FRESH FRUIT COCKTAIL SALAD
This easy to make fresh fruit cocktail salad is easy to prepare and requires no cooking. Great if you are out camping or need a snack to take on a road trip

- Wash all the fresh fruit. Put the peaches and pineapple into a large bowl with the syrup. Slice the pineapple slices into quarters and the peaches until they are about the same size.
- Remove any green bits from the strawberries. Slice the apple into smallish chunks. You do not need to peel the apple. Peel the satsumas and divide into segments.
- Halve the grapes and any large strawberries.
- Put everything into a large bowl and mix thoroughly. Use the syrup from the canned fruit as a liquid base to the salad.

- Combine the wine and sugar in a saucepan. Place the saucepan over medium heat and bring to a boil; stirring to dissolve sugar. Remove the saucepan from the heat and add the mint; set aside.
- Combine the cantaloupe, grapes, and strawberries in a large bowl. Pour the wine mixture over the fruit; toss together until all the fruit is covered with the wine mixture; cover and chill. Store in the refrigerator up to 8 hours before serving.

- Important! Retain all juices from fruits as you cut them!
- Peel and cut apples, oranges and pears into chunks.
- Cut pineapple into chunks.
- Quarter red globe grapes, removing seeds.
- Add entire jar of undrained cherries.
- Sprinkle dry pudding mix over fruit.
- Toss fruit well until coated with pudding.
- Add splashes of soda and toss fruit until your fruit cocktail has a nice "sauce" but not too "soupy". This varies depending on how much juice you had from the fruits.
- Refrigerate to chill and let flavors blend. Cook time is chill time.
