THE BEST BASIL PESTO

The best basil pesto image

Pesto is so versatile, the principle of herbs, nuts and cheese, bolstered by garlic and good extra virgin olive oil, can be taken in so many different ways. This is the classic combo, celebrating basil, pine nuts and Parmesan, but use what you've got in stock.

Categories     Quick fixes     Vegetables     Italian     Potato     Keep cooking and carry on     Sauces & condiments

Time 5m

Yield 6

Number Of Ingredients 7

1 clove of garlic
1 large bunch of fresh basil, (40g)
50 g pine nuts
3 tablespoons extra virgin olive oil
50 g Parmesan
optional:
1 cooked Jersey Royal or new potato

Steps:

  • Peel and bash the garlic in a pestle and mortar with a pinch of sea salt.
  • Pick the basil leaves and add with the pine nuts, and pound to a coarse paste.
  • Muddle in the extra virgin olive oil and finely grate and stir in the Parmesan, adding a splash of water if you like it a little runnier, then continue bashing and pounding until smooth.
  • Have a taste and season with salt and black pepper, if needed. For a lovely creamy finish, try crumbling in and stirring through a cooked Jersey Royal. Serve with grilled meat or fish, or simply stirred through pasta - delicious!

BASIC PESTO

Pesto is a mouthful of bright summer - basil made more so. You can buy it in a jar or in the refrigerator section of your grocery story, but there is nothing better than making it yourself. Fresh basil can be found in abundance at farmers' markets in the summer. Just clean, take the stems off and throw the leaves in a food processor with nuts and garlic. Dribble in the oil and you've got a versatile sauce for pasta, chicken or fish.

THE BEST BASIC PESTO

The Best Basic Pesto image

Homemade pesto sauce is easy to make, and it's good on just about everything, from pastas to pizzas to salads.

Provided by Jennifer Segal

Categories     Dinner

Time 15m

Yield Makes about 1¼ cups (about 10 servings)

Number Of Ingredients 7

⅓ cup walnuts
2 large garlic cloves, roughly chopped
2 cups packed fresh basil leaves
½ teaspoon salt
¼ teaspoon ground black pepper
⅔ cup extra virgin olive oil
½ cup grated Parmigiano-Reggiano

Steps:

  • Place the walnuts and garlic in the bowl of a food processor fitted with a steel blade. Process until coarsely chopped, about 10 seconds. Add the basil leaves, salt, and pepper and process until mixture resembles a paste, about 1 minute. With the processor running, slowly pour the olive oil through the feed tube and process until the pesto is thoroughly blended. Add the Parmesan and process a minute more. Use pesto immediately or store in a tightly sealed jar or air-tight plastic container, covered with a thin layer of olive oil (this seals out the air and prevents the pesto from oxidizing, which would turn it an ugly brown color). It will keep in the refrigerator for about a week.
  • Freezer-Friendly Instructions: Pesto can be frozen in an airtight container for up to 6 months. You can also divide your prepared pesto into the compartments of an ice cube tray and freeze. Once it's frozen, remove the pesto cubes from the tray and put in a sealable plastic bag or airtight container. You can add the defrosted pesto cubes to soups, pasta dishes, eggs, sandwiches, and potatoes.

HOW TO EASILY MAKE PESTO FROM FRESH BASIL

How to Easily Make Pesto from Fresh Basil image

This WONDERFUL and easy recipe is courtesy of http://www.pickyourown.org. As expensive as basil pesto is in the stores, you'd think it was difficult to make; but it is incredibly easy. The only equipment you need is a food processor, blender or chopper.

Provided by Adrienne in Reister

Categories     Sauces

Time 5m

Yield 1 cup

Number Of Ingredients 7

2 cups basil (fresh leaves, stuff them into a measure cup and press them down with your hand, it's not a precise m)
1/4 cup parmesan cheese (grated)
1/4 cup pine nuts (if you don't have pine nuts, you can use walnuts or hazelnuts)
3 garlic cloves, finely minced (or 1 tablespoon of prepared minced garlic)
1 tablespoon lemon juice (helps prevent the pesto from turning brown upon exposure to the air)
1/4 cup extra virgin olive oil
1 teaspoon sugar

Steps:

  • Pick the leaves off of the stems. Discard any flower buds, stems or leaves that aren't in good shape. All we want are leaves; small, medium or large; as long as they are a healthy green, not brown or molding!
  • Wash the basil. Just wash them in a large bowl under cold water, no soap!
  • Chop the pine nuts and garlic in the food processor. If you don't have a food processor, you can use a blender.
  • Add the basil leaves, lemon, and olive oil and chop. Stuff the basil leaves (in small batches) into the food processor and chop them into the garlic, olive oil and pine nuts.
  • Chop the mix until it forms a thick, smooth paste.
  • Add the grated Parmesan cheese to the food processor and blend! IMPORTANT NOTE: if you intend to freeze the pesto, leave the cheese OUT and add it when you thaw and use the pesto.
  • Add 1 teaspoon of sugar or Splenda to the batch to bring the flavor alive. (Optional).
  • The pesto will keep in refrigerator for about a week, or you can freeze it and it will last for 3 to 6 months.
  • Serving? Most people serve it over pasta or use it to season fish and chicken dishes.

HOMEMADE BASIL PESTO RECIPE

Homemade Basil Pesto Recipe image

This fresh basil pesto recipe is easy to make with pine nuts (or walntus), garlic, Parmesan cheese, and a generous drizzle of quality extra virgin olive oil. Make ahead and store in the fridge or freezer for later use. Be sure to read through my post and watch the video for important tips!

Provided by Suzy Karadsheh

Categories     Condiment

Number Of Ingredients 7

2 cups packed fresh basil leaves
1 to 2 clove garlic (roughly chopped)
1/3 cup pine nuts (or walnuts, toasted)
Juice of ½ lemon
1/2 cup extra virgin olive oil (plus more for storing)
1/2 cup finely grated Parmesan cheese
Kosher salt and black pepper (to taste)

Steps:

  • Quickly blanch the basil. Prepare a bowl of ice water and set aside near your stove. Fill a small saucepan halfway with water and bring to a boil. Drop the basil leaves in the boiling water and blanch for 5 to 10 seconds or until wilted. Using tongs, transfer the basil leaves to prepared ice water to stop cooking.
  • Dry the basil very well. Pick up the basil leaves and wrap them in paper towel and squeeze to wring out all the water.
  • Make the pesto. Place the basil, garlic, pine nuts, and lemon juice in the bowl of a food processor fitted with a blade. With the processor running, slowly pour the extra virgin olive oil. Do not run the processor too long, you want to have a little bit of texture to your basil pesto.
  • Stir in the Parmesan cheese. Transfer the basil mixture to a small bowl. Add the Parmesan cheese and season with salt and pepper to taste. Mix to combine. If needed add a little bit more extra virgin olive oil to mix.
  • Use immediately or store for later (see notes for storage).

FREEZE IT: BASIL PESTO

Freeze It: Basil Pesto image

This simple Italian sauce brings summery flavor to all sorts of dishes, including pizza and pasta. When you plan on freezing pesto, cook the basil briefly in salted water before mixing with the other ingredients; this will help preserve its bright color and fresh taste. Pesto is traditionally made with cheese, but we find it's just as good without (and it freezes better, too). If you like, add a bit of grated Parmesan after pesto has thawed. Other uses for pesto: • spread on a roasted-vegetable sandwich • stir into vegetable soup • thin with water and vinegar for a salad dressing • mix with mayonnaise to make a dip for vegetables • stir into mashed potatoe

Categories     Sauces

Time 1h

Yield 1 3/4 cup

Number Of Ingredients 6

1 cup walnuts or 1 cup pine nuts
coarse salt
pepper
8 cups lightly packed fresh basil leaves (4 ounces)
2 garlic cloves, coarsely chopped
2/3 cup extra virgin olive oil

Steps:

  • Preheat oven to 350°. Spread nuts evenly on a rimmed baking sheet; toast in oven until golden and fragrant, tossing once, 8 to 10 minutes. Let cool completely.
  • Meanwhile, bring 4 cups salted water to a boil; add basil, and submerge with a spoon. Immediately drain in a colander. Rinse with cold water until cool, then pat basil completely dry in paper towels.
  • In a food processor, combine nuts, basil, and garlic; season generously with salt and pepper. Process until nuts are finely chopped. With machine running, pour oil in a steady stream through the feed tube; process until smooth. Use immediately, or freeze. To freeze, spoon pesto into an ice-cube tray (2 tablespoons per cube); cover with plastic wrap. Freeze overnight, then transfer cubes to a resealable plastic bag; keep up to 6 months. Defrost pesto at room temperature, about 20 minutes (or at 30-second intervals in the microwave). Mash with a fork before using in recipes.
