- Pat okra dry with paper towels. Place buttermilk in a shallow bowl. In another shallow bowl, combine the flour, cornmeal, salt, seasoning blend and pepper. Dip okra in buttermilk, then roll in cornmeal mixture., In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Fry okra, a few pieces at a time, for 1-1/2 to 2-1/2 minutes on each side or until golden brown. Drain on paper towels. Season with additional salt and pepper if desired.

- Cut off and discard tip and stem ends of okra; cut okra crosswise into 1/2-inch-thick slices. Place in a large bowl.
- Combine 3 qt. water and salt; pour over okra. Soak 30 minutes; drain, rinse well, and drain again. Dredge okra, in batches, in cornmeal.
- Pour oil to a depth of 2 inches into a Dutch oven; heat to 375ºF. Fry okra, in batches, 4 minutes or until golden. Drain on paper towels. Serve immediately.

- Preheat the oven to 425 degrees. Combine the cornmeal, panko, salt, pepper, and Parmesan cheese in a gallon-size ziplock bag.
- In a separate bowl, gently toss the okra with the beaten eggs until evenly coated.
- Pour oil onto a rimmed baking sheet (15x10x1) and place in the preheated oven for just a few minutes to warm up the oil--be careful to not let it start to smoke.
- In the meantime, add the wet okra a little at a time to the bag and shake until coated. If needed, you may add additional cornmeal and panko breadcrumbs -- if the okra isn't coated as much as you like. Carefully add the okra to the hot baking sheet.
- Bake for 15-20 minutes, or until tender, turning the okra halfway through baking. To get a nice golden brown, increase oven heat to broil and watch carefully, stirring as needed.

- Cut Okra stalks down to 1/4th inch pieces. Discard ends.
- Beat 2 eggs in a bowl and place cut pieces of okra directly into egg mixture. Mix well to evenly coat all pieces.
- Let okra set for about 5 minutes while oil is heating up.
- Heat at least 2-3" of oil in a saucepan until 375 degrees.
- In a separate bowl, add corn meal, salt and pepper seasoning and mix well to combine.
- Divide the okra (from the egg mixture) into fourths.
- Add one fourth of the okra to the corn meal mixture and mix well to evenly coat all sides.
- Place cornmeal covered okra into hot oil and fry until browned on both sides, about 3-5 minutes.
- Carefully remove, drain on paper towels and repeat, frying okra in batches and draining. Sprinkle with additional kosher salt as pieces come out of hot oil.
- Serve fried okra immediately while still warm.

- Place 1/2 cup of flour in a large zip top bag. Add a large pinch of salt and pepper.
- Whisk together the eggs and buttermilk in a shallow bowl. Set aside.
- Whisk together flour, cornmeal, paprika, garlic powder, cayenne pepper, salt and pepper in a pie plate.

- Preheat the oven to 225°F (104°C).
- Heat the oil in a cast-iron skillet or a 3-quart enameled cast-iron casserole until the temperature on a deep-fry or candy or instant-read thermometer reads 375°F (190°C).
- In a large bowl, whisk together the eggs and milk until well combined, about 1 minute. In a medium bowl, sift the cornmeal, flour, salt, and black pepper together twice. Add the okra to the egg mixture and toss until it is evenly coated. Scatter half the dredge over the okra and toss to coat. Scatter the remaining dredge over the okra and toss again.
- Transfer about 1/3 of the okra to the oil with a slotted spoon and fry in batches, turning as necessary with the spoon, until the slices are golden brown all over, about 2 minutes per batch.
- Using the slotted spoon, transfer the fried okra to a plate lined with a double thickness of paper towels. When it has drained, transfer to a ceramic serving dish that holds heat well and place in the oven until ready to serve.
