2 large heads of broccoli, florets coarsely chopped (about 6 cups)
1/2 cup finely chopped red onion
1/2 cup chopped pecans
1/2 cup reduced-sugar dried cranberries
1 apple, chopped
1/2 cup pomegranate arils
1/2 cup mayonnaise
1/2 cup 2% reduced-fat Greek yogurt
2 tablespoon apple cider vinegar
2 tablespoon honey
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • In a large bowl, combine the broccoli, red onion, pecans, dried cranberries, apple and pomegranate arils.
  • In a small bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, salt, and pepper until smooth and well combined.
  • Pour the dressing over the salad and toss to coat.

1 red onion
½ pound bacon
¾ cup raisins
¾ cup sliced almonds
1 cup mayonnaise
½ cup white sugar
2 tablespoons white wine vinegar

Steps:

  • Place bacon in a deep skillet and cook over medium high heat until evenly brown. Cool and crumble.
  • Cut the broccoli into bite-size pieces and cut the onion into thin bite-size slices. Combine with the bacon, raisins, your favorite nuts and mix well.
  • To prepare the dressing, mix the mayonnaise, sugar and vinegar together until smooth. Stir into the salad, let chill and serve.

1 head broccoli, cut into florets
½ cup sliced green onion
1 cup sweetened dried cranberries (such as Craisins®)

  • Cook and stir bacon in a large skillet over medium-high heat until crisp, about 10 minutes. Drain bacon on a plate lined with paper towel.

1/2 cup Mayo (I use Dukes or Veganaise)
1/2 cup Shredded cheddar (If keeping this vegan, skip this or use vegan shredded cheddar)
1/2 cup Chopped pecans
1/2 cup Craisins
1/4 cup Diced onion (You can also use green onions)
To taste Salt and pepper
1/2 tsp Crushed red pepper (Omit if you do not like any spice. )

Steps:

  • Place all ingredients in a bowl, except the salt, pepper, and crushed red pepper.
  • Mix until thoroughly combined.
  • Add salt, pepper, and crushed red pepper to taste.
  • If you like your broccoli salad more mayonnaisey, add 1/4 cup more at a time until it's as you like.

¾ cup mayonnaise
• ¼ cup sugar (or 2 packages Splenda)
• 1 ½ tablespoons soy sauce
• 4 tablespoons red wine vinegar
• 2 (12-ounce) bags broccoli florets (about 8 cups)
• 1 cup golden raisins or Craisins
• 1 (11-ounce) can Mandarin oranges, drained (optional)
• ½ cup coarsely chopped pecans, toasted
• ½ cup sliced green onion
• 12 pieces bacon, cooked crisp and diced

Steps:

  • Bring 4 cups water to a rolling boil. Put the broccoli florets in a colander and pour the water slowly over them to blanch. When cool, break apart larger florets so they are all a similar size. Combine florets with Craisins and oranges, if using, and enough dressing to lightly coat. Cover and refrigerate until ready to serve. Just before serving, fold in pecans, green onion and bacon.
