Steps:
- In a food processor, combine the onion and garlic. Pulse until well chopped.
- Add the tomatoes, jalapeno, cilantro, lime juice, lime zest, salt, cumin, and sugar. Pulse until combined but still chunky.
- The consistency of this salsa varies depending on the water content of the tomatoes. If it's too watery, strain half to remove some of the liquid. Combine the chunky strained mixture with the remaining salsa. If you still prefer a chunkier texture, strain out more of the liquid to reach your desired consistency.
TOMATO FREEZER SALSA
An easy way to always have salsa on hand - no canning required. You control the heat by changing the type and amount of hot peppers. The 8 jalapeno's called for in this recipe keep things sane. Introduce some cayenne peppers to increase the heat, some chipotle peppers for smoky tones and some habaneros, scotch bonnets or ghost peppers for insane heat. What's your preference?

Steps:
- Peel tomatoes by cutting a small shallow "X" in the bottom, then placing in boiling water for 45-60 seconds until skin starts to peel back and wrinkle. Remove from boiling water and place into ice bath for 1-2 minutes. Then skin should easily peel off.
- Remove seeds by taking peeled tomatoes, cutting in half along the equator (not through the blossom/stem end) and squeezing over sink or bowl.
- Pulse tomatoes in food processor to roughly chop.
- Dice or chop bell peppers and onions.
- Wearing plastic gloves, cut open the jalapeno peppers longways and scoop out seeds. Then dice finely. (See note)
- Place all ingredients into a large stock pot. Bring to a boil.
- Reduce heat and simmer uncovered for 35-45 minutes, depending on how thick you like your salsa. (I like mine thicker, so I simmer for almost the full time.)
- Remove from heat and allow salsa to cool. Ladle into freezer containers or freezer bags. Label containers and place in freezer.

NO-COOK FRESH TOMATO SALSA (FAT-FREE)
This will put any store-bought salsa to shame lol! This is a must using just-picked garden tomatoes and it is a fat-free recipe! Plan ahead this must be refrigerated a minimum of 8 hours even better 24 hours to blend flavors, don't even think about serving this before the chilling time! The tomatoes must be ripe and red for this and will need to be drained for a couple of hours over a strainer before using for this recipe. If you prefer a milder salsa then omit the jalapeno pepper. This complete recipe may be doubled. Don't omit the cilantro it is what makes the salsa! If desired you may use canned Mexican diced tomatoes drained in place of the fresh tomatoes, but the fresh is much better! Prep time includes chilling time.

- Roughly chop the tomatoes and place half of them into the blender. Roughly chop the onion and jalapeno and add to blender with the garlic. Then add the remaining chopped tomatoes, the cilantro, salt and black pepper if using. Begin by pulsing the ingredients until they blender gets going – if you’re tomatoes are not ripe enough you’ll need to add a couple of tablespoons of water to get the blades going. Once you have enough liquid at the bottom you can blend at low speed until the salsa is nice and smooth.
- Taste and if needed add more salt. Pour into a serving container or store in the fridge, covered, until ready to serve. Please notice this salsa won’t keep more than a day or max too in the fridge. It’s really best to enjoy within 30 minutes of blending. Also do note that the longer it sits the darker the red tone will become.
