VERY BASIC FRUIT SALAD
I love how simple and refreshing this is and the ability to adjust the recipe for the types of fruits which are fresh in your local area. Allow at least 4 hours for chilling before serving. From TOH Cookbook. I like changing out the cantaloupe with fresh pineapple and/or grapefruit slices (which sometimes means a bit of sugar added to balance the tartness), or I have added blueberries also just as a topping.

PERFECT SUMMER FRUIT SALAD
The perfect fruit salad for a backyard bbq or any occasion. There are never leftovers! This is one of my favorite fruit salad recipes, as I think the sauce really makes it. This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it. Enjoy.

- Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
- Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

Saw some great deals on fruit this week so I decided to make this fruit bowl for my family- to eat as they wish or to add it as a side along with a tuna sandwich, turkey burger, or ice cream....etc. Very refreshing and colorful.

- 1. Slice the 1/2 melons into small slices and remove seeds and rind. Cut cherries in 1/2 and remove pits. Cut peaches in 1/2 and remove pits. Slice and cut into bite size pieces into a small bowl , combine peaches with the juice and sugar and stir to coat evenly;set aside.
- 2. Layer pieces of each fruit into a large bowl. You may add other fruits also if desired; such as apple slices added to the peach mixture before adding to fruit bowl. Add strawberries or kiwi,pieces.
- 3. Chill, keeping ice cold and serving alone or with your favorite sandwich or dinner as a side dish or dessert with a scoop of ice cream or sherbet.
