Number Of Ingredients 23

1 1/4 cups milk
2 tablespoons sour cream
4 tablespoons (1/2 stick) unsalted butter, melted
1 teaspoon pure vanilla extract
4 extra-large eggs
1 1/3 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
3 cups (24 ounces) ricotta cheese
8 ounces mascarpone cheese
2 extra-large eggs
1/3 cup sugar
1 tablespoon grated lemon zest (2 lemons)
2 tablespoons freshly squeezed lemon juice
1/2 teaspoon pure vanilla extract
1 teaspoon kosher salt
Fresh Blueberry Sauce, recipe follows
3/4 cup freshly squeezed orange juice (3 oranges)
2/3 cup sugar
1 tablespoon cornstarch
4 half-pints fresh blueberries
1 teaspoon grated lemon zest
1 tablespoon freshly-squeezed lemon juice

Steps:

  • Preheat the oven to 350 degrees. Butter a 9-by-13-inch cake pan or baking dish.
  • For the batter, place all the ingredients in the bowl of a food processor fitted with the steel blade and blend until smooth. (You can also use a blender.) Pour half the batter (about 1 3/4 cups) into the prepared dish and bake for 10 minutes, until set.
  • Meanwhile, for the filling, whisk together the ricotta, mascarpone, eggs, and sugar in a large bowl. Add the lemon zest, lemon juice, vanilla, and salt and mix until thoroughly combined. Spread the cheese filling over the baked pancake. Carefully spoon the remaining pancake batter to cover the cheese.
  • Return the pan to the oven and continue baking for 35 to 40 minutes, until the top is lightly golden and the filling is almost set. Remove from the oven and allow to stand 10 to 15 minutes. Cut the blintzes in squares and serve warm with the Fresh Blueberry Sauce.
  • Combine the orange juice, sugar, and cornstarch in a medium saucepan and bring to a boil, stirring occasionally. When the mixture is translucent and thickened, stir in the blueberries and simmer for 4 to 5 minutes, just until a few berries have burst but most are still whole. Stir in the lemon zest and lemon juice and cool.

BLUEBERRY SAUCE RECIPE {NO SUGAR ADDED}

Blueberry Sauce Recipe {No Sugar Added} image

This two ingredient blueberry sauce gets all its sweetness from the berries. If you desire a sweeter sauce, use your choice of fruit juice instead of the water. Do not continue to cook the sauce after adding the arrowroot powder, as this will breakdown the thickening power of the arrowroot.

Time 10m

Yield Makes about 2 cups

Number Of Ingredients 4

2 cups fresh or frozen blueberries (no need to thaw before use if frozen)
¼ cup water OR apple juice/orange juice, if you want a sweeter sauce
2 tsp. arrowroot powder, find it here
1 Tbs. water

Steps:

  • Place the berries and ¼ cup water (or juice) in a small saucepan over medium heat. Cook for 5-10 minutes, until bubbling. Slightly smash some of the blueberries with the back of a fork.
  • In a small bowl, stir together the arrowroot powder and 1 Tbs. of water. Remove the saucepan of berries from the heat. While stirring constantly, add the arrowroot mixture into the blueberry mixture. Let cool until no longer hot and serve. The sauce with become even thicker when chilled.
  • Store the sauce in the fridge for a few days.

  • Line an 8 by 8-inch baking dish with aluminum foil leaving a 2-inch overhang on two sides. Spray foil with non-stick cooking spray.
  • In a bowl, using a fork, stir together graham crackers and butter until evenly moistened. Pour mixture into prepared baking dish and press firmly into an even layer. Transfer to refrigerator.
  • Pour 2 Tbsp water into a small bowl. Sprinkle gelatin evenly over water. Allow to rest while preparing filling.
  • In a mixing bowl using an electric hand mixer (or 2-cup liquid measuring cup if your hand mixer will fit), whip heavy cream until stiff peaks form (it should get to the point it starts to loose that wet sheen). In a separate mixing bowl mix cream cheese and powdered sugar on low speed until combined, then increase speed to high and whip until smooth, light and fluffy, about 1 1/2 - 2 minutes. Mix in sour cream and vanilla extract. Heat gelatin mixture in microwave 25 seconds then whisk about 1 minute to dissolve gelatin. Cool until just warm, about 3 minutes (don't let it set, if it cools much longer than 3 minutes it will begin to set then will create a lumpy cheesecake), then while mixing cream cheese mixture with hand mixer, slowly pour gelatin mixture into cream cheese mixture and mix until combined. Fold in whipped cream.
