TAGLIOLINI CON GAMBERETTI



Tagliolini con Gamberetti image

Number Of Ingredients 8

250g (9 oz) shrimp
1 garlic clove, finely chopped
8 tbsp extra virgin olive oil
500g (18 oz) cherry tomatoes, coarsely chopped
1 tbsp coarsely chopped fresh flat-leaf parsley
1 tbsp coarsely chopped fresh basil
350g (12 oz) fresh tagliolini or 400g (14 oz) dried linguine
Salt and pepper and/or chilli pepper to taste

Steps:

  • Peel the shrimps, and halve or quarter if large.
  • Fry the garlic briefly in the olive oil, then add the shrimps and tomatoes and stir-fry for a few minutes. Then add the parsley, basil, salt and pepper and/or chilli to taste.
  • Meanwhile, cook the pasta in boiling salted water until al dente (4-5 minutes for fresh, 8-9 for dried). Drain, mix with the sauce and serve immediately.

2 cups unbleached all-purpose flour plus additional for kneading and rolling
3 large eggs
1 tablespoon water
1 tablespoon olive oil
Special Equipment

Steps:

  • Make dough:
  • Pulse together all ingredients except additional flour in a food processor until mixture just begins to form a ball. Knead dough on a work surface, incorporating additional flour as necessary, until smooth and elastic, about 8 minutes. Divide dough into 4 pieces and keep each wrapped in plastic wrap until ready to roll out.
  • Roll out dough:
  • Set smooth rollers of a pasta machine at widest setting. Flatten 1 piece of dough into a rectangle and feed through rollers. Fold in half and feed through rollers 8 or 9 more times to continue kneading, folding in half each time and dusting with flour as necessary to prevent sticking.
  • Cut pasta:
  • Turn dial to next narrower setting and feed dough through rollers without folding. Continue to feed dough through, without folding, making space between rollers narrower each time until narrowest setting is reached. Halve sheet crosswise and arrange on a dry kitchen towel, letting pasta hang over edge of work surface. Roll out remaining dough in same manner.
  • Attach ribbon-pasta cutters to pasta machine and attach handle to 1/8-inch-wide cutter. Line a tray with a dry kitchen towel. Feed first rolled-out pasta sheet, which will have dried slightly but should still be flexible, through cutter and toss with some flour. Form pasta loosely into a nest and arrange on kitchen-towel-lined tray. Make more taglierini with remaining dough. Cover taglierini with plastic wrap until ready to use.

Steps:

  • Mound flour on a large surface. Make a well in the center and add the rest of the ingredients. Stir them up, incorporating flour from sides until the dough is the right consistency. Knead the dough a bit. Form it into a ball and cover in plastic to rest for 30 minutes. Roll it out and cut it into .25-inch thick strips. Add to boiling water for 6 to 8 minutes.

  • To prepare pasta, lightly spoon flours into dry measuring cups; level with a knife. Combine flours and 1/4 teaspoon salt in a food processor; process 30 seconds. Combine 5 tablespoons water, 2 tablespoons olive oil, and eggs in a bowl, stirring well with a whisk. With processor running, pour water mixture through the food chute, processing just until dough forms a ball. Turn dough out onto a lightly floured surface; knead 5 or 6 times. Shape dough into a disk. Dust dough lightly with flour; wrap in plastic wrap. Let stand 30 minutes.
  • Divide dough into 3 equal portions. Working with 1 portion at a time (cover remaining dough to prevent drying), press dough into a flat rectangle. Roll the dough into a 14 x 14–inch square, dusting with flour, if necessary (turning dough over occasionally and dusting surface with flour as needed). Lay dough sheet flat; fold ends so they meet in the middle. Fold the sheet in half like closing a book. Fold in half again to form 8 layers of pasta. Using a sharp knife, cut the pasta crosswise into 1/4-inch-wide noodles. Separate noodles, and dust with flour. Place noodles on a jelly-roll pan dusted with flour. Repeat procedure with remaining dough portions.
  • Bring 6 quarts water and remaining 1 tablespoon salt to a boil in a large Dutch oven. Place noodles in a sieve; shake off excess flour. Add noodles to pan. Cook 1 1/2 minutes or until done; drain.
  • To prepare sauce, heat 2 tablespoons oil in a large nonstick skillet over medium-low heat. Add garlic to pan; cook 3 minutes, stirring frequently (do not brown). Remove from heat. Stir in tomatoes and remaining ingredients. Toss with noodles.
