FRESH FRUIT AND YOGURT ICE POPS
Simple and wholesome popsicles. My mom used to help us make these when we were kids and I still enjoy them years later. Use honey as an alternate sweetener, and blend the fruit to be either chunky or smooth.

Steps:
- Blend red, green or blue-black grapes in a food processor until a smooth, frothy liquid forms. With a plastic spatula, press mixture through a fine strainer into a mixing bowl. Discard skins and skim foam off the top. Whisk sugar into juice until dissolved. Add a few drops of red, green or purple food coloring if desired.
- To make juice pops, fill molds or 5-ounce paper cups with juice, spooning most of the foam off the top. If using cups, cover each cup with foil and insert a wooden stick in the center of the foil. If adding grapes to pops, place approximately 1/4 cup halved grapes into each mold. Pour juice into molds, spooning most of the foam off the top. Place molds or cups in freezer and chill until frozen. To remove bars from cups, take off foil and tear away paper.

- Add sugar and let it dissolve completely. Once colour changes (syrup form) switch off flame and allow it cool down. No one string consistency is required.
- In a mixer/blender add the grapes, puree it without adding water. Place a strainer over a bowl and pour the grapes puree. Press it with a ladle to extract all the juice.

- Put grapes into a blender or food processor and pulse just briefly, about 3-5 times. Although you can vary the exact consistency (from very large chunks to smaller bits of grapes), you want to be careful not to fully puree or completely liquify the grapes.
- Spoon the grape chunks into six 3-ounce popsicle molds, dividing evenly. Gently tap the molds on the countertop or use the spoon to press the grapes down, so the grape chunks are tightly compacted without air pockets.
- Pour any grape juice that remains in the blender/processor evenly over all the pops. This little bit of liquid will help to "glue" the bits of frozen grapes together as the popsicles freeze.

- Wash the grapes and put them in a heavy bottomed pot, along with the water and lemon juice. Bring the pot to a simmer and continue simmering for about 20 minutes until the grapes have begun to soften. Smash the grapes with the back of a large spoon as they cook.
- Transfer the mixture to a food processor and process until completely blended. Let the machine run long enough to get all the grapes completely pureed.
- Pass the puree through a mesh strainer, pushing lightly, to get the juice through. Discard any pulp, skin or seeds.
