GARLIC TOAST
Given the option, I'd eat nothing but bread. And this recipe uses my favorite ingredient: flaked sea salt! Yum!

Steps:
- Turn on broiler.
- Place bread in single layer on sheet of foil. (I use toasted oat bread or whole wheat).
- In small saucer or bowl, mix olive oil, margarine, Italian seasoning, garlic, and Parmesan.
- Brush or spoon mixture over each piece of bread.
- Sprinkle lightly with paprika.
- Place 4-6" under broiler.
- ***Watch Closely*** it can quickly go from browned to burnt if you're not paying attention. Cook 2-3 minutes & remove from oven when edges begin to brown.
- Sprinkle lightly with flaked sea salt (I use pink Australian salt, but if you don't have any, a light sprinkling of regular table salt will do).
- Serve!

- Heat oven to 425 degrees. Line baking sheet with aluminum foil.
- Place bread cut sides up on baking sheet. Process basil in food processor or blender until finely chopped. Add butter, oil, cheese, and garlic; process until smooth. Season to taste with salt and pepper. Spread basil butter evenly over each bread half.
- Bake until golden, 10-12 minutes. Cut bread into 4-inch lengths and serve hot.

HOMEMADE ROASTED GARLIC AND FRESH BASIL MARINARA SAUCE
Loaded with savory herbs, simmered with both fresh and dried basil, fresh tomatoes, and a super-flavorful roasted garlic puree.

- Start with the onions and saute them in 3 tblsp olive oil on a medium heat till translucent, then add the fresh basil and turn down the heat while continuing to stir. Keep cooking the fresh basil to bring out the flavor, but still stirring the onions in the same pan. The basil leaves should be wilted and soft, but not burned. Then, add 3 oz of chicken stock and simmer till most of the liquid has burned off. Set aside.
- Using a food mill (which can be purchased at specialty kitchen supply stores) separate the seeds and skin from the fresh tomatoes, then with a wooden spoon, stir in all of the dry spices. Then, stir in the onions, olive oil, stewed tomatoes, and fresh Basil mixture. You want to marinate all of this in the refrigerator for a couple of hours. The acids will be infused with the herbs the longer it sits in the refrigerator. Meanwhile, start in on the garlic.
- Peel off the top layers from the garlic cloves and wrap each one in foil, place in a roasting pan. Roast the garlic under the broiler or a 425F oven for 20 minute Let cool and then unwrap. In a bowl, mash down the garlic with a fork, or potato masher, till it forms a paste, then in a blender with 1 cup of chicken stock, puree the roasted garlic paste till it liquifies. You are now ready to season the Marinara with garlic puree while it cooks.
- Take the marinated tomatoes and seasonings from the refrigerator and place in a large stock pot or sauce pan. Simmer on a low heat, stirring and gradually adding the red wine vinegar, tomato juice, and remainder of the chicken stock, add in the garlic puree and keep simmering till it comes to a slight boil. After the first boil, is when you add in the flour depending on how thick you want the consistency to be. This Marinara usually simmers 45min to 1 hour, but you can also use a crock pot on low to keep it going longer, if desired. Stir in cracked black pepper to taste.

- Preheat the oven to 400 degrees F (a toaster oven with a bake setting works as well). Remove layers of extra skin from the outsides of the garlic, leaving enough to hold the cloves together.
- With a sharp knife, trim off ¼ to ½-inch from the top of the garlic head so that you expose the tops of the cloves inside of it (you may need to trim the outer ones separately from the top-most ones so that all tips are exposed with minimal waste). You can save the trimmed tips for raw garlic later on, or discard them.
- Tear off squares of aluminum foil or parchment large enough to create a packet around each head of garlic.
- Place each head in the center of a square so that the trimmed cloves are facing upwards. Drizzle the exposed cloves with 1/2 teaspoon olive oil per head, then sprinkle with salt and pepper. Close the foil or parchment around the garlic to cover it completely (with parchment, fold or twist it up and around the garlic, then secure with kitchen string if needed).
- Stand the garlic packets cloves-side up in a small baking dish (if your garlic won't stand on its own, place it in a ramekin to hold it, then set the ramekin on the baking dish). Alternatively, you can use a muffin tin, standing each packet up inside one of the wells.
- Roast the garlic at 400 degrees F for 35 to 45 minutes, until the cloves are light golden brown and give easily when pressed (be very careful when opening the packet to check). If using a toaster oven, rotate the pan 180 degrees F halfway through.
- Remove the garlic from the hot oven and let rest. As soon as it is cool enough to safely handle, use a small knife to trim the skin a little around each clove. With a tiny fork or your fingers, pull or squeeze the garlic out of the skins. Use immediately (spread roasted garlic on toast, mix with Instant Pot Mashed Potatoes, mix into plain Greek yogurt to top an Air Fryer Baked Potato, add it to Chicken Pesto Pasta, add it to Grilled Naan Pizza with Strawberry Chicken and Avocado-see blog post above for even more ideas), or store for later use.

- Slice the tops off of each garlic head and drizzle olive oil and salt and pepper over the tops.
- Wrap up the garlic heads in a piece of foil and roast for 30-45 minutes on 400 degrees.
- When the cloves are tender and cooled, squeeze them out into a small bowl along with the softened butter, chopped basil and additional salt and pepper. Mix well until mixture is well-combined.

EASY CHEESY GARLIC TOAST
This recipe is so ridiculously cheap and easy that it's almost embarrassing, but I'm posting it anyway for anyone who has picky little eaters or who is simply looking for a quick and easy fix. It is not gourmet by any stretch of the imagination but is just what it's title suggests: easy, cheesy & garlicy. My family said, "yum", and I hope yours does too!

- Preheat oven broiler to lowest setting and position oven rack 8-10 inches from heating element.
- Place slices of bread on a baking sheet. Broil for 2-3 minutes or until lightly browned.
- Turn slices over and spread untoasted side evenly with butter/margarine. Then sprinkle lightly with garlic powder and black pepper. Then sprinkle with shredded mozzarella cheese and parmesan cheese.
- Return to oven and broil for another 2-3 minutes or until cheese is bubbly and browned to your liking.

- Set oven to 375°F.
- ** FOR GARLIC BREAD; cut slices down the length of the bread about 1-inch intervals without cutting all the way through.
- In a bowl, combine the softened butter with garlic, parsley and Parmesan cheese; mix well to combine.
- Spread the butter/garlic mixture between bread slices, and then on the top of the loaf (you may sprinkle more Parmesan cheese on top of the loaf if desired).
- Wrap the bread in heavy-duty foil leaving the top partially uncovered.
- Bake until heated through (about 15 minutes).
- ** FOR GARLIC TOAST; slice the bread into slices, then spread the garlic butter mixture over the top of each slice of bread, then sprinkle more Parmesan cheese over the top of each slice or you can sprinkle shredded cheddar cheese on top in place of the Parmesan.
- Place onto a baking sheet and bake (350 degrees F) until lightly toasted to desired doneness.
- Serve warm.
- TO MAKE AHEAD: Combine all ingredients (except the bread) store covered in refrigerator for up to 3 days or freeze in a covered container ----- this bread can be made without the addition of the Parmesan cheese if desired, but of course it's better with the cheese!
