive when dunked in the refreshing, herb-graced sauce.

2 cups cilantro leaves (some stems are O.K. - you don't have to pick off each leaf the way you do with parsley)
1/2 cup flat-leaf parsley leaves
2 garlic cloves
Salt and freshly ground pepper
2 tablespoons fresh lemon juice
2 tablespoons extra virgin olive oil
1 cup plain Greek yogurt (low-fat or whole)
1 1/2 pounds Alaskan cod fillets
Lemon wedges for garnish

Steps:

  • To make the sauce, coarsely chop the cilantro and the parsley leaves. In a mortar and pestle, mash the garlic with a pinch of salt. Place the cilantro and parsley in a food processor fitted with the steel blade and process until finely chopped. Add the garlic, lemon juice, olive oil, about 1/2 teaspoon salt (or to taste), and the yogurt and process until the mixture is smooth and green. Transfer to a bowl.
  • Preheat the oven to 300 degrees. Line a sheet pan with foil and oil the foil. Season the fish fillets with salt and pepper and lay on the foil. Place a pan of just boiled water on the floor of your oven and place the baking sheet with the fish in the oven on the middle rack. Bake 10 to 20 minutes, depending on the thickness of the fillets, until the fish is opaque on the surface and you can pull it apart with a fork.
  • Remove the fish from the oven, transfer to plates or a platter, and spoon on the sauce. Garnish with lemon wedges and serve.

1 pound thick-cut salmon fillet or other firm-fleshed fish
Salt to taste
1 tablespoon lemon juice
1/2 cup plain yogurt, not low-fat
1 garlic clove, grated
1/4-inch piece of ginger, grated
1/4 teaspoon ground black pepper
1/4 teaspoon ground coriander seeds
1/4 teaspoon ground cumin seeds
1/4 teaspoon garam masala
Tiny pinch saffron (optional)
1/2 teaspoon kasoori methi (dried fenugreek leaves)
1 teaspoon melted butter
5 raw almonds
5 raw cashews
1 teaspoon desiccated unsweetened coconut
10 raw pistachios
1 teaspoon whole fennel seeds
3 tablespoons plain breadcrumbs
Lemon juice to taste

Steps:

  • Wash the fish well and dry with paper towels. Lay it skin side down in a single layer in a large dish and sprinkle with salt and lemon juice. Set aside for 15 minutes. Line a fine mesh sieve with a double layer of cheesecloth or a coffee filter, set over a bowl, and pour in the yogurt. Let it drain for 15 minutes or longer.
  • Scrape the yogurt into a small bowl. Add the grated garlic, ginger, black pepper, ground coriander, ground cumin, garam masala, saffron (if using), dried fenugreek leaves, and butter. Mix well. In a clean coffee or spice grinder, powder the almonds, cashews, coconut, pistachios, and fennel seeds. Mix into the spiced yogurt.
  • Drain the liquid accumulated at the bottom of the fillets, then smear the spiced yogurt marinade all over the fleshy side of the fish. Cover and marinate in the refrigerator for at least 2 hours. Just before grilling, sprinkle the breadcrumbs all over the fish and pat gently to hold in place.
  • When ready to grill, place the fish skin side down in a covered barbecue over medium heat. Grill until the bottom is well cooked, about 10 minutes. Flip carefully and cook for another 10 minutes or until it is cooked through. Remove to a platter and sprinkle with lemon juice. Split the fillet down the center and serve.

Quick-Braised Cod With Herbed Yogurt image

In this blissfully easy weeknight dinner, cod and shallots are braised in butter and wine, then topped with an herbed, garlicky yogurt sauce. It's fast, flavorful and comforting, especially when served with mashed potatoes to drink up the pan juices. You can substitute any other mild-fleshed fish for the cod. Hake, sea bass, flounder and porgy all work nicely, though you may have to adjust the cooking time, depending on the thickness of the fillets.

4 cod or hake fillets (6 to 8 ounces each)
Salt and freshly ground black pepper, to taste
2 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil, more as needed
1 large shallot or 1/4 of a red onion, thinly sliced
5 sprigs thyme
1/4 cup dry white wine
1/3 cup plain yogurt (see Note)
2 tablespoons minced fresh dill, parsley or cilantro, more for serving
1 small clove garlic, finely grated or minced
Flaky sea salt, for serving (optional)

Steps:

  • Season fish with salt and pepper and set aside.
  • In a large skillet with a lid, melt butter in olive oil over medium heat. Add shallot, thyme and a pinch of salt and pepper and cook until golden, about 3 minutes. Add wine and cook until slightly thickened and shallot is very soft, about 2 minutes longer.
  • Add cod to pan, spoon some of the shallots over top of fish and cover pan. Reduce heat as needed; the liquid should be at a simmer, not a boil. Cook until fillets are just opaque, 2 to 4 minutes.
  • Meanwhile, in a small bowl mix together yogurt, dill, garlic, and salt and pepper to taste.
  • Serve the cod immediately, topped with shallots, yogurt sauce and dill. Drizzle everything with a little more olive oil, and sprinkle with flaky salt and more pepper.
