This no-cook cranberry salsa recipe combines loads of fresh cranberries with spicy jalapeno peppers and a few other ingredients for a quick and easy holiday salsa. Bring on the chips!

Number Of Ingredients 12

12 ounces fresh cranberries
3 jalapeno peppers (finely chopped)
1 shallot (minced)
¼ cup green onion (chopped)
¼ cup chopped cilantro
2 tablespoons chopped fresh mint
¼ cup sugar
2 tablespoons apple cider vinegar
1 tablespoon honey
Juice from 1 small lime + some lime zest
½ teaspoon salt
½ teaspoon black pepper

Steps:

  • Rinse the cranberries then transfer them to a food processor. Pulse a few times to finely chop them. Do not overprocess.
  • Transfer the chopped cranberries to a large bowl and add the remaining ingredients (jalapeno, shallot, green onion, cilantro, mint, sugar, vinegar, honey, lime juice and zest, and salt and pepper).
  • Mix well. Seal and refrigerate at least 1 hour to let the flavors mingle. It's even better the next day.

Number Of Ingredients 10

1 cup coarsely chopped cranberries (fresh or frozen)
1/4 cup dried cranberries
1/4 cup chopped red onion
2 tablespoons chopped fresh parsley
1 -2 tablespoon liquid honey
1 tablespoon red wine vinegar
1 tablespoon lemon juice
2 teaspoons granulated sugar
1/4 teaspoon pickling salt
1/4 teaspoon hot pepper flakes

Steps:

  • Combine all ingredients in a non-reactive medium saucepan, bring to a boil. Reduce heat, simmer, uncovered, for 10 minutes or until thickened, stirring frequently.
  • Ladle salsa into hot half-pint jars, leaving 1/2 inch headspace.
  • Process 20 minutes in a boiling water bath.
  • For Cranberry Salad Dressing: Combine 1/2 cup cranberry salsa, 1/4 cup red wine vinegar, 3 tablespoons olive oil, 1 clove garlic (minced), salt and pepper to taste. Whisk or shake well to blend. Makes 3/4 cup.

1 green onion, cut into quarters
1 jalapeno pepper, seeded, cut into quarters
1 (12 ounce) package fresh cranberries or 1 (12 ounce) package frozen cranberries
3/4 cup sugar
1/4 teaspoon cumin
1 teaspoon dried cilantro or 1 tablespoon fresh cilantro, chopped
2 teaspoons fresh lime juice

Steps:

  • Place onion and jalapeno in a food processor, process until chopped.
  • Add all remaining ingredients, pulse 8-10 times or until cranberries are coarsely chopped, stopping to stir once or twice.
  • Store in airtight container overnight to allow flavors to blend.

1 12-ounce package cranberries
½ cup granulated sugar
1 jalapeno (deseeded and chopped)
3 green onions (chopped)
3 tablespoons chopped fresh cilantro
zest of 1 small orange
2 tablespoons orange juice

Steps:

  • Pulse cranberries and sugar together in a food processor or blender until cranberries are just roughly chopped.
  • Pour the cranberries into a medium bowl and stir in chopped jalapenos, chopped green onions, chopped fresh cilantro and the zest and juice of a small orange.
  • Cover the orange cranberry salsa and store in the refrigerator for at least 30 minutes to develop the flavors. Juices will also develop from the salsa, so straining through a slotted spoon for serving may be useful.

1 bunch cilantro, chopped
1 bunch green onions, cut into 3 inch lengths
1 jalapeno pepper, seeded and minced
2 limes, juiced
¾ cup white sugar
1 pinch salt

Steps:

  • Combine cranberries, cilantro, green onions, jalapeno pepper, lime juice, sugar, and salt in the bowl of a food processor fitted with a medium blade. Chop to medium consistency. Refrigerate if not using immediately. Serve at room temperature.

6 tablespoons white sugar
2 tablespoons brandy-based orange liqueur (such as Grand Marnier®)
½ cucumber - peeled, seeded, and diced
2 stalks celery, chopped
4 slices pickled jalapeno pepper, finely chopped

Steps:

  • Place the cranberries into a food processor, and pulse until finely chopped. They should still have some texture. Transfer to a serving bowl, and stir in the sugar, orange liqueur, cucumber, celery and jalapeno. Let sit at room temperature for 15 minutes before serving to blend the flavors.
