Simple and wholesome popsicles. My mom used to help us make these when we were kids and I still enjoy them years later. Use honey as an alternate sweetener, and blend the fruit to be either chunky or smooth.

2 cups fresh blueberries, raspberries, strawberries and sliced bananas, mixed
2 cups plain or vanilla yogurt
¼ cup white sugar
8 small paper cups
8 popsicle sticks

Steps:

  • Place the mixed blueberries, raspberries, strawberries, sliced bananas, yogurt, and sugar into a blender. Cover, and blend until fruit is chunky or smooth, as desired.
  • Fill paper cups 3/4 full with fruit mixture. Cover the top of each cup with a strip of aluminum foil. Poke a popsicle stick through the center of the foil on each cup.
  • Place the cups in the freezer for at least 5 hours. To serve, remove foil and peel off the paper cup.

2 containers (6 oz each) Yoplait® Original yogurt French vanilla
2 cups cut-up fresh fruit such as blueberries, bananas, cherries, grapes, papaya, peaches, oranges or raspberries
1 tablespoon honey

Steps:

  • In blender, place all ingredients. Cover; blend until smooth.
  • Divide mixture among 6 (5-oz) paper cups. Cover cups with foil; insert craft stick into center of each pop. (Or fill ice pop molds according to manufacturer's directions.) Freeze about 6 hours or until frozen.

2 cups Almond Breeze Vanilla Cashew blend almondmilk
¼ cup sugar
2 tablespoons cornstarch + 2 teaspoons cornstarch
1 teaspoon vanilla extract
2 tablespoons coconut oil
¾ cup fresh raspberries

Steps:

  • Whisk together Almond Breeze, sugar, cornstarch, and extract in a small saucepan. Bring to a simmer, whisking frequently. Add coconut oil and cook over low heat for 5 minutes or until mixture has thickened, stirring frequently. Let cool, stirring occasionally.
  • Stir in berries and spoon into ice cream pop molds. Insert a handle or popsicle stick into each. Freeze overnight.

1 box Betty Crocker™ Super Moist™ yellow cake mix
2 egg whites
12 ounces seltzer water
Red food color
Blue food color
18 plastic push-up pop containers
1 cup frozen (thawed) fat free whipped topping
1 pint blueberries
9 strawberries, chopped

Steps:

  • Heat oven to 350°F. Spray 36 mini muffin cups with cooking spray.
  • In medium bowl, mix cake mix, egg whites, and seltzer water until moistened. Divide batter into 2 bowls. Tint 1 bowl of batter with a few drops red food color; tint other bowl with blue food color.
  • Fill 18 mini muffin cups 2/3 full with red batter. Bake about 15 minutes or until toothpick inserted in center comes out clean. Remove from oven. Repeat with blue batter to make an additional 18 mini cupcakes. Cool completely.
  • To assemble push-up cakes, drop blue 1 mini cupcake into each push-up pop container. Top with a single layer of blueberries and 1/2 teaspoon whipped topping. Top each with a red mini cupcake; add dollops of whipped topping to tops of each. Top with chopped strawberries.
