SPICED ROSE WATER SYRUP



Spiced Rose Water Syrup image

A little of this over cut-up fresh fruit which is then chilled -- heaven! You can vary the spices, adding such things as star anise or cardamom pods, cloves, allspice berries. If you have access to unsprayed rose petals, make your own rose water--there are recipes on Zaar--and save a ton of money. Note: cooking time is really cooling time.

1 1/2 cups water
1/2 cup sugar
1 cinnamon stick, broken in two
1 teaspoon rose water

Steps:

  • Make a syrup by stirring the water and sugar together in a heavy saucepan over medium low heat until the sugar dissolves.
  • Increase heat to medium high; add cinnamon sticks; boil until the syrup is reduced to a scant one cup, about ten minutes.
  • Remove from heat, stir in the rose water and allow the syrup to cool.

700g (1lb 7oz) fresh rosehips
600g (1¼lb) granulated sugar
1-2tsp rose water, optional
2-3tsp lemon juice, optional

Steps:

  • Wash the rosehips, removing any damaged fruit and carefully snip the calyx (the enlarged tube just below the sepals) off each. Put the hips in a pan and cover with water, then simmer for 20 mins until soft.
  • Strain into a bowl through a fine sieve and return the pulp to the pan, adding about the same amount of water and repeat for a second and third extraction. Strain all the fluid through muslin in the sieve this time.
  • Measure the 'juice' into a clean pan and add the sugar. Add the rose water and lemon juice to taste, if using, and simmer for a further 20-25 mins, until syrupy, removing the froth with a large metal spoon.
  • Pour into sterilised bottles and seal when cold. Use the syrup as a drink, made up with water, or serve on pancakes, or with thick yogurt or ice cream.

1 1/2 cups water
1/2 cup sugar
1 cinnamon stick, broken in half
1 teaspoon rose water
4 oranges
2 cups red grapes, halved
1 pint basket strawberry, halved
1 pear, cored, sliced

Steps:

  • Stir 1 1/2 cups water and sugar in heavy medium saucepan over medium-low heat until sugar dissolves. Increase heat to medium-high. Add cinnamon; boil until syrup is reduced to scant 1 cup, about 10 minutes. Mix in rose water; cool.
  • Using small sharp knife, cut off peel and white pith from oranges. Working over large bowl, cut between membranes to release segments into bowl. Add grapes, berries and pear; toss to combine. Mix in syrup. (Can be prepared 2 hours ahead. Cover and refrigerate.)
  • Spoon fruit and syrup into 6 bowls.
