Blueberry Upside-Down Cake image

A lemony cake is baked over scrumptious blueberries in a springform pan. Invert the cake so that the blueberries are on top! Serve warm with fresh whipped cream.

2 cups fresh blueberries
½ cup white sugar
2 tablespoons all-purpose flour
2 tablespoons grated lemon zest
½ cup butter, softened
1 cup white sugar
3 eggs
1 teaspoon almond extract
1 tablespoon grated lemon zest
¾ cup milk
2 cups all-purpose flour
4 teaspoons baking powder
½ cup slivered almonds, toasted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch springform pan. In a medium bowl, combine blueberries, 1/2 cup sugar, 2 tablespoons flour and 2 tablespoons grated lemon zest. Toss to coat berries, then pour into the prepared pan.
  • In a large bowl, cream together the butter and 1 cup sugar until light and fluffy. Beat in the eggs one at a time, then stir in the almond extract and 1 tablespoon grated lemon zest. Stir together 2 cups flour and the baking powder. Beat into butter mixture alternately with the milk, mixing just until incorporated. Pour batter over the berries in the pan.
  • Bake in the preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of the cake comes out clean. Place serving plate over the top of the pan and carefully invert cake and plate together, so that the berries end up on top. Carefully unlock the buckle on the side of the pan and remove. Sprinkle toasted almonds on top of cake and serve warm.

1 ½ teaspoons baking powder
¼ teaspoon salt
3 tablespoons margarine
¼ cup brown sugar
⅓ cup margarine

4 black plums, pitted and thinly sliced
¾ cup blueberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch cake pan. Combine the flour, baking powder and salt. Set aside.
  • In the prepared pan, combine 3 tablespoons margarine and brown sugar. Place pan inside the preheated oven until the margarine melts and begins to bubble. Set aside. In a large bowl, cream together the 1/3 cup margarine and 1 cup white sugar until light and fluffy. Beat in the egg, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated.
  • Arrange plums around the edges of the prepared pan, overlapping slightly. Distribute the blueberries in the center. Pour batter into prepared pan, covering fruit completely. Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool 15 minutes before serving.

This beautiful Plum Upside-Down Cake features plums in a delicious butterscotch sauce on top of a tender spiced cake. The cake recipe is easy to make and can be used to make a variety of upside-down cakes. Try this recipe with nectarines, peaches, pineapple, and even blueberries.

3 tablespoons unsalted butter (softened)
⅓ cup brown sugar (packed)
4-5 fresh plums (you'll need enough plums to cover the bottom of an 8 inch pan, pitted and thinly sliced.)
6 tablespoons unsalted butter (at room temperature)
⅓ cup light brown sugar (packed)
1 large egg (at room temperature)
1 teaspoon pure vanilla extract
½ cup sour cream (at room temperature, I used full-fat)
1 cup all-purpose flour
½ teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon ground cardamom (optional)
¼ teaspoon ground ginger (optional)
¼ teaspoon sea salt

Steps:

  • Place a rack in the middle of the oven and heat oven to 325ºF.
  • Add 3 tablespoons of butter to an 8 inch cake pan. While the oven is preheating, place the pan in the oven to melt the butter. Add 1/3 cup brown sugar to the pan and spread it so that it evenly covers the bottom of the pan. Arrange the sliced plums in concentric circles and overlapping the slices slightly. Set the pan aside.
  • In a medium bowl, sift the all-purpose flour, baking soda, cinnamon, cardamom, ginger and salt. Whisk to combine and set aside.
  • In the bowl of your mixer, add the butter and brown sugar and beat on medium-high for 3 minutes or until mixture is fluffy.
  • Add the egg and beat until blended.
  • Add the sour cream and vanilla extract and beat until smooth.
  • Scrape the sides and bottom of the bowl before gradually adding the flour mixture on low-speed. Once the flour has been incorporated, increase the speed of the mixer and beat until batter is smooth, don't over-beat the batter.
  • Spoon batter into the pan and spread it gently and evenly onto the plums.
  • Bake for approximately 35 to 40 minutes or until a toothpick inserted in the middle of the cake comes out clean.
  • Cool cake on wire rack for 10 to 15 minutes before running a knife along the side of the pan. Place a serving plate over the cake pan and invert cake onto the plate.
  • Serve the cake warm or at room temperature. Cake can be served plain or with lightly sweetened whipped cream or vanilla ice cream.

1/2 cup packed brown sugar
1-3/4 to 2 pounds medium plums, pitted and halved
2 large eggs, room temperature
2/3 cup sugar
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup hot water
1/2 teaspoon lemon extract
Whipped cream, optional

Steps:

  • Melt butter in a 10-in. cast-iron or ovenproof skillet. Sprinkle brown sugar over butter. Arrange plum halves, cut side down, in a single layer over sugar; set aside. , In a large bowl, beat eggs until thick and lemon-colored; gradually beat in sugar. Combine the flour, baking powder and salt; add to egg mixture and mix well. Blend water and lemon extract; beat into batter. Pour over plums. , Bake at 350° until a toothpick inserted in the center comes out clean, 40-45 minutes. Immediately invert onto a serving plate. Serve warm, with whipped cream if desired.

A quick and simple moist, dense cake with the flavour of plums and brown sugar. Feel free to use any fruit or berries you like instead of the plums. I used half whole wheat and half all purpose flour when I made this and also used light cream cheese and fat free yogurt. Cup measurements are estimates as I normally use grams.

1 1/4 cups light brown sugar (120g)
1/2 cup cream cheese (100g)
2 eggs
1/2 cup yogurt (120g)
1 1/2 cups flour (170g)
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 pinch salt
1 -2 cup plum, chopped (200g)
1 tablespoon flour

Steps:

  • Preheat oven to 350/180/Gas 4 and grease a round 9 inch/24cm pan.
  • Toss chopped plums (or other fruit) with 1 tablespoon flour.
  • In a small bowl, whisk together flour, baking powder, baking soda and salt and set aside.
  • In a large bowl, beat cream cheese to soften then beat in brown sugar.
  • Add eggs one at a time, beating throughly after each addition.
  • Add half the flour mix to the cheese mix and fold then add the yogurt and stir to combine.
  • Add the rest of the flour mix and beat until smooth.
  • Fold in the floured plums.
  • Spread batter into prepared pan and bake for around 30 minutes.

1 teaspoon vanilla extract

1/4 teaspoon salt
1/4 teaspoon cinnamon
1 cup milk or 1 cup buttermilk
4 plums, chopped
1/2 cup walnuts, chopped (optional)

Steps:

  • Cream butter and sugars together in a mixing bowl.
  • Add applesauce and vanilla, beating until fluffy.
  • In a separate bowl, combine dry ingredients and add to sugar mixture alternately with milk.
  • Stir in plums and walnuts, if desired.
  • Spread into a greased 13 x 9 baking pan or a loaf pan and bake at 350 F or 160 C for about 35 minutes (a loaf pan may require slightly longer) or until a toothpick inserted near the centre comes out clean.

1/2 teaspoon salt
3/4 cup milk
6 tablespoons margarine
3/4 cup white sugar

2 tablespoons butter
1/4 cup brown sugar
2 cups blueberries

Steps:

  • Combine flour, baking powder and salt in a bowl.
  • In another bowl, cream butter and white sugar, then beat in each egg until light and fluffy.
  • Add dry ingredients and milk alternately to creamed mixture, beating until well mixed.
  • Put aside.
  • Melt butter in 9 x 9 or bigger pie plate; thoroughly coat surface.
  • Sprinkle brown sugar over bottom of plate, then top with blueberries. (cover all the sugar).
  • Spoon batter over fruit and bake at 350F for 30 - 45 min or until cake is a light golden colour and tests done.
  • Remove from oven and let cool for 5 - 10 minutes before inverting onto serving plate.
  • Enjoy!

180 g vegan butter
130 g brown sugar
3 medium plums, sliced as thin as possible
55 g blueberries
3/4 cup soymilk
1 teaspoon lemon juice
1 tablespoon vegan egg replacer powder
3 tablespoons water
zest of one lemon
180 g white sugar
160 g flour
2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Preheat oven to 350°F or 180°C
  • In a small skillet, melt half of the butter, 90 grams. Pour into a lined 9 inch cake pan.
  • Add the brown sugar and stir it evenly across the surface of the pan.
  • Arrange the plum slices around the edge of the pan in a couple of overlapping layers. Place the blueberries in the center.
  • Measure out the soy milk. Add in the lemon juice which will curdle it! Whisk in the vegan egg replacer powder and the water until completely combined.
  • Get out the Thermomix! Combine the remaining butter, 90 grams - the sugar and the lemon zest. Blitz until combined. 5-10 seconds/speed 5.
  • Add the flour, baking powder and salt. Pour the soy milk/egg replacer mixture over all. Mix 20 seconds/speed 4. Scrape down sides. Mix 10 second/speed 3.
  • Pour batter over plums and blueberries.
  • Bake at 350°F or 180°C until a cake tester comes out clean - about 50 minutes.
  • Let rest in pan 10 minutes, then invert onto the serving dish. Beautiful!
