1 pound ground beef
1 medium onion, chopped
1 clove garlic, minced, or more to taste
1 (10 ounce) can sliced mushrooms, drained
1 teaspoon dried oregano
2 dashes hot pepper sauce, or more to taste

2 (10 ounce) packages frozen chopped spinach, thawed and drained
1 (10 ounce) can condensed cream of celery soup
1 cup sour cream
1 (8 ounce) package grated mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, and garlic in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add mushrooms, oregano, hot sauce, salt, and pepper. Simmer for 5 minutes. Add spinach, soup, and sour cream; cook until heated through, about 5 minutes.
  • Transfer to a casserole dish and cover with mozzarella cheese.
  • Bake in the preheated oven until cheese is melted, 15 to 20 minutes.

This mammoth plate of food features three eggs, a half-pound of meat, and more than enough spinach. Apparently a late-night patron requested his spinach omelet include a hamburger patty, and this is what happened. In respect to good ol' made-up 'Joe,' I've kept the original portions, so feel free to share with a friend or three. This version is mostly meat and spinach, but if you want something closer to a classic scramble, then cut the beef and spinach amounts in half. This is how most restaurants that copy the recipe do it!

3 eggs, beaten
1 teaspoon chopped fresh basil
1 teaspoon chopped fresh oregano
1 tablespoon olive oil
⅓ cup diced onion
salt and ground black pepper to taste
½ cup sliced mushrooms
½ pound lean ground chuck
½ cup cooked chopped spinach, squeezed dry, or more to taste
2 tablespoons grated Parmigiano-Reggiano cheese, or more to taste

Steps:

  • Beat eggs, basil, and oregano together in a bowl.
  • Heat oil in a large skillet over medium-high heat. Saute onions with a pinch of salt in hot oil until onion is translucent, 4 to 6 minutes; add mushrooms with another pinch of salt. Saute mushrooms and onion until mushrooms are soft and brown around the edges, 4 to 6 minutes more.
  • Stir ground beef, pepper, and salt into the mushroom mixture. Cook and stir until meat is lightly browned and crumbly, 1 to 3 minutes. Turn off the heat. Push all meat to one side of the skillet and tilt the skillet so that the excess grease runs down to the bottom of the pan. Use a paper towel to blot the grease.
  • Stir spinach into beef mixture and cook over medium heat until spinach is heated through, about 1 minute. Add eggs; cook and stir until eggs are set, 3 to 4 minutes. Season with salt and pepper and top with Parmigiano-Reggiano cheese.

1 medium onion, chopped
2 jars (24 ounces each) spaghetti sauce
4 garlic cloves, minced
1 teaspoon dried basil

2 cups ricotta cheese
2 cups shredded part-skim mozzarella cheese, divided
9 no-cook lasagna noodles
Minced fresh basil, optional

Steps:

  • Preheat oven to 375°. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; crumble beef drain. Stir in the spaghetti sauce, garlic, basil and oregano. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. In a large bowl, mix together the spinach, ricotta and 1 cup mozzarella cheese., Spread 1-1/2 cups meat sauce into a greased 13x9-in. baking dish. Top with 3 noodles. Spread 1-1/2 cups sauce to edges of noodles. Top with half of the spinach mixture. Repeat layers. Top with the remaining noodles, sauce and 1 cup mozzarella cheese., Cover and bake for 30 minutes. Uncover; bake until bubbly, 10-15 minutes longer. Let stand for 10 minutes before cutting. If desired, top with minced fresh basil.

1 lb ground beef (80/20 or leaner)
1 medium onion, diced
8 oz fresh button mushrooms, sliced
1 clove garlic, minced
2 - 12oz packages of frozen spinach
salt and pepper to taste
1/2 cup long grain white rice, measurement based on dry (or rice of your choice) prepared according to package directions.
1 tsp dried oregano
1 cup sour cream
1 Tbs butter
3/4 cup milk or cream
8 oz shredded Monterrey Jack Cheese

Steps:

  • Preheat oven to 350F.
  • In a large skillet or dutch oven, combine the 1lb ground beef, 1 diced onion, 8oz fresh sliced mushrooms, 1 clove of minced garlic, and 1 tsp oregano and cook over medium heat until meat is browned and the vegetables are softened and fragrant.
  • While the beef mixture is browning, microwave the frozen spinach to defrost it. I microwaved it in a microwave safe bowl for 4 minutes. Then, remove from the microwave and over the sink, press the spinach up against the sides of the bowl to extract excess liquid and drain off the liquid. You can also use cheesecloth or a sieve if you prefer.
  • Once the spinach is fully strained, add it to the browned beef mixture and toss to combine.
  • Next, combine the rice, 1 tsp oregano, 1 cup sour cream, 1 Tbs butter and 3/4 cup of milk in a small bowl and stir until combined and creamy. If the rice isn't warm and the butter doesn't melt, you can microwave it for 45 seconds.
  • Add the creamy rice mix to the beef and spinach mixture and then pour it all into a medium to large sized rectangular casserole dish and spread evenly to all sides.
  • Sprinkle 8 oz shredded Monterrey Jack Cheese evenly over the top of the casserole.
  • Bake for 35 - 40 minutes or until the casserole is bubbling and the cheese on top is melty and slightly browned.
  • Allow to rest for 5 minutes after removing from the oven before slicing.

1 cup finely chopped onion
1 tablespoon minced fresh garlic
2 (10 oz) boxes frozen chopped spinach, thawed and squeezed dry
4 ounces cream cheese, softened
1 (10.5 oz) can condensed cream of mushroom soup, NOT diluted
½ cup sour cream, at room temperature
½ cup milk, at room temperature
½ teaspoon kosher salt
2 cups shredded mozzarella cheese, divided
¾ cup French-fried onions

Steps:

  • Preheat oven to 350 degrees F. Spray a 2-quart baking dish with cooking spray and set aside.
  • In a large skillet, cook beef, onion and garlic over medium heat until no longer pink; drain.
  • Stir in the spinach, cream cheese, condensed soup, sour cream, milk, salt and 1 cup of the mozzarella cheese. Stir over low heat, just until combined.
  • Transfer to the prepared baking dish. Cover with foil. Bake for 20 minutes. Remove the foil; sprinkle with the remaining 1 cup of mozzarella cheese and the French-fried onions. Bake for 10 more minutes, or until the cheese is melted and the casserole is hot and bubbly.

2 Cups of your favorite pasta, cooked and drained.
500 g or 1 lb Ground beef, pork, chicken or soya
1 Package of fresh or frozen spinach (I have tried the recipe out using both and they work very well, so choose whatever you can buy!)
1 medium onion chopped
3 cloves garlic finely chopped
2 teaspoons Worcestershire Sauce, or Balsamic Vinegar
2 Tablespoons Cornstarch
Salt & Pepper
** I also used a handful of sliced mushrooms for added texture.
You can also add some fresh basil / thyme etc when cooking the meat.
3 Tablespoons butter
40 g / 1/3 cup All Purpose Flour
300 ml / 1 1/4 cups Milk, I used skimmed milk
300 ml or 1 1/4 cups Chicken Broth
150 g / 1 1/2 cups grated cheese
Choose your favourite cheese. I used Cheddar.
Salt & Pepper

Steps:

  • Make the meat filling. Peel & chop onion, garlic (and mushrooms if using) then add to a pan with 1 tablespoon olive oil.
  • Lightly fry until the onions are soft and translucent (not brown as this will make them taste bitter)
  • Add your meat and cornstarch and cook, stirring in the pan with the other ingredients. Add the spinach and Worcestershire Sauce and leave to simmer very low whilst you make the cheese sauce. Season if you wish with salt & pepper.
  • Make the Cheese Sauce. Melt butter in pan under gentle heat
  • Add Flour and beat until smooth paste and take pan off the heat.
  • Slowly add the milk and broth (combine them in to one jug for ease), a little at a time and combine until smooth, then add a little more of the milk / broth, combine. Continue until all the milk / broth is used.
  • Return to gentle heat, and keep stirring until thick This will take about 5 minutes so be patient and keep stirring!. Season with salt and pepper if you wish. (your cheese may be salty so taste the sauce first!)
  • Add 3/4 of the grated cheese and combine. The remaining 1/4 of the cheese is for the top of the bake.
  • Build the Pasta Bake. Preheat oven to 170 C / 325 F / Gas 3
  • Start with a layer of 1/3 of the meat sauce on the bottom of the pan, then a layer of cooked pasta, then cheese sauce. Repeat these layers, ending with the cheese sauce as the final top layer. Then sprinkle the remaining grated cheese on top.
  • *** you should be able to make 3 layers altogether.
  • Place in the oven for 45 minutes. I would advise to place the bake on a baking tray to catch any drips. When done, remove and leave to set for 30 minutes. If you try and cut the bake when it is piping hot it is too slushy. Allow to firm up a little then you can make nice portions and get the bake from the pan using a fish slice.

10 ounces fresh spinach, stemmed and washed
1/2 cup fresh cilantro stem
1/4 cup fresh mint leaves
1/4 cup canola oil
1 cinnamon stick (1-inch piece)
8 green cardamom pods
6 whole cloves
4 garlic cloves, finely minced
2 inches piece fresh ginger (peeled and grated)
1 large onion, quartered, then sliced 1/2-inch thick
1 fresh hot green chili pepper, cut crosswise into 1/2-inch rounds
1 teaspoon salt (to taste)
1 1/2 lbs lean ground beef
1/2 teaspoon ground black pepper
1 cup plain yogurt, whisked until smooth
1/2 teaspoon garam masala

Steps:

  • For the green paste, bring 2 inches of water to a boil in a large saucepan over high heat. Add the spinach and stir. Cover and steam, stirring every now and then, until wilted, about 5 minutes. Puree in a blender (with any remaining water) along with the cilantro and mint leaves. Set aside.
  • Heat the oil with the cinnamon stick, cardamom, and cloves in a large, heavy-bottomed casserole over medium-high heat and cook, stirring, until the cinnamon unfurls, about 2 minutes.
  • Add the garlic and ginger and cook stirring, 1 minute. Add the onion, green chile, and salt and cook, stirring, until the onion begins to brown around the edges, 8-10 minutes.
  • Stir in the beef and black pepper and cook, stirring, 5 minutes. Add the yogurt 2 tablespoons at a time and stir well after each addition. Simmer gently, stirring every now and then, for 5 minutes. Add the green paste, bring to a boil, reduce the heat and simmer 5 more minutes.
  • Stir in the garam masala and cook 1 more minute. Taste for salt, Serve hot.

1 lb no-boil lasagna sheets
1 1/2 lbs ground chuck
4oz pancetta, diced
28 oz can fire roasted crushed tomatoes
5 tbsp olive oil (divided in the instructions)
16 oz skim ricotta cheese
2 eggs
10 oz fresh spinach, roughly chopped
5 cloves garlic, minced
1/2 yellow onion, chopped (1/3 cup)
2 tbsp fresh thyme, removed from stem
2 tsp crushed red pepper flakes
2 tsp kosher salt, divided
1/2 tsp fresh ground black pepper
1 tsp dried oregano
1/2 cup fresh basil, roughly chopped + more for garnish
12oz shredded mozzarella cheese
1/4 cup grated parmesan reggiano cheese
5 tbsp unsalted butter
1/2 cup flour
3 cups whole milk, room temp
Pinch grated or ground nutmeg

Steps:

  • Preheat oven to 375 degrees F.
  • In a dutch oven or large skillet, over medium heat, add 1 tbsp of olive oil and 1 tbsp of minced garlic. Sauté for 1 minute until fragrant then add in chopped spinach. Sauté until spinach begins to wilt, about 4 minutes. Remove with a spoon and set aside in a bowl.
  • In the same dutch oven, turn heat up to medium/high, add 2 tbsp of olive oil and the diced pancetta. Cook until it begins to crisp up about 4 minutes. Add in the ground beef, 1 tsp of kosher salt, 1/2 tsp of black pepper and cook until beef is browned and cooked through. Reserve 2 tbsp of the juice, drain the beef and set aside in a bowl. Mix in the 1/2 cup of basil into the spinach mixture.
  • In the same dutch oven over medium heat, add 2 tbsp of olive oil and the chopped onions. Sauté for about 4-5 minutes until they begin to soften. Add the rest of the minced garlic, 2 tbsp fresh thyme leaves, and sauté for a minute. Add in the can of fire roasted tomatoes, 2 tsp crushed red pepper flakes, 1 tsp kosher salt, fresh ground black pepper, 1 tsp oregano. Mix all together, lower the heat and cover, to allow the flavors to meld while you make the bechamel sauce.
  • In a small saucepan over medium heat, melt 5 tbsp of butter. Once fully melted, slowly whisk in the flour constantly stirring so no lumps remain. Slowly add the milk while whisking continuously and grate some fresh nutmeg into the sauce. Allow the sauce to thicken for 10 minutes, stirring frequently so the sauce doesn't burn. Taking a wooden spoon dip it in the sauce, run your finger on the spoon (careful it's hot) and if the sauce doesn't run together, then it's ready.
  • Going back to the red sauce, using an immersion blender, smooth out the sauce. Taste and adjust salt if necessary. Add in the bechamel sauce and stir to combine, it should now be a pink color. Turn heat off.
  • In a small bowl, whisk 2 eggs and then add the ricotta cheese and mix until combined, set aside
  • In a rectangular baking dish, spoon a thick even layer of the tomato bechamel sauce onto the bottom of the dish (1/3 of the sauce). Then add a layer of lasagna sheets side by side. Using a spatula smooth half of the ricotta mixture over the pasta, followed by half of the spinach mixture. Add another layer of pasta, followed by the beef, and then 1/2 of the mozzarella cheese. Spoon another layer (1/3) of the tomato bechamel sauce, followed by another layer of pasta sheets. Smooth the rest of the ricotta over the pasta sheets and add the rest of the spinach over that. Add the final layer of pasta sheets, followed by the tomato bechamel, the rest of the mozzarella, and freshly grate parmesan over the top. I like to take a few pieces of butter and disperse them over the top so it gives you that golden brown top.
  • Cover with foil and place in the oven. If your lasagna is full to the brim, you can grab a baking sheet, cover with foil, and place the dish on top of that for any spillover. Bake for 35 minutes, then remove foil and low broil for 10 minutes until the cheese is brown and bubbly. Garnish with fresh basil and serve with a spatula.
