SESAME SEARED TUNA
Easy, great tasting tuna coated with sesame seeds, and quickly seared. This tuna is served rare, so be sure to use a good quality fresh tuna.

- In a small bowl, stir together the soy sauce, mirin, honey and sesame oil. Divide into two equal parts. Stir the rice vinegar into one part and set aside as a dipping sauce.
- Spread the sesame seeds out on a plate. Coat the tuna steaks with the remaining soy sauce mixture, then press into the sesame seeds to coat.
- Heat olive oil in a cast iron skillet over high heat until very hot. Place steaks in the pan, and sear for about 30 seconds on each side. Serve with the dipping sauce and wasabi paste.

PAN-SEARED TUNA WITH AVOCADO, SOY, GINGER, AND LIME
Steps:
- In a mixing bowl, combine the cilantro, jalapeno, ginger, garlic, lime juice, soy sauce, sugar, salt, pepper, and 2 tablespoons of olive oil. Stir the ingredients together until well incorporated.
- Place a skillet over medium-high heat and coat with the remaining 2 tablespoons of olive oil. Season the tuna generously with salt and pepper. Lay the tuna in the hot oil and sear for 1 minute on each side to form a slight crust. Pour 1/2 of the cilantro mixture into the pan to coat the fish. Serve the seared tuna with the sliced avocado and the remaining cilantro sauce drizzled over the whole plate.
TUNA WITH SESAME CRUST AND BALSAMIC GLAZE

- Mix vinegar and 2 tablespoons water with green onion and ginger in a bowl. Place tuna in mixture, and marinate about an hour.
- To cook, remove tuna from marinade; set marinade aside. Press sesame seeds into both sides of tuna. Heat nonstick pan to medium, and add oil. Quickly sear tuna on both sides, just a couple of minutes -- seeds brown quickly. Remove tuna from pan, pour in reserved marinade, and bring to a boil. Pour over tuna, and serve.

- Make the sauce. Stir-fry the scallions, ginger and garlic in the sesame oil for one to two minutes. Add the remaining ingredients and pour the sauce into a small bowl. Set aside.
- Meanwhile, preheat the grill. Sprinkle the tuna fish with olive oil on both sides and season with salt and liberal grindings of pepper. Grill the fish for two to three minutes on each side for rare, longer if you wish it more well-done. Serve with the sauce on the side.

SESAME TUNA WITH NOODLE STIR FRY RECIPE - BBC FOOD

- For the tuna, place the soy sauce, garlic, ginger and honey into a non-reactive bowl and add the tuna. Coat the tuna steaks in the marinade, cover and transfer to the fridge to marinate for about half an hour.
- For the stir-fry, bring a pan of salted water to the boil. Cook noodles according to packet instruction then drain well and toss with the sesame oil.
- Heat the groundnut oil in a wok over a high heat until smoking then add the garlic and chilli, cook for 30 seconds until fragrant then add all the vegetables and a dash of soy sauce.
- Heat a large frying pan over a high heat until. Remove the tuna from the marinade and pat dry. Sprinkle the sesame seeds onto a plate. Rub the tuna with a little groundnut oil and press both sides into the sesame seeds until coated all over with sesame seeds.

- Meanwhile, make the salad dressing. Put the chilli, soy sauce and chopped coriander stems in a little jug, add the lime juice and whisk. Place the noodles in a bowl. Pour over boiling water, leave for 5 minutes, then drain, rinse in cold water and drain again. Return to a dry bowl, then mix with the chopped coriander and mint leaves.
- Heat a griddle to high, then lift the tuna out of the marinade and cook for 2 minutes on each side (discard the marinade). Remove and slice, then divide the noodles between 2 dishes and serve with the sliced tuna on top and the dressing drizzled over.

- Make the Dressing: In a small bowl whisk together all the ingredients for the dressing. Taste and adjust for seasoning with salt and pepper. Set aside.
- For the Tuna: Season the tuna steak on all sides with chili powder, coriander, ginger, salt and pepper. Place the sesame seeds on a plate and add the tuna, gently pressing to adhere the seeds and turning to fully coat.
- Heat a good drizzle both olive and sesame oil in a medium sauté pan over medium-high heat. Add the tuna and sear, about 30 seconds – 1 minute on each side depending on how cooked through you would like it. (The white sesame seeds should be slightly golden, but the inside of the tuna should be rare.) Transfer the tuna to a clean cutting board and let rest for a minute. Cut the tuna into ¼’’ thick slices.
- Optional: Return the sauté pan to the stove. Add the zucchini noodles and season liberally with salt and pepper. Cook for 3 minutes, or until warmed and al dente. Remove to bowl.
