¼ cup almond flour (packed, 30 g)
A pinch of kosher salt
¼ cup granulated sugar (44 g)
2 oz unsalted butter (57 g)
½ teaspoon almond extract
¼ cup almond slice (25 g)
1 cup all-purpose flour (130 g)
¼ cup granulated sugar (44 g)
¼ teaspoon kosher salt (1 g)
¼ teaspoon baking soda (1 g)
1 ½ teaspoon baking powder (6 g)
1 ½ oz unsalted butter (43 g)
½ cup buttermilk (127 g)
½ teaspoon pure vanilla extract
½ teaspoon pure almond extract
4 large peaches (just over 2 lbs, peeled and diced yields 873 g)
1 tablespoon fresh squeezed lemon juice (14 g)
¼ cup brown sugar (lightly packed, 50 g)
A big pinch of kosher salt
½ teaspoon cinnamon (2 g)
1 tablespoon tapioca flour (8 g)

Steps:

  • Combine flour, almond flour, sugar, and salt in a small bowl, mix together thoroughly with a whisk. Cut the cold butter into small cubes and add to the dry mixture. Use a pastry blender to cut the butter into the dry mixture until coarse crumbs form.
  • Add almond extract and almond slice, use a fork to mix. Cover and refrigerate until ready to use.
  • Add flour, sugar, salt, baking soda and baking powder to a medium mixing bowl and mix with a whisk to combine. Toss the cubed butter in the flour mixture and work it into the flour with the tip of your fingers until about pea size and larger.
  • Make a well in the middle of the flour mixture and pour in buttermilk, vanilla extract and almond extract. Fold with a spatula or wooden spoon until a wet dough forms. Cover and refrigerate until ready to use.
  • Preheat the oven to 375°F.
  • Peel and dice the peaches into bite size pieces. Add peaches and lemon juice to a medium mixing bowl.
  • Whisk together the brown sugar, salt, cinnamon and tapioca flour in a small bowl and sprinkle over the peaches. Toss gently with a spatula until evenly coated. Transfer peach cobbler filling to a 9" square baking pan.
  • Using a small ice cream scoop or a tablespoon, drop spoonfuls of biscuit dough on top the peach filling evenly. Then sprinkle almond streusel over the top.
  • Bake for 40 - 45 minutes until the topping is golden brown and the filling is bubbling.
  • Remove from the oven and allow to cool enough to handle before serving.

3 pounds yellow peaches (7 medium peaches), peeled, pitted and cut into ¼-inch slices
2 tablespoons lemon juice, from 1 lemon
⅔ cup sugar
3 tablespoons cornstarch
1¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
1 cup all purpose flour, spooned into measuring cup and leveled-off with a knife
7 tablespoons sugar, divided
1¼ teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon salt
5 tablespoons cold unsalted butter, cut into small chunks, plus more for greasing the pan
⅔ cup buttermilk (see note)
¾ teaspoon vanilla extract
Vanilla ice cream or sweetened whipped cream

Steps:

  • Preheat the oven to 375°F. Lightly butter a 9-inch square or 2.5-quart baking dish.
  • Make the peach filling: In a large bowl, combine the peaches, lemon juice, sugar, cornstarch, cinnamon, and nutmeg. Mix until well combined and the peaches are evenly coated. Set aside.
  • Make the biscuit topping: In a medium bowl, combine the flour, 6 tablespoons of the sugar, the baking powder, baking soda and salt. Add the butter and rub in with your fingers, or blend with a pastry cutter, until the mixture resembles coarse crumbs. In a liquid measuring cup, combine the buttermilk and vanilla extract. Add the buttermilk-vanilla mixture to the flour mixture and stir with a spoon until evenly moistened. Do not overmix; the batter will look lumpy.
  • Assemble and bake the cobbler: Transfer the peach filling to the prepared baking dish and flatten into an even layer. Drop the batter in 6 large, evenly spaced dollops on top of the peaches. Sprinkle the remaining 1 tablespoon of sugar evenly over the batter. Bake until the fruit is bubbling and the top is golden, 40 to 45 minutes. Let cool for about 1 hour, then serve with vanilla ice cream or sweetened whipped cream.
  • Cover any leftover cobbler loosely with a kitchen towel. (Do not cover with plastic wrap or the biscuit topping will get soggy.) Reheat in a 325°F oven for about 15 minutes.

  • Make-Ahead Instructions: The cobbler can be made one day ahead and kept, covered with foil, at room temperature. Reheat, covered with foil, in 300°F oven for 25 minutes, then remove the foil and continue reheating for 15 to 20 minutes more, or until warmed through.

8 fresh peaches - peeled, pitted and sliced into thin wedges
¼ cup white sugar
¼ cup brown sugar
¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
1 teaspoon fresh lemon juice

1 cup all-purpose flour
¼ cup white sugar
¼ cup brown sugar

Steps:

6 large fresh peaches, pitted and cut into eighths
1 lemon, zested and juiced
½ cup unsalted butter, at room temperature
1 ¼ cups white sugar
1 ⅓ cups self-rising flour
⅓ cup rolled oats
⅔ cup whole milk
¼ cup white sugar
2 tablespoons cold water, or as needed to wet topping sugar

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Place a baking sheet on the rack under the middle rack to catch drips. Generously butter a 2-inch deep (2-quart) baking dish.
  • Place peach sections into prepared baking dish. Sprinkle with lemon juice and zest.
  • Stir butter and sugar together in a mixing bowl. Mix until creamed and resembles a sugary, buttery paste, 4 to 5 minutes. Add oats and flour; stir until flour and oats are incorporated into the butter-sugar mixture and mixture resembles coarse crumbs, 4 to 5 minutes. 10 large firm ripe peaches, skins removed
2 tablespoons lemon juice
1/2 cup sugar
2 tablespoons cornstarch
1 pinch nutmeg
1 pinch salt
1 pinch lemon zest
1 1/3 cups all-purpose flour
1/4 cup sugar
1 1/4 teaspoons baking powder
1/4 teaspoon salt
1/4 cup unsalted butter, cold, cut into cubes
1/2 cup buttermilk or 1/2 cup heavy cream
1/2 cup whole unblanched almond, Coarsely chopped
3 tablespoons light brown sugar, Packed
1/2 teaspoon cinnamon

Steps:

  • For Cobbler: In food processor, combine flour, sugar, baking powder, and salt. Pulse to combine. Add cold butter and pulse until mixture is crumbly.
  • Drizzle most of buttermilk /cream over flour mixture, pulse to combine. If mixture seems dry, add a little more. Dough should be just moist. Gather the dough and spread out onto lightly floured parchment or waxed paper.
  • Patting into a Disc a little less than 1/2-inch thick chill for 1/2 hour.
  • For Fruit: Slice peaches into wedges, toss with lemon juice. In a small bowl, combine cornstarch, spices, pinch of salt and lemon zest. Toss with the peaches and pour unto lightly greased 8-inch baking dish.
  • To assemble: On a lightly floured surface, using a fluted cutter or any shaped cutter, cut out biscuits.
  • Gently re-roll scraps and arrange over fruit, slightly overlapping.
  • Brush biscuits with cream.
  • In a small bowl, combine almonds, brown sugar and cinnamon.
  • Sprinkle over dough.
  • Place in the oven and cook until fruit is bubbling, biscuits are golden, and a skewer poked into the center of the biscuit dough comes out clean.
  • Serve warm with ice cream, heavy cream or creme anglaise.
