Steps:
- Cut the green tops off all the peppers. Discard tops and set peppers aside.
- Slightly smash each clove of garlic just enough that the paper loosens; remove the paper and discard it.
- In a medium, non-reactive (i.e. stainless steel, ceramic, or glass) pot, add the prepared peppers and garlic cloves. Pour in the vinegar and lime juice then add the salt, paprika, and bay leaf. Stir together to mix in the salt and paprika.
- Bring the mixture to a boil. Reduce heat to medium-low, cover, and allow to simmer for 20 to 30 minutes or until the peppers are soft.
- Remove from the heat and add to a food processor or heat safe blender (no need to remove bay leaf). Pulse until smooth and liquidy (be CAREFUL--it is HOT), adding more vinegar if necessary to make it more liquid.
- Smoosh through a fine mesh sieve into a bowl and discard any seeds and large chunks left in the sieve.
- Refrigerate in an airtight container for at least one week prior to using.

Steps:
- In a medium stockpot, combine the peppers, cider vinegar, white vinegar, onion, garlic powder, cumin, mustard, turmeric, salt, clove, allspice, and sugar.
- Put the lid on the pot, bring the mixture to a simmer over medium heat, then simmer the sauce for 20 minutes.
- While the hot sauce is simmering, prepare the water bath canner. Fill it halfway with water and put it on the stove to simmer. Check two half-pint jars for any nicks or cracks, wash them in hot soapy water and rinse them in hot water. Keep the jars hot until it's time to use them. Wash the lids in hot soapy water and rinse them.
- After 20 minutes, remove the pan from the heat and puree the pepper mixture. You can use an immersion blender or ladle the mixture into a blender to puree it.
- Pour or ladle the hot sauce into the prepared jars, leaving 1/4 inch of headspace. Remove the air bubbles with a bubble remover tool or chopstick and recheck the headspace. Wipe the rims with a clean cloth, put the lids on the jars and screw on the bands. Place the jars in the prepared hot water bath canner, making sure that the jars are covered by at least an inch of water.
- Put the lid on the canner and bring the water to a full rolling boil. Process the jars for 10 minutes, adjusting for altitude, if necessary.
- Arrange a folded towel on the counter or table. Remove the jars, using a jar lifter, and place them on the towel. Let the jars cool for at least 12 hours.
- Once the jars are cooled, remove the bands and check the seals. If any jars failed to seal, put the in the refrigerator to use first. Wipe the jars with a clean cloth and store them for up to a year.

- Wash peppers (10 large red peppers), cut them in half, remove the inside, discard seeds. If there are any blemishes or spots on the skin remove those as well. Wash well.
- Layer peppers skin side up into a all stainless steel pot or onto a baking sheet. Season each layer with salt (1 tablespoon). Cover with a kitchen towel and allow to sit for 2-3 hours. Then drain the liquid from a pot/baking sheet into a kitchen sink.
- Once you have removed all the skin, process all of the peppers' “meat” in the food processor until smooth. This is your basic plain pepper paste, without seasonings. You should have about 1 1/2 to 2 cups plain red pepper paste.
- Preheat the oven or grill, to about 400F.Pour diced onion (1 large onion), carrot (1 large carrot), celery (1 stalk) onto a baking sheet or heavy duty aluminum baking tray. Season with salt (1/4 teaspoon) and ground black pepper (1/4 teaspoon). Drizzle over olive oil (1 tablespoon). Toss together. Place unpeeled garlic cloves onto a piece of aluminum foil, sprinkle with remaining olive oil (1/2 tablespoon), season with little bit of salt and ground pepper. Wrap garlic cloves into the foil. Place wrapped garlic onto a baking sheet with all the vegetables. Once roasted, push the roasted garlic cloves out of the shells.Roast vegetable either in the oven or on the grill if you can. Roast vegetables, until soft and caramelized. Once vegetable as done, let them cool slightly, then process roasted vegetables along with roasted garlic cloves (without the shell) in the food processor until you have a thick paste. It will be slightly chunky but that’s okay.

8 VARIETIES OF FRESH HOT CHILI PEPPERS - THE SPRUCE EATS
From thespruceeats.com

- Jalapeño Chiles. Jalapeño s might be the best-known hot chiles in the U.S. They are smooth, green, shiny, and plump looking. They were once famous for their heat, although higher demand for the commercial crop to make salsas (and jalapeño poppers!)
- Fresno Chiles. Fresno chiles are about the same size as jalapeños, but they are slightly more bell-shaped and are a truly bright red. As such, they are often sold as "red jalapeños" since they have a similar heat profile.
- Serrano Chiles. Serrano chiles are shiny green, slim, and narrow. Like jalapeños, they have a herby, even grass-like flavor; they are usually quite a bit hotter than jalapeños, however.
- Habanero Chiles. Habaneros are widely known as the hottest chiles out there, even though Scotch Bonnet chiles, which look almost identical, give them a run for their money.
- New Mexico or Anaheim Chiles. These long, slim chiles are known as either Anaheim chiles or, especially when from the state, New Mexico chiles. Their heat level varies tremendously, from quite mild to very hot.
- Poblano Chiles. Poblano chiles are large (about the size of a child's hand), bell or even heart shaped, and often slightly flat. They are very dark green and shiny.
- Bird's Eye Chiles. These teeny bright red chiles are common in Southeast Asian cooking and pack a tremendous amount of heat into a thumbnail-size chile.
- Aji Amarillo. These famously yellow chiles are essential to Peruvian cuisine. Besides their sunny yellow color, they bring a wonderfully complex aroma to foods.
