Macaroni Salad is quick to throw together and so DELICIOUS! A versatile, fool-proof pasta salad with an incredible creamy dressing perfect to take to gatherings, Bbq's, lunches and dinners. Or serve as a popular side dish!

8 oz (250g) dry macaroni pasta
1/2 medium red bell pepper (capsicum), (seeded and finely chopped)
1/2 medium red onion, (finely diced)
1 small carrot, (peeled and shredded)
2 dill pickles, (finely chopped)
1/4 cup chopped celery
1 cup mayonnaise, ((S&W, Best Foods, Hellmann's, Japanese or any whole egg mayo))
1/4 cup sour cream
2 tablespoons white vinegar, ((adjust to taste))
1 tablespoon Dijon mustard
2 tablespoons fresh parsley, (chopped)
1 tablespoon fresh chives
1 1/2 teaspoons sugar
1 teaspoon minced garlic
1 1/4 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Bring large pot of salted water to the boil over high heat. Add the pasta and boil until al dente (just fork-tender), or follow packet directions.
  • While pasta is boiling, prepare/chop SALAD ingredients and add them to a large serving bowl.
  • Mix DRESSING ingredients together in a small bowl.
  • Once pasta is cooked, drain and rinse under cool running water. Drain well and add to the rest of the SALAD ingredients in the large serving bowl.
  • Pour over DRESSING and toss well to evenly combine. Adjust salt, pepper and vinegar to taste.
  • Set aside for at least 15 minutes to let the ingredients warm close to room temperature and settle into each other before serving.

I wanted to try something different from the average pasta salads I've had. So I decided to experiment and thankfully everyone loved it! Feel free use more or less of any of the ingredients according to your palate.

1 (12 ounce) package tri-color rotini pasta
4 Roma (plum) tomatoes, quartered
1 cucumber, quartered and sliced
½ green bell pepper, minced
¼ red onion, minced
1 (2.25 ounce) can sliced black olives
1 (16 ounce) bottle zesty lite Italian-style salad dressing, or to taste
1 (2.5 ounce) package bacon bits
½ (6 ounce) package dried cranberries, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil; cook the rotini at a boil until tender yet firm to the bite, about 8 minutes; drain. Rinse pasta with cold water until cool; drain.
  • Combine cooled pasta, tomatoes, cucumber, green bell pepper, red onion, and black olives in a large bowl.
  • Pour Italian-style salad dressing over the pasta mixture; toss to coat.
  • Sprinkle bacon bits and cranberries over the salad to serve.

Ripe vegetables and whole wheat noodles get together for a better-for-you take on pasta salad.

1 pkg. (16 oz.) whole wheat farfalle (bow-tie pasta), uncooked
2 cups broccoli florets
1 each red onion and red pepper, chopped
2 cups halved cherry tomatoes
1 bottle (8 oz.) KRAFT Sun Dried Tomato Vinaigrette Dressing
1/2 cup KRAFT Grated Parmesan Cheese

Steps:

  • Cook pasta in large saucepan as directed on package, omitting salt and adding broccoli to the boiling water for the last 3 min. Drain.
  • Rinse pasta mixture with cold water; drain well. Place in large bowl. Add all remaining ingredients except cheese; mix lightly.
  • Refrigerate 1 hour. Stir gently before serving; top with cheese.

1 tablespoon sweet pickle relish
1/2 cup fat-free mayonnaise

  • Boil a large, salted pot of water for the pasta, and cook it al dente according to package directions. Once cooked, rinse with cold water and drain thoroughly.
  • Add the salad dressing ingredients to a medium bowl and stir thoroughly until combined (and make sure the sugar dissolves). Give it a taste and adjust if needed (e.g. more vinegar).
  • Add the cooked macaroni to the large bowl, along with the dressing. Toss until everything is combined. Season as needed (I am generous with the salt & pepper - this is a lot of pasta). Salad can be made ahead, just be sure to seal it tightly so the dressing doesn't dry out. Salad can be refrigerated for a few days.
