1 cup butter, softened
1-1/2 cups sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
2 cups quick-cooking oats
1 cup raisins
1 cup coarsely chopped fresh or frozen cranberries
1 tablespoon grated orange zest
1 package (10 to 12 ounces) white baking chips

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, salt and baking soda; add to the creamed mixture. Stir in the oats, raisins, cranberries and orange zest. Stir in baking chips. , Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 375° until the edges are lightly browned, 10-12 minutes. Cool on wire racks.

1 cup butter, softened
1 cup white sugar
½ cup packed brown sugar
1 egg
1 teaspoon grated orange zest
2 tablespoons orange juice
2 ½ cups all-purpose flour
½ teaspoon baking soda

2 cups chopped cranberries
½ cup chopped walnuts
½ teaspoon grated orange zest
3 tablespoons orange juice
1 ½ cups confectioners' sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the egg until well blended. Mix in 1 teaspoon orange zest and 2 tablespoons orange juice. Combine the flour, baking soda and salt; stir into the orange mixture. Mix in cranberries and if using, walnuts, until evenly distributed. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Cookies should be spaced at least 2 inches apart.
  • Bake for 12 to 14 minutes in the preheated oven, until the edges are golden. Remove from cookie sheets to cool on wire racks.
  • In a small bowl, mix together 1/2 teaspoon orange zest, 3 tablespoons orange juice and confectioners' sugar until smooth. Spread over the tops of cooled cookies. Let stand until set.

Amazing cranberry white chocolate cookies made with fresh cranberries. The sourness of fresh cranberries perfectly balances the sweetness from the sugar and white chocolate. They have crunchy edges and soft/chewy centers. You've got to try these cookies!

1/2 cup (115g) soft butter
1/3 cup (65g) granulated sugar
2/3 cup (135)g light brown sugar
1 large egg
2 teaspoons vanilla extract
2 cups (250g) flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups (125g) fresh cranberries + 1 tablespoon flour
6 oz (170g) white chocolate

Steps:

  • Roughly chop white chocolate and cranberries (each cranberry should be cut into 2-3 pieces). Toss the cranberries with 1 tablespoon of flour until coated on all sides.
  • Preheat the oven to 375°F / 190°C / Gas Mark 5, no fan (if you have a convection oven reduce the temperature by about 20° or follow the manufacturer's instructions).
  • Add the softened butter and both types of sugar into the mixing bowl. Mix over medium-low speed for about 3-5 minutes, until light, fluffy, and well-combined (you can use a hand mixer or a stand mixer, if using a stand mixer use a paddle-shaped attachment).
  • Add the egg and vanilla extract, mix over medium-low speed for another 3-5 minutes, until well-combined. Scrape the sides of the bowl from time to time with a spatula.
  • Stir the flour with baking soda and salt. Add the flour mixture to the mixing bowl. Mix over low speed until half combined (you should still see flour here and there and the dough will be rather clumpy).
  • Add the chopped chocolate and cranberries to the bowl. Mix until they are evenly distributed, but the dough should be clumpy.
  • Scoop the dough with a 3-tablespoons-ice cream scoop or just with your hands/spoon. Gather the dough clumps with your hands then roll it into balls (every ball should weigh 40g/1.4oz). Don't flatten the balls. Place on a baking sheet lined with parchment paper about 2 inches (5 cm) apart.
  • Bake for about 14 minutes. Bake the cookies in batches. The baking time may slightly vary depending on the oven. The cookies should have golden edges but will be completely soft.
  • Take the baking tray out of the oven and let the cookies cool on the baking sheet (they will continue to set up from the residual heat on the pan after they come out of the oven).
  • Enjoy!

3 eggs
2 cups sugar
3/4 cup butter, softened
1 teaspoon vanilla
2 1/2 cups all-purpose flour
12 oz fresh cranberries (cranberries that have been frozen work best, but cold from the fridge work as well)
2 cups powdered sugar
2 tablespoons fresh lemon juice, plus more as needed

Steps:

  • Preheat oven to 350 degrees. With a mixer, beat the eggs with the sugar until slightly thickened and light in color, about 5-7 minutes. The mixture should almost double in size. The eggs work as your leavening agent in this recipe, so do not skip this step. This mixture should form a ribbon when you lift the beaters out of the bowl.
  • Add the soft butter and vanilla; mix two more minutes. Stir in the flour until just combined. Add the cranberries and stir to mix throughout.
  • Use a 2 tablespoon scoop or a spoon to portion out the cookie dough onto a parchment-lined baking sheet. Place only six cookies on the baking sheet.
  • Bake for 18 minutes, until the cookies have puffed up and turned golden brown on the edges. Remove from the oven and cool on the baking sheet for at least 5 minutes before transfering to a wire rack to finish cooling.
  • To glaze the cookies, stir together the powdered sugar and lemon juice. It should drizzle off the spoon in a thick white stream. Lightly drizzle the cookies and allow them to fully set before storing.

Steps:

  • Preheat the oven to 375˚ F. Whisk the flour, baking powder and salt in a medium bowl.
  • Beat the butter and granulated sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 3 minutes. Beat in the eggs and 1 tablespoon lemon zest. Beat in the flour mixture until completely combined, then fold in 1 1/2 cups chopped cranberries.
  • Scoop the dough into golf ball-size balls and arrange about 2 inches apart on 2 unlined baking sheets. Gently press the remaining 1/2 cup chopped cranberries into the tops of each cookie. Bake until slightly golden around the edges, 15 to 17 minutes. Remove the cookies and transfer to a rack set over a baking sheet.
  • Make the glaze: Put the confectioners' sugar in a medium bowl. Whisk in the lemon juice and remaining 1 tablespoon lemon zest until smooth. Drizzle on the cookies and let set.

1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup butter, softened

2 teaspoons fresh orange zest
3 cups oats
2 cups fresh or fozen and thawed cranberries
1 cup powdered sugar
1 lemon, juice of

Steps:

  • In a food processor or blender pulse cranberries until medium-fine. Set aside.
  • Cream sugar and butter.
  • Add all the rest of the ingredients except cranberries; mix well.
  • Gently mix in cranberries.
  • Drop by spoonfuls on greased cookie sheet.
  • Bake at 375* for 8 to 10 minutes or until rim of cookie is lightly browned. Don't overbake or they will be dry and hard. :-).
  • Brush on the glaze while still warm.
