1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
3 cups fresh strawberries, cut in half lengthwise
1/4 cup all-purpose flour
1/4 cup sugar
1/4 cup butter or 1/4 cup margarine, chilled

Steps:

  • Beat 1/4 cup softened butter at medium speed with an electric mixer; gradually add 3/4 cup sugar, beating well.
  • Add egg and vanilla, beating well.
  • Combine 1 1/4 cup flour, baking powder, and salt; add to butter mixture alternately with milk, beginning and ending with flour mixture.
  • Spoon mixture into a greased 8-inch square baking dish.
  • Arrange strawberries on top, cut side down.
  • Combine 1/4 cup flour and 1/4 cup sugar; cut in 1/4 cup chilled butter with pastry blender until crumbly.
  • Sprinkle over strawberries.
  • Bake at 350 degrees for 1 hour or until a wooden pick inserted in center comes out clean.
  • Serve warm with ice cream or whipped cream.

3 cups fresh strawberries (diced)
1/2-3/4 cup granulated sugar
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup sugar
1 cup whole milk (warm)
1/2 teaspoon vanilla extract
8 tablespoons unsalted butter (melted)

Steps:

  • Preheat oven to 375. F
  • Grease a 1.8 liter casserole dish. (my oval corning ware dish was 11 x 8½ x2)
  • In a medium bowl, add strawberries and sugar.
  • Stir to coat strawberries in sugar and set aside.
  • In a large bowl whisk together flour, baking powder, salt and sugar.
  • Add in milk, vanilla extract and melted butter.
  • Stir just until combined. A few lumps are ok so don't overdo it.
  • Pour batter evenly into dish.
  • Spoon strawberries evenly on top of batter. Do NOT stir.
  • Baked for 35-40 minutes or until golden. (may need to adjust time if using a different size dish)
  • Serve as is or with vanilla ice cream or frozen whipped cream.

2 quarts fresh strawberries, hulled and halved, with larger ones quartered (about 2 lb. strawberries)
1 tablespoon lemon zest plus 2 Tbsp. fresh lemon juice (from 1 large lemon)
1 cup granulated sugar, divided
½ cup butter
1 cup all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon kosher salt
¼ teaspoon baking soda
1 cup whole buttermilk
1 teaspoon vanilla extract
Sweetened whipped cream or vanilla ice cream

Steps:

  • Preheat oven to 350°F. Gently stir sliced strawberries, lemon zest, lemon juice, and ¼ cup of the sugar in a large bowl until totally combined. Let strawberry mixture stand, stirring occasionally, until juicy, about 15 minutes.
  • Place butter in a 13- x 9-inch baking dish, and put dish in pre-heated oven until butter is melted, 8 to 10 minutes. Remove dish from oven.
  • Whisk together flour, baking powder, salt, baking soda, and remaining ¾ cup sugar in a medium bowl until combined. Whisk together buttermilk and vanilla in a glass measuring cup. Whisk buttermilk mixture into flour mixture, and continue to whisk until batter is smooth. Pour mixture evenly over melted butter in hot baking dish. (Do not stir.) Using a slotted spoon, scatter strawberry mixture evenly over batter. Drizzle 3 tablespoons of accumulated juice from bottom of bowl over strawberries. Discard any remaining juice, or reserve for another use.
  • Bake in preheated oven until batter is puffed and slightly golden in the center and dark golden brown around edges, 40 to 45 minutes. Cool on a wire rack at least 15 minutes. Serve warm with whipped cream or ice cream.

1 cup white sugar

1 (4 ounce) package cream cheese, cut into small pieces

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Pour melted butter into the bottom of a 9x13-inch glass baking dish.
  • Mix milk, flour, sugar, baking powder, and salt together in a small bowl; pour over the butter in the baking dish. Arrange strawberry halves in a layer into the baking dish. Dot the strawberries with the cream cheese pieces.

1 cup all-purpose flour
1 1/4 cups sugar, divided
1 teaspoon baking powder

1/2 cup skim milk
1 tablespoon cornstarch
1 cup cold water
additional berries (to garnish)

Steps:

  • Preheat oven to 375°F.
  • Rinse and hull berries.
  • Place berries in a 9" square pan and set aside.
  • Combine flour, 1/2 Cup sugar, baking powder and salt in a large bowl.
  • Use a pastry blender or two knives to cut in margarine until coarse crumbs form.
  • Stir in milk.
  • Spoon the mixture over the berries.
  • Combine the remaining 3/4 Cup sugar and cornstarch in a large bowl.
  • Stir in water until sugar mixture dissolves.
  • Pour over berry mixture.
  • Bake 35-40 minutes or until lightly browned.
  • Serve warm or cool, garnished with additional berries.

4 and ½ cup fresh strawberries (hulled and cut into quarters)
1/4 cup granulated sugar (you can adjust this depending on sweetness of berries)
1 tablespoon cornstarch
4 teaspoon cold water
1 and ½ cup all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup old fashioned oats
2 tablespoon brown sugar
2 tablespoon cold butter (cut into cubes)
1 cup heavy cream
1/4 teaspoon vanilla extract
2 tablespoon granulated sugar ( for top)

Steps:

  • In a large pan, place strawberries and sprinkle 1/4 cup sugar over berries and allow to sit 15 to 30 minutes. After time has elapsed, heat to medium heat. Stir together cornstarch and cold water and stir until cornstarch is dissolved. Pour over berries and bring to a boil, stirring and scraping bottom of pot constantly. Remove from heat and set aside.Cobbler
  • Combine flour, salt, baking powder, oats and brown sugar. Cut in butter until mixture resembles wet sand. Add heavy cream and vanilla. Stir until combined. This mixture will be thick and crumbly. Do no over-mix.
  • Pour strawberry into ramekins or 8.5x11 inch casserole dish. spoon topping over filling, it will be clumpy. Sprinkle top of batter with 2 tablespoon granulated sugar. Bake at 350 degrees F 30 to 40 minutes if using a large casserole dish or 20 to 25 minutes if using small ramekins.

1 cup unsalted butter, (softened)
2 cups granulated sugar
3 large eggs
3 tablespoons lemon juice (divided)
Zest of 1 lemon
2 1/2 cups all-purpose flour, (divided)
1/2 teaspoon baking soda
1/2 teaspoon salt
8 ounces Greek yogurt, (plain or vanilla)
12 ounces fresh strawberries (diced)
1 cup powdered sugar

Steps:

  • Preheat oven to 375 degrees F. Grease and flour a 10-inch Bundt pan (10-15 cup pan). In a large bowl, sift together 2 1/4 cups of flour, baking soda, and salt. Mix in the lemon zest and set aside.
  • In a separate bowl, use an electric mixer to cream together the butter and sugar until light and fluffy, 3-5 minutes. Beat in the eggs one at a time, then stir in 1 tablespoon lemon juice. Alternate beating in the flour mixture and the yogurt, mixing just until incorporated.
  • Toss the strawberries with the remaining 1/4 cup of flour. Gently mix them into the batter.
  • Pour the batter into the Bundt pan. Place in the oven and reduce the temperature to 325 degrees F. Bake for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Allow to cool at least 20 minutes in the pan, then turn out onto a wire rack and cool completely. Once cooled whisk together the remaining 2 tablespoons of lemon juice and the powdered sugar. Drizzle over the top of the cake.

Steps:

  • Preheat the oven to 350 degrees F.
  • Lightly spray a 13x9 baking dish with cooking spray.
  • Clean and cut the strawberries and add them to a large bowl.
  • Add the flour, ¼ cup sugar and vanilla to the strawberries and toss to coat, set aside.
  • In a medium bowl, whisk together the flour, 1 cup sugar, baking powder and salt.
  • Cut the butter into pieces and blend it into the flour mixture until small crumbles form.
  • Gradually add in the milk and stir after each addition until well combined.
