Steps:
- Cut watermelon in halve and slice. Remove seeds if needed. Cube and dice into small pieces. Place in a mixing bowl. Watermelon will naturally produce extra liquid as it sits. Pour off extra liquid before mixing with other ingredients.
- Dice remaining ingredients (red onion, bell peppers, and jalapeno) and put in mixing bowl with watermelon.
- Remove cliantro from stems and roughly chop. Put in mixing bowl.
- Add juice of 1 lime,salt and 2 tablespoons of honey and stir to combine.
- Serve with Tortilla Chips

WATERMELON SALSA
Steps:
- Stir together the lime zest, lime juice, sugar and 3/4 teaspoon pepper in a bowl. Add the watermelon, cucumber, mango, jalapeno, onion and basil and toss gently. Chill the salsa until ready to serve.
- Add the garlic salt just before serving. Serve with chips.
