Steps:
- Preheat the oven to 450 degrees F.
- Brush a 16-inch pizza pan or cookie sheet with a bit of olive oil or non-stick spray. Roll the pizza dough out in a thin 1/4-inch circle to cover the pan.
- Brush the pizza dough with 1 tablespoon of olive oil, leaving a 1-inch border along the edges to form the crust. Season the dough evenly with garlic and oregano. Season with salt and pepper.
- Prepare the tomatoes by slicing the top off the tomato and then use a spoon or melon baller to scoop out the seeds gently or give the tomato a gentle squeeze over the sink/trash bin. Slice the tomatoes into 1/4 inch slices.
- Arrange the tomatoes evenly over the pizza dough in a single, even layer. Add arugula, spinach, or basil if using. Season the tomatoes and greens with salt and pepper. Finally, slice the mozzarella into 1/4-inch thick slices and use it to evenly top the pizza.
- Bake for 10-15 minutes, or until the crust is nicely browned and the cheese is fully melted.
- Allow the pizza to cool for 5-10 minutes, and then slice and serve.

FRESH MOZZARELLA, TOMATO AND OLIVE PIZZA POCKETS
The traditional reason for wrapping ingredients in pastry - be it Cornish pasties, Jamaican meat patties or even pizza pockets and knishes - is to make an edible container that facilitates transport and obviates the need for niceties like forks and plates. These pizza pockets couldn't be easier to make, and they are delicious whether eaten with a knife and fork or your fingers.

Steps:
- Heat oven to 425 degrees. Line a rimmed baking sheet with parchment paper or aluminum foil. In a large bowl, combine all ingredients except dough.
- Divide dough into four equal pieces; roll each piece into a ball. On a lightly floured surface, roll one ball into a 7-inch round. Mound 1/4 of the filling on half the dough. Fold other dough half over the filling and pinch edges together to seal. Transfer pocket to prepared baking sheet. Repeat with remaining dough and filling.
- With a sharp knife, cut several slits in top of each pastry. Bake pockets until golden brown, 15 to 20 minutes. Let cool 5 minutes before serving.

FRESH MOZZARELLA AND BASIL PIZZA
The simple ingredients on this pizza are so good, and fresh mozzarella is the best! So much better than processed. You can make your dough, or purchase uncooked pizza dough from the bakery dept. of your supermarket. This pizza is very rustic, and very similar to true pizza, in Italy. The fresh ingredients are essential to how good this is.

Steps:
- Preheat oven to 450°F Shape pizza dough ball into 6-8 inch circle on a lightly floured surface.( Circle doesn't have to be perfect) Place dough on a piece of prachment paper. Fold up edges of dough, forming a 1 inch border. Brush oil evenly over dough with a pastry brush, or drizzle evenly over dough.
- Cover pizza dough circle loosely with plastic wrap, and let rise in warm place, free from drafts, 15 to 20 minutes. Heat pizza stone or heavy baking sheet 10 to 12 minutes in oven. ( I think the pizza stone is much better than the pan).
- Remove and discard plastic wrap from dough. Layer tomato, and next 3 ingredients evenly. Sprinkle with pepper. Carefully transfer dough on parchment paper to pizza stone.
- Bake at 450F for 10 minutes or until crust is golden.
