5 cups sliced black figs (or any kind of fig, cut into slices, stems removed)
4 ounces water
1 tablespoon maple syrup

Steps:

  • Add figs, water and maple syrup to a sauce pan and turn the heat on medium
  • Bring to a boil, stir the figs and lower the heat to a simmer and cook for 15 minutes
  • Take your potato masher and mash the figs to whatever consistency you desire
  • Eat a spoonful
  • Smile
  • Enjoy

2 Tbsp. sugar

1 cup plain nonfat Greek-style yogurt
2 Tbsp. honey
1 tsp. orange zest

Steps:

  • Heat grill to medium-low heat.
  • Toss figs with dressing. Mix sugar and rosemary; sprinkle onto cut sides of figs.
  • Grill figs, cut-sides up, 6 to 8 min. or until figs are heated through and sugar mixture starts to bubble.
  • Mix remaining ingredients. Serve with figs.

1 lb yellow onion, halved and thinly sliced to measure 4 cups
salt
6 ounces figs, stemmed and halved
1/2 cup red wine or 1/2 cup white wine
1/2 cup chicken broth or 1/2 cup vegetable broth
1 tablespoon balsamic vinegar
1 tablespoon chopped fresh rosemary or 1 teaspoon dried rosemary
fresh ground black pepper
1 -1 1/3 lb salmon fillet, skinned and cut into 4 portions
chopped parsley

Steps:

  • Swirl olive oil in bottom of medium nonstick skillet.
  • Add onions and sprinkle with 1/2 teaspoon salt.
  • Cover and cook over medium-low heat, stirring occasionally, until onions are soft, about 10 minutes.
  • Remove cover and cook, stirring often, until onions are golden, 15 to 20 minutes.
  • Stir in figs, wine, broth, vinegar and fresh rosemary.
  • Increase heat to high and simmer until sauce thickens, about 5 minutes.
  • Add salt and pepper to taste.
  • Keep warm.
  • Preheat oven to 450 degrees.
  • Sprinkle salmon with salt and pepper to taste.
  • Place on lightly oiled heavy baking sheet.
  • Roast for 7 to 10 minutes or until fish flakes.
  • Sprinkle salmon with parsley.

Cut a hole in the top of the fig so that the sauce can get inside, and the insides of the fig can combine with the sauce. Note this recipe only works with fresh figs, it will not reconstitute dried figs.

8 fresh figs
1 1/2 cups water
1/3 cup honey
1 teaspoon ground cloves
1 teaspoon ground allspice
1 teaspoon balsamic vinegar (optional)

Steps:

  • Trim the stems off the figs and make a small hole in the top.
  • Combine water, honey, cloves and allspice in a pot and bring to a boil.
  • Put figs in the pot and simmer, covered for 15 minutes, until almost done.
  • Remove figs and reduce sauce for 10 minutes.
  • Put the figs back in the sauce and reduce until desired consistency, around 5 more minutes.
  • Stir in balsamic vinegar (if using).

8 small (or 4 large) fresh, ripe figs, stems trimmed, halved lengthwise
1/3 cup mascarpone, softened
1/3 cup mild honey
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cardamom
1/8 teaspoon ground allspice
4 sprigs fresh mint

Steps:

  • Arrange the figs cut-side up among four plates. Use the back of a teaspoon to gently press into the center of the flesh and create a small indentation.
  • Add a dollop of mascarpone to the center of each fig half and set plates aside.
  • Place honey and spices in a small heat-proof bowl and set over a pan with simmering water. Cook over medium heat, whisking to blend, until the honey is liquefied and warm, 1 to 2 minutes. Drizzle honey over each fig, garnish plates with mint sprigs, and serve immediately.
