ONION-DATE BAKED BRIE



Onion-Date Baked Brie image

Many baked Brie recipes call for a fruity topping, but my family favors this savory version. I even use the onion-date mixture at the table as a relish.-Allene Bary-Cooper, Wichita Falls, Texas

Number Of Ingredients 12

2 large onions, sliced
2 tablespoons olive oil
2 garlic cloves, minced
1/4 teaspoon ground ginger
1/8 teaspoon salt
1/8 teaspoon cayenne pepper
1/2 cup dry red wine or beef broth
1/4 cup red wine vinegar, divided
6 ounces pitted dates, coarsely chopped
1 round (8 ounces) Brie cheese
Assorted crackers or French bread baguette slices
Minced fresh thyme, optional

Steps:

  • Preheat oven to 350°. In a large skillet, saute onions in oil until tender, 3-5 minutes. Add the garlic, ginger, salt and cayenne; cook 1 minute longer. Stir in wine and 2 tablespoons vinegar. Bring to a boil; cook until liquid is almost evaporated, about 5 minutes. Cool slightly., Place the dates, 3/4 cup onion mixture and remaining vinegar in a food processor; cover and process until finely chopped. , Place Brie on a baking sheet. Spoon date mixture over Brie; top with remaining onion mixture., Bake until heated through, 10-15 minutes. Garnish with thyme, if desired. Serve with crackers or baguette slices.

puck cream cheese spread (not regular cream cheese, it's creamier, softer and tastier, found in Arab shops though Danish)

Steps:

  • Pit and separate dates into halves.
  • Spread a little Puck cream cheese spread in the indent.
  • Enjoy with tea or Arabic coffee!

Crispy mixed greens are tossed with tart Granny Smith Apples, creamy brie, crunchy walnuts and a tangy apple cider vinaigrette for the perfect side dish or light lunch! Ready in just 15 minutes, delicious and healthy too!

4 cups Mixed greens, roughly chopped (can also use baby spinach or romaine)
1 Granny Smith apple (cored and sliced)
1/4 cup pitted dates (chopped (omit for a lower carb option))
1/3 cup chopped walnuts (toasted and chopped)
1/2 cup red onion (finely diced)
2 oz. Brie cheese (chopped)
Salt & ground black pepper to taste
2 tbsp apple jelly ((use a sugar free jelly for a lower carb option))
1 tbsp apple cider vinegar
1 tbsp extra virgin olive oil
1/2 tsp Dijon mustard
1 clove garlic
pinch cayenne pepper

Steps:

  • Combine apple jelly through cayenne pepper in a blender. Cover, blend until smooth (this will become your salad dressing)
  • Combine salad, apples, dates, walnuts, onion and Brie in large bowl. Toss with dressing until coated as desired. Season with salt and pepper to taste.

We can get the most wonderful fresh dates from nearby markets and I usually add them to my cheeseboard. you can really use most soft cheeses with your dates....Brie is just my fave. You can prepare some as a snack and as optional extras...drizzle them with honey and add in some crushed walnuts or pecans with the cheese

18 -20 fresh dates
125 g brie cheese

Steps:

  • Remove seeds from the dates.
  • Cut through the dates on one side and open them up. Remove the seeds.(Dont cut all of the way through).
  • Cut Brie into small wedges and fill the dates. CLose the dates back over.
  • Enjoy!
